Instructions

  • Preheat oven to 350°F (175°C) and butter a 9-inch square pan or line it with parchment paper.

Cake

  • In a medium bowl, whisk together the 2 cups of flour, baking powder, baking soda, and salt. Set aside.
  • In a mixing bowl, cream the room temperature butter. Add both the brown sugar and granulated sugar then beat until light and fluffy, about 3 minutes.
  • Add the egg and vanilla extract and mix well until combined.
  • Pour half of the dry ingredient mixture into the wet ingredients, beating until just combined. Add half the sour cream and beat till just mixed. Then add the remaining flour and sour cream following the same steps as above, mixing until smooth but being careful not to overmix.
  • Pour the cake batter into the prepared pan.
  • Evenly spread the fresh blueberries over the top and gently press them down into the batter.

  • In a medium bowl, mix together the ⅓ cup packed light brown sugar, ⅔ cup all-purpose flour, and 1 tablespoon granulated sugar. Add the ¼ cup chilled butter and, using a pastry cutter or two forks, mix until a coarse meal is formed.
  • Sprinkle the crumb topping generously over the blueberries.
  • Bake for 40-50 minutes or until a toothpick inserted into the middle of the cake comes out clean. If the topping browns too quickly, tent loosely with foil. Cool before serving for best results.
