  • 4 medium-sized sweet green peppers
  • 1 tablespoon olive oil
  • ½ cup chopped yellow onion
  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper
  • 1 cup cooked rice (hot or cold)
  • 24 ounces pasta sauce, divided
  • Grated Parmesan cheese

Instructions

  1. Preheat oven to 375° F.
  2. Rinse the peppers, and cut the tops off. Remove the core and seeds, and place them into a greased 8 X 8-inch baking dish.

  4. Add the ground beef and cook until browned. Drain fat, if needed, and reduce heat to low.
  5. Add garlic powder, salt, pepper. Stir until combined over low heat.
  6. Add rice and 1 ½ cups of the pasta sauce. Mix well.
  7. Evenly distribute the filling into the four peppers.
  8. Pour 2 cups of water into the baking dish and cover tightly with foil. Bake for 55 minutes or until peppers are tender.
  9. Pour the remaining pasta sauce into a microwave-safe bowl, cover with a paper towel, and cook for one minute.
