This past year has been particularly notable, marking the first time in many moons that we haven’t had a child deeply immersed in school-related after-school activities. From prom nights to graduations looming just weeks away, the rapid march towards summer feels palpable. Our eldest is now confidently navigating her career path as a full-time employee, embracing new challenges and growth. Our adventurous middle daughter, a seasoned world traveler, will soon return stateside after a semester abroad, though her journey continues to the East Coast to complete her studies and embark on a job search post-graduation. Even our son, always keen for exploration, is just returning from a solo journey through the Pacific Northwest, an experience that, by all accounts, has deepened his appreciation for the comforts of home.
These evolving family dynamics, with each child spreading their wings and embracing new adventures, bring a renewed sense of purpose to my baking. It’s a way to infuse our home with warmth, familiar aromas, and delicious moments that gather everyone together. This Eggless Blueberry Coriander Bundt Cake embodies that spirit perfectly – a comforting, wholesome treat that feels both special and incredibly welcoming. Perhaps it’s the quiet anticipation of family reunions, or simply the desire to create something beautiful, that draws me to the elegant simplicity of bundt cakes.

The Allure of Eggless Baking and Unique Flavor Pairings
For a long time, my blog featured a diverse array of treats, but bundt cakes have recently captured my heart. Their intricate designs and inherent elegance make them seem more complex than they are, yet they’re incredibly forgiving and simple to prepare. This particular Eggless Blueberry Coriander Bundt Cake is a testament to that. It’s a recipe I’ve developed based on the success of my Double Chocolate Coconut Cream Filled Bundt Cake, focusing on achieving that perfect moist texture without the use of eggs.
Why Eggless?
Eggless baking opens up a world of possibilities for those with egg allergies, dietary preferences, or simply a desire to explore alternative baking methods. Often, people assume eggless cakes will be dry or lack structure, but with the right balance of ingredients and techniques, they can be incredibly moist, tender, and flavorful. The buttermilk in this recipe plays a crucial role, providing acidity that reacts with baking soda to create lift and contributes significantly to the cake’s tender crumb and moistness, effectively replacing the function of eggs in traditional recipes.
The Unexpected Delight of Coriander in Dessert
Perhaps the most intriguing element of this bundt cake is the coriander. While often associated with savory dishes, ground coriander, derived from the seeds of the cilantro plant, offers a warm, citrusy, and slightly sweet flavor profile that is truly remarkable in desserts. It has subtle floral notes that pair beautifully with the vibrant sweetness of blueberries, adding a sophisticated depth that elevates this cake beyond the ordinary. If you’ve never experimented with coriander in sweet baking, prepare to be delightfully surprised. It’s a game-changer, lending a unique warmth and an aromatic complexity that makes this blueberry bundt cake unforgettable.
Perfectly Paired: Blueberries and Coriander
The fresh blueberries are another star of this recipe. Their tartness provides a wonderful counterpoint to the sweetness of the cake and the earthy notes of coriander. Each bite offers a burst of juicy fruit, beautifully distributed throughout the moist batter thanks to a simple, yet effective, trick: tossing them in a teaspoon of flour before folding them into the batter. This prevents the blueberries from sinking to the bottom, ensuring an even distribution of fruity goodness in every slice.
Essential Baking Tips for a Flawless Bundt Cake
Achieving a perfectly moist and evenly baked bundt cake, especially an eggless one, comes down to a few key details:
- Bundt Pan Preparation: Always, and I mean always, properly grease and flour your bundt pan. The intricate designs of these pans can be notorious for sticking. A baking spray with flour (like Baker’s Joy) works wonders, or you can meticulously grease with butter or shortening and then dust evenly with flour, tapping out any excess.
- Room Temperature Ingredients: As with many baking recipes, ensuring your liquid ingredients, especially the buttermilk, are at room temperature is crucial. This helps them emulsify better with other ingredients, creating a smooth, uniform batter.
- The Buttermilk and Coconut Oil Connection: This is a critical note for this recipe! Make absolutely sure your buttermilk is at least room temperature, or even slightly warmed in the microwave. Why? Because cold buttermilk will instantly solidify the melted coconut oil, creating unsightly lumps in your batter that can affect the cake’s texture. If this happens by accident, don’t fret! Simply place the mixed liquids back into the microwave for very short 10-second increments, stirring until everything is smoothly melted again, but ensure it doesn’t get hot. This attention to detail ensures a perfectly smooth batter and a consistently moist cake.
- Do Not Overmix: Once you combine the wet and dry ingredients, mix only until just combined. Overmixing can develop the gluten in the flour, leading to a tough cake. A light hand is key for a tender crumb.
- Cooling Gracefully: Allow the cake to cool in the pan on a wire rack for about 10 minutes before attempting to invert it. This crucial resting period allows the cake to set its structure, making it less likely to break when turned out. After 10 minutes, invert it onto the rack to cool completely.
This Eggless Blueberry Coriander Bundt Cake is more than just a recipe; it’s an invitation to explore unique flavors and share delightful moments with loved ones. Its moist crumb and intriguing spice profile make it a versatile treat that can brighten any morning or sweeten any evening. Give it a try, and let its wonderful aroma fill your kitchen and your home with joy.

Eggless Blueberry Coriander Bundt Cake
Ingredients
- 6 ounces fresh blueberries
- 1 teaspoon all-purpose flour (for tossing with blueberries)
- 1 ⅔ cup all-purpose flour
- ¾ cup sugar
- 1 ½ teaspoons ground coriander
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- ¼ teaspoon nutmeg
- 1 cup buttermilk room temperature
- ½ cup melted Organic Virgin Coconut Oil
- 1 tablespoon pure vanilla extract
Instructions
-
Preheat your oven to 325 degrees F (160 degrees C).
-
Thoroughly grease and flour a bundt pan. For best results, use a baking spray containing flour (like Baker’s Joy) or carefully grease with butter/shortening and dust with all-purpose flour.
-
In a small mixing bowl, gently toss the fresh blueberries with one teaspoon of all-purpose flour. This coating will help prevent them from sinking to the bottom of the cake batter during baking.
-
In a large mixing bowl, whisk together the 1 ⅔ cups all-purpose flour, sugar, ground coriander, baking soda, kosher salt, and nutmeg until well combined.
-
In a separate medium bowl, combine the room temperature buttermilk, melted Organic Virgin Coconut Oil, and pure vanilla extract.
-
Gradually add the wet ingredients mixture to the dry ingredients in the large mixing bowl. Beat until the ingredients are just combined and no streaks of flour remain, being careful not to overmix.
-
Gently fold the flour-tossed blueberries into the cake batter.
-
Pour the batter evenly into the prepared bundt pan. Tap the pan lightly on your counter a couple of times to release any trapped air bubbles.
-
Bake for 55-60 minutes, or until a cake tester or toothpick inserted into the center of the cake comes out clean.
-
Allow the cake to cool in the bundt pan on a wire rack for 10 minutes. This helps the cake firm up and prevents it from sticking. After 10 minutes, carefully invert the cake onto the wire rack to cool completely before slicing and serving.
Notes
As a crucial reminder: ensure your buttermilk is at least room temperature or gently warmed slightly in the microwave before mixing. If cold buttermilk comes into contact with melted coconut oil, the oil will re-solidify and create small lumps in your batter, affecting the cake’s texture. Should this occur, you can place the mixed liquids into the microwave and heat them in very short 10-second increments, stirring after each, until the mixture is smooth and melted again (but not hot). This ensures a smooth batter and a perfectly moist cake.
