Bruschetta Fried Egg Avocado Toast Recipe

Bruschetta Fried Egg Avocado Toast with whole grain bread, smashed avocado, marinated tomato, and a fried egg are sure to give you a great start to your day!

Ingredients

  • 1 medium tomato, diced
  • 1 tablespoon red onion, diced, plus additional for garnish
  • 2 teaspoons fresh basil, plus additional for garnish
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon olive oil
  • 1 avocado
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste
  • 2 slices whole grain bread or bread of your choice, toasted
  • ¼ cup canola oil
  • 2 eggs

Instructions

  1. In a small bowl, combine the diced tomato, red onion, fresh basil, balsamic vinegar, olive oil, and some salt and pepper to taste.
  2. Mix the bruschetta ingredients thoroughly and set aside to marinate.
  3. Toast the two slices of bread to your desired crispness.
  4. Cut open the avocado, remove the pit, and scoop the flesh into a medium bowl. Mash with a fork until creamy.
  5. Add the garlic powder, and salt and pepper to the mashed avocado. Mix well to combine.
  6. Pour the canola oil into a non-stick skillet and heat over medium-high heat.
  7. Carefully crack the eggs into the hot oil and fry for 2-3 minutes. Gently spoon the hot oil over the tops of the eggs to help set the yolks while keeping them runny inside.
  8. Evenly divide the mashed avocado mixture between the two toasted slices of bread, spreading it generously.
  9. Spoon an equal amount of the marinated tomato bruschetta mixture over the avocado on each toast.
  10. Carefully place one fried egg on top of each bruschetta avocado toast.
  11. Sprinkle with additional fresh basil and diced red onion for an extra burst of flavor and a beautiful garnish.

Recipe Notes:

  • Choosing Avocados: Look for avocados that yield slightly to gentle pressure. If they are too hard, they aren’t ripe enough; if they are too soft, they may be overripe.
