Marshmallow Fluff and Peanut Butter Swirl Brownies

Imagine the delightful aroma wafting from your kitchen as your kids burst through the door after a long school day. Few things evoke such warmth and comfort like the promise of freshly baked brownies. But not just any brownies – we’re talking about a rich, chocolatey masterpiece swirled with the nostalgic flavors of marshmallow fluff and creamy peanut butter. This isn’t just a dessert; it’s a “lick-your-fingers-clean” kind of brownie that will earn you legendary status among your family and friends. For me, the classic combination of fluff and peanut butter holds a truly special, heartwarming place, bringing back countless cherished memories.

The Inspiration: A Childhood Favorite Meets a Chocolate Craving

Our recent delivery of a generous dozen tubs of Marshmallow Fluff was met with immense excitement in our household. My son, a true connoisseur, knew this meant our supply would last for quite some time! It was a pleasant surprise to discover the variety of flavors available; for years, I’d only been familiar with the original. This abundance, coupled with my middle daughter’s unwavering request for something chocolatey, sparked an idea. Why not combine the beloved Fluffernutter sandwich – a staple in our lunchboxes – with a classic brownie recipe? The concept was irresistible: a rich chocolate brownie base, crowned with the iconic duo of gooey marshmallow and smooth peanut butter. What an ingenious way to elevate a simple brownie into something extraordinary!

A Journey of Sweet Experimentation: The Quest for the Perfect Swirl

Embarking on this baking adventure, I must admit, felt like stepping into uncharted territory. While I often enjoy following established recipes, venturing into creating my own can be a delightful challenge. These brownies, however, initially taught me a valuable lesson: sometimes, sticking to the tried and true is the wisest path. My first attempt, while undeniably tasty, didn’t quite achieve the visual perfection I’d envisioned—the kind of flawless treat you see gracing food blogs and glossy magazines. The picture in my head, ready for a Tastespotting submission, remained just that: a picture. But every baking journey has its learning curves, and this one was no exception.

My initial bake involved 35 minutes at a modest 300°F, followed by a complete cooling period of about half an hour. Upon inspection, the brownies were significantly mushy – a texture that, while sometimes desirable, wasn’t what I was aiming for in a structured brownie. My best guesses for this outcome were the generous amount of butter in the recipe combined with the relatively low baking temperature. Armed with this observation, I decided on a second bake, returning them to the oven for another 15 minutes at the same 300°F. I was cautious not to overbake and risk burning, so 15 minutes felt like the safe limit. The result? Almost success! This iterative process is often the heart of home baking, where intuition and minor adjustments can make all the difference.

The texture of these brownies leaned more towards a rich fudge than a traditional cakey brownie. The top had a slight crispness, hinting at a successful crust, but the bottom remained incredibly moist, almost melting in your mouth. The distinct flavor of peanut butter shone through beautifully, a creamy and savory counterpoint to the sweetness. However, the marshmallow fluff seemed to have been completely absorbed into the brownie batter, becoming one with the chocolate rather than forming a separate, visible layer. A lightbulb moment occurred when I remembered running a knife through the batter during preparation to “kind of mix them together.” This realization clarified why the distinct fluff layer had disappeared. It wasn’t a failure, but a happy accident that created a unified, intensely flavorful experience, even if it deviated from my original visual concept.

The Iconic Fluffernutter: A Sweet History and How it Inspired These Brownies

If you’re wondering, “What is a Fluffernutter?”, then allow me to introduce you to a beloved American classic that has graced lunchboxes and kitchen tables for over a century! This iconic sandwich is a simple yet brilliant combination: creamy peanut butter and sweet, sticky marshmallow fluff spread between two slices of bread. It’s a culinary sensation, particularly popular in New England, and a daily favorite in our own home, especially for my son who takes one to school almost every day. The sheer joy of saying “Fluffernutter” almost rivals the delight of devouring it—it’s nearly as fun to pronounce as “snickerdoodles”!

Watching my son assemble his Fluffernutter sandwiches is an amusing sight. He applies a generous, almost architectural, layer of fluff, thick enough to resemble a concrete slab, onto his bread. It looks like it could weigh a few pounds by the time he’s ready to eat it. And true to form, after every bite, there’s fluff adorning every part of his mouth – a sticky, sweet badge of honor. These are the moments, these small, messy, and utterly delightful observations, that make having kids so incredibly rewarding.

The Fluffernutter’s enduring appeal lies in its contrasting textures and harmonious flavors: the creamy, slightly salty peanut butter perfectly balances the airy sweetness of the marshmallow fluff. This classic pairing was the direct inspiration for these brownies, offering a way to capture that same magic in a baked dessert. The goal was to infuse the rich chocolate with that unmistakable Fluffernutter essence, creating a brownie that delivers comfort, nostalgia, and an explosion of flavor in every bite.

Here’s the recipe that evolved from my baking experiments, crafted to bring that delightful Fluffernutter experience to your next batch of brownies. Fluff and Peanut Butter Brownie

Created by: Lynne Feifer

Course: Dessert

Cuisine: American

Ingredients

  • ½ cup creamy peanut butter
  • 6 tablespoons butter
  • 1 ½ cup Marshmallow fluff
  • 2 ounces unsweetened chocolate (2, 1-ounce squares)
  • 1 cup sugar
  • 1 egg
  • ⅛ teaspoon salt
  • ½ cup flour
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Lightly butter and flour an 8-inch baking dish.
  3. In a small saucepan, combine 2 tablespoons of butter and the creamy peanut butter. Heat over low heat, stirring continuously until the butter is completely melted and the mixture is well combined and smooth.
  4. Transfer the marshmallow fluff to a mixing bowl. Add the warm peanut butter/butter mixture and mix thoroughly until fully incorporated. Set this mixture aside.
  5. In a separate saucepan, melt the unsweetened chocolate and the remaining 4 tablespoons of butter over low heat. Stir until smooth and well combined.
  6. Remove the chocolate mixture from the heat. Stir in the sugar, egg, salt, flour, and vanilla extract until a smooth brownie batter forms.
  7. Pour half of the brownie batter into the prepared baking dish, spreading it evenly to cover the entire bottom.
  8. Dollop approximately 9 spoonfuls of the peanut butter/fluff mixture evenly over the chocolate brownie layer. Gently spread the peanut butter/fluff layer to cover the chocolate, being careful not to disturb the bottom layer too much.
  9. Carefully dollop the remaining brownie batter on top of the peanut butter/fluff layer. Gently spread the batter to reach all edges of the dish, creating a top chocolate layer.
  10. Using a knife, gently swirl through the layers a few times to create a marbled effect, without fully mixing them. This will help to integrate the flavors and textures.
  11. Place the baking dish in the preheated oven and bake for 50 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter).
  12. Allow the brownies to cool completely before cutting and serving. This is crucial for the fudgy texture to set properly.

Baking Tips for Success: Achieving the Perfect Swirl Brownie

Through my baking adventures with these Fluffernutter brownies, I’ve gathered some insights that might help you achieve your desired results. Firstly, for that distinct marshmallow fluff layer, it’s crucial to resist the urge to over-swirl with the knife. A gentle pass or two is sufficient to create a beautiful marble effect without fully incorporating the fluff into the chocolate. This delicate approach helps maintain those pockets of gooey sweetness that make these brownies so special.

Secondly, baking temperature and time are key. While a lower temperature might yield a fudgier consistency, it can also lead to underbaked centers. If you prefer a more set, cake-like brownie, a slightly higher temperature (perhaps 325-350°F / 160-175°C) for a shorter duration might be beneficial, always keeping an eye on doneness. The “toothpick test” is your best friend here: it should come out with moist crumbs, not wet batter, for that perfect balance of fudginess and structure.

Finally, patience during the cooling process is paramount. Brownies continue to set as they cool, developing their final texture and making them easier to cut cleanly. Resisting the temptation to cut into warm brownies ensures those beautiful layers hold their shape, and the flavors fully meld together. Embrace the learning process, experiment with slight variations, and most importantly, enjoy the delicious outcome!
