The Perfect Pairing: Cranberry Pear Chutney

While the herb-crusted pork tenderloin is a star in itself, the homemade Cranberry-Pear Chutney elevates this dish to an entirely new level. The chutney’s delightful balance of sweet and tart flavors, with hints of warm spices, cuts through the richness of the pork beautifully. Fresh cranberries provide that signature holiday tang, while sweet pears add a comforting softness. The addition of golden raisins, chopped onion, apple cider vinegar, orange zest, and allspice creates a complex, aromatic side that’s both festive and incredibly easy to prepare. This chutney isn’t just a condiment; it’s an integral part of the meal, tying all the flavors together in a harmonious symphony.

Making the chutney is as simple as combining all the ingredients in a pot and letting them simmer gently. The aroma filling your kitchen will instantly get you into the holiday spirit! The process is mostly hands-off, allowing you to focus on the pork or other preparations.

Ingredients

Dijon Herb Roasted Pork Tenderloin

  • 1 2.5 lb. Smithfield Prime Fresh Pork Tenderloin (package may contain two tenderloins to equal 2.5 pounds)
  • 1 ½ tablespoons whole grain Dijon mustard
  • 2 tablespoons finely chopped fresh sage
  • 1 tablespoon chopped fresh thyme
  • ¾ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper

Cranberry Pear Chutney

  • 2 pears, cored, seeded and diced
  • 1 cup fresh cranberries, rinsed
  • 1 cup golden raisins
  • ½ cup granulated sugar
  • ¼ cup chopped onion
  • ¼ cup water
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon fresh orange zest
  • ½ teaspoon allspice
  • ¼ teaspoon kosher salt

Instructions

Dijon Herb Roasted Pork

  1. Preheat the oven to 425 degrees F. Prepare a rimmed baking sheet by lining it with aluminum foil and placing a baking rack on it. This setup allows air to circulate around the meat as it cooks, ensuring even roasting.
  2. In a small bowl, thoroughly mix together the chopped sage, thyme, kosher salt, and freshly ground black pepper.
  3. Remove the pork tenderloin from its packaging. Spread half of the whole grain Dijon mustard evenly over the top and sides of the pork.
  4. Carefully place the mustard-coated side of the tenderloin onto the rack in your prepared baking pan.
  5. Cover the remaining sides of the pork with the rest of the Dijon mustard, then sprinkle the herb and spice mixture generously over the entire tenderloin.
  6. Bake for approximately 25 – 30 minutes per pound (calculate based on the weight of one tenderloin). Cook until a meat thermometer inserted into the thickest part of the pork registers an internal temperature of 150 degrees F. Once cooked, allow the pork to rest for 10 minutes before slicing and serving. It will have a slightly pink center, indicating perfect doneness.

Cranberry Pear Chutney

  1. In a medium pot, combine all the ingredients for the chutney: diced pears, fresh cranberries, golden raisins, granulated sugar, chopped onion, water, apple cider vinegar, fresh orange zest, allspice, and kosher salt. Stir gently to ensure everything is well combined.
  2. Heat the contents over medium-high heat until the mixture comes to a boil.
  3. Once boiling, reduce the heat to a simmer, cover the pot, and cook for 30 minutes, allowing the flavors to meld and the fruits to soften.
  4. Remove the cover and continue to cook for an additional 5 – 10 minutes, or until most of the liquid has been absorbed and the chutney has thickened to your desired consistency.

Tips for Perfect Roasted Pork Tenderloin Every Time

Achieving a perfectly roasted pork tenderloin is simpler than you might think. Here are a few tips to ensure your Dijon Herb Roasted Pork is always a success:

  • **Bring to Room Temperature:** Before roasting, allow your pork tenderloin to sit out at room temperature for about 30 minutes. This helps the meat cook more evenly.
  • **Don’t Overcook:** Pork tenderloin is a lean cut and can dry out if overcooked. A meat thermometer is your best friend! Aim for an internal temperature of 145-150°F (63-65°C) for medium-rare to medium. It will continue to cook slightly while resting.
  • **Rest the Meat:** This is crucial! After removing the pork from the oven, cover it loosely with foil and let it rest for at least 10 minutes. This allows the juices to redistribute throughout the meat, resulting in a much more tender and flavorful outcome.
  • **Even Coating:** Ensure the Dijon mustard and herb mixture fully coats the tenderloin. This creates a delicious crust and infuses flavor into every bite.

Serving Suggestions for a Complete Holiday Meal

To make this Dijon Herb Roasted Pork with Cranberry-Pear Chutney a truly complete and unforgettable holiday meal, consider pairing it with a few complementary side dishes. Roasted root vegetables like carrots, parsnips, and sweet potatoes would beautifully absorb the pan juices. A creamy mashed potato or a light, fluffy wild rice pilaf would also be excellent choices. For a touch of green, a simple sautéed green bean almondine or a vibrant winter salad with a citrus vinaigrette would offer a refreshing contrast. The rich, savory pork and the bright, tangy chutney are designed to be the stars, so choose sides that enhance, rather than overpower, their magnificent flavors.

Your holiday meals are destined for greatness with Smithfield Prime Fresh Pork. It’s truly a cut above, ensuring every dish is a celebration of flavor and quality.
