Baked Brie with Dried Fruit, Nuts, and Butterscotch
Ingredients
- 8 oz brie
- ¼ cup pecans chopped, salted and toasted
- ⅓ cup butterscotch sauce caramel sauce will work as well
- ¼ cup dried apples chopped
- ¼ cup dried apricots chopped
- ¼ cup dried cranberries
- ¼ cup pomegranate arils
- Crackers or sliced baguettes/ french bread
- fresh rosemary for garnish if desired
Instructions

Chop the pecans and place them under a hot broiler for 30-60 seconds, watching them carefully. When they are nice and hot, sprinkle them with a pinch of salt and set aside. Don’t leave them in too long otherwise they’ll burn while they’re baked.

Preheat oven to 350 degrees. In a small cast iron pan, or other oven safe dish, place the brie with the rind intact, and drizzle with half of the butterscotch sauce.

Sprinkle all the dried fruits and the pecans over top, letting some fall to the sides of the brie as well. Drizzle the remaining butterscotch sauce over the fruit and nuts.

Bake the brie for 15-20 minutes.
