This means no oven time, which is a huge bonus, especially during warmer months or when your oven is occupied with other dishes. The key to these effortless desserts lies in the refrigerator (or occasionally the freezer) where they set beautifully, transforming into firm, sliceable bars. While many dream bars can be sped up in the freezer, a crucial note for this particular Irish Cream version:

Can You Freeze Irish Cream Dream Bars?

While convenient, I strongly advise against freezing the fully assembled Irish Cream Dream Bars. The alcohol content in Baileys Irish Cream, when frozen and then thawed, can significantly alter the creamy consistency, leading to a less than ideal texture. To ensure the best possible experience, please stick to refrigerating these bars for the recommended setting time. However, the cookie crust is an exception! You ARE directed to place the cookie crust into the freezer to harden – this step is essential for a firm and satisfying base.

The preparation might seem to involve several steps, but don’t let that intimidate you. Each stage is straightforward and simple, making this a genuinely easy dessert to assemble. The reward for your minimal effort is a stunning, delicious dessert that looks far more complicated to make than it actually is. You won’t regret diving into this culinary adventure!

  2. **The Buttery Shortbread Crust:**
    1. Melt 4 tablespoons of butter in a microwave-safe bowl. Heat for 30 seconds initially, then in 10-second intervals if needed, stirring until fully melted.
    2. In a food processor, pulse 10 ounces of shortbread cookies until they form fine, even crumbs.
    3. Combine the cookie crumbs with the melted butter in a bowl, mixing until thoroughly moistened.
    4. Press this mixture firmly and evenly into the bottom of your prepared pan. Place the pan in the freezer for a minimum of 30 minutes to ensure the crust hardens and sets properly.
  3. **The Irish Cream Chocolate Pudding Layer:**
    1. In a medium bowl, whisk together the 3.9-ounce package of instant chocolate pudding mix, 1 ¼ cups of milk, and ¼ cup of Baileys Irish Cream. It’s crucial to use only 1 ¼ cups of milk, not the 2 cups suggested on the package, to achieve a thicker, firmer pudding consistency ideal for layering. (And seriously, why haven’t we been adding Baileys to chocolate pudding all along? It’s absolutely brilliant!)
    2. Refrigerate the pudding mixture for at least 20 minutes to allow it to thicken.
  4. **The Stabilized Whipped Cream Topping:** This unique stabilized whipped cream ensures a beautiful, non-weeping topping.
    1. In a mixing bowl, beat 4 ounces of softened cream cheese with ⅓ cup of confectioners’ sugar, 2 ½ teaspoons of Baileys Irish Cream, and ½ teaspoon of vanilla extract until the mixture is smooth and creamy. Transfer this to a small bowl and clean your mixer bowl (or use a second one).
    2. In the clean mixer bowl, beat 1 cup of heavy whipping cream until soft peaks just begin to form. You want them to gently fold over, not stand stiffly yet.
    3. Gradually add the cream cheese mixture to the whipped cream in thirds. Continue beating until stiff peaks are formed. Refrigerate until ready to assemble.
  5. **The Silky Irish Cream Cheesecake Layer:**
    1. In a mixing bowl, beat 8 ounces of softened cream cheese until it’s perfectly smooth. Scrape down the sides of the bowl.
    2. Add ½ cup of confectioners’ sugar, 2 teaspoons of Baileys Irish Cream, and 1 teaspoon of vanilla extract. Beat again until the mixture is smooth and wonderfully creamy.
    3. Gently fold in 1 cup of your prepared stabilized whipped cream using a rubber spatula until fully combined. This lightens the cheesecake for an ethereal texture.
  6. **Assembly – Bringing It All Together:**
    1. Retrieve your chilled cookie crust from the freezer. Spread dollops of the Irish cream cheesecake mixture evenly over the crust, extending it all the way to the edges of the pan.

Cookie Crust

  • 10 ounces shortbread cookies (or about 40 cookies)
  • 4 tablespoons butter, melted

Pudding

  • 3.9 ounce instant chocolate pudding mix
  • 1 ¼ cups milk
  • ¼ cup Baileys Irish Cream

Irish Cream Cheesecake

  • 8 ounces cream cheese, room temperature
  • ½ cup confectioners’ sugar
  • 2 teaspoons Baileys Irish Cream
  • 1 teaspoon pure vanilla extract

Whipped Cream

  • 4 ounces cream cheese, room temperature for at least one hour
  • ⅓ cup confectioners’ sugar
  • 2 ½ teaspoons Baileys Irish Cream
  • ½ teaspoon pure vanilla extract
  • 1 cup heavy cream
  • 1 ounce white chocolate for garnish curls (optional)
  • 1 ounce milk chocolate for garnish curls (optional)
  • Additional Baileys Irish Cream for drizzling (optional)

Instructions

  1. Prepare an 8 X 8-inch baking pan by lining it with parchment paper, leaving an overhang on the sides.
  2. Cookie Crust

    1. Melt the butter in a medium microwave-safe bowl (30 seconds, then 10-second intervals if needed, stirring until melted).
    2. In a food processor, pulse the shortbread cookies until they are fine crumbs.
    3. Add the cookie crumbs to the bowl of melted butter and mix well.
    4. Press the crumb mixture firmly into the prepared pan to form an even layer. Place into the freezer for a minimum of 30 minutes to set.
  3. Chocolate Pudding

    1. In a medium bowl, combine the pudding mix, 1 ¼ cups milk, and Baileys Irish Cream. (Note: Use only 1 ¼ cups milk, not the amount on the package, for a thicker consistency).
    2. Refrigerate for at least 20 minutes to chill and thicken.
  4. Whipped Cream

    1. In a mixing bowl, beat 4 ounces cream cheese, ⅓ cup confectioners’ sugar, 2 ½ teaspoons Baileys Irish Cream, and ½ teaspoon vanilla until smooth and creamy. Transfer to a small bowl and clean the mixer bowl.
    2. In the cleaned mixer bowl, beat the heavy whipping cream until soft peaks form (they should collapse gently).
    3. Add the cream cheese mixture in thirds to the whipped cream. Beat until stiff peaks are formed. Keep refrigerated until ready to use.
  5. Irish Cream Cheesecake

    1. In a mixing bowl, beat 8 ounces cream cheese until smooth. Scrape down the sides, then add ½ cup confectioners’ sugar, 2 teaspoons Baileys Irish Cream, and 1 teaspoon vanilla. Beat until smooth and creamy.
    2. With a rubber spatula, gently fold in 1 cup of the prepared Whipped Cream until just combined.
  6. Assembly

    1. Place dollops of the cheesecake layer on top of the cookie crust and spread evenly to the pan edges with an offset spatula.
    2. Layer dollops of the chocolate pudding over the cheesecake layer, spreading gently to the edges.
    3. Completely cover the pudding with the remaining whipped cream.
    4. Refrigerate overnight or for a minimum of 8 hours to allow the bars to set thoroughly.
    5. Before serving, garnish with white and milk chocolate curls and an optional drizzle of additional Baileys Irish Cream.
