As often happens in my kitchen, one idea led to another. While leafing through my cherished Williams Sonoma Baking Book, I stumbled upon a recipe for Chocolate-Orange Cupcakes. The concept sparked an idea, and I began to experiment, adapting and tweaking until the recipe transformed into something utterly unique and incredibly delicious. The final result surprised even me with its profound depth of flavor and perfect texture.
The true test came, as it always does, from my harshest critics: my family. My oldest daughter took a single bite, and before she could even swallow, an enthusiastic “Mmmhhmpf!” escaped her lips. In my book, that’s the highest form of praise, a resounding endorsement that speaks volumes. This confirmed what I already suspected – these weren’t just good cupcakes; they were exceptional.
Mastering the Art of Filling: Tools and Techniques
When I shared my baking process on Facebook LIVE, one of the most frequently asked questions was about how I created the perfect cavity for the filling. My secret weapon? A simple OXO Apple Corer. Its ergonomic handle provides an excellent grip, and when inserted into the center of each cooled cupcake, it effortlessly removes just the right amount of cake to create a generous space for the peanut butter cream. This not only allows for ample filling but also leaves enough of the top layer to be covered beautifully with an additional spread of the peanut butter cream before frosting.

While OXO does offer a dedicated cupcake corer, I’ve found that the apple corer works perfectly. The cupcake corer might create a slightly wider hole, which could reduce the amount of surface area available for that delightful extra layer of peanut butter filling on top. If you’re eager to get started on these cupcakes, you can usually find apple corers or similar tools at popular retailers like Walmart, Target, or Bed, Bath & Beyond. For those without a specialized tool, a small paring knife and a spoon can work wonders too – simply cut a circle and scoop out the center!
Achieving Perfect Frosting Consistency and Decoration
When it came to frosting these beauties, I initially started with a Wilton #21 Open Star tip. However, after a few attempts, I switched to the more substantial Wilton #1M tip. The #1M provided a much more satisfying thickness and a beautiful, classic swirl that truly showcased the rich chocolate buttercream. Remember, having good quality decorating bags and couplers is essential for a smooth frosting experience!
A crucial tip for frosting: room temperature can significantly impact your buttercream’s consistency. I learned this firsthand while decorating. My frosting was a bit too soft, and the cupcakes weren’t looking as pristine as I envisioned. A quick solution that made all the difference was to refrigerate the buttercream for about 15-20 minutes. After this brief chill, the frosting became much more manageable, allowing for cleaner, more defined swirls. Even if my decorating skills are always a work in progress, this simple step elevated the final look immensely. Always aim for a firm yet pipeable consistency for best results!

Double Chocolate Peanut Butter Filled Cupcakes
Ingredients
Double Chocolate Cupcakes
- ¼ cup strong hot coffee
- 3 tablespoons unsweetened cocoa powder
- ½ cup unsalted butter room temperature
- ¾ cup sugar
- 1 ¼ cups unbleached all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 eggs
- 1 teaspoon pure vanilla extract
- ½ cup buttermilk
- 1 cup milk chocolate chips
Peanut Butter Cream Filling
- 4 ounces cream cheese softened
- ½ cup peanut butter
- 1 cup confectioners’ sugar
- ¼ cup heavy cream added a tablespoon at a time.
Chocolate Buttercream Frosting
- 6 tablespoons solid vegetable shortening
- 6 tablespoons unsalted butter room temperature
- 9 tablespoons unsweetened cocoa powder
- 1 ½ teaspoons pure vanilla extract
- 3 cups confectioners’ sugar
- 4 – 6 tablespoons milk
Instructions
Double Chocolate Cupcakes

Preheat the oven to 350 degrees F. and prepare a 12-cup muffin tin by lining it with cupcake liners.

In a measuring cup, mix together the coffee and unsweetened cocoa.

Into a medium bowl, sift together the flour, baking powder, baking soda and salt.

In a mixing bowl, cream the butter and sugar together until light and fluffy, about 4 minutes.

Add the eggs, one at a time until well incorporated.

Mix in the vanilla and coffee mixture.

Add half of the flour mixture and combine until just incorporated.
-
Add half of the buttermilk and combine. Scrape down the sides and bottom of the bowl to ensure everything is mixed evenly.

Add the remaining flour and buttermilk, mixing until thoroughly incorporated but being careful not to overmix.

With a rubber spatula, gently fold in the milk chocolate chips.

Spoon the batter into the prepared cupcake liners, filling each 1/2 to 2/3 full.

Bake for 15-20 minutes, or until a cake tester or toothpick inserted into the middle of each cupcake comes out clean, indicating they are fully baked.

Allow the cupcakes to cool completely on a wire rack before proceeding with filling and frosting.
Peanut Butter Cream Filling

In a clean mixing bowl, cream together the softened cream cheese and peanut butter until smooth and well combined.

Gradually mix in the confectioners’ sugar until fully incorporated and smooth.

Add the heavy cream, one tablespoon at a time, mixing thoroughly after each addition until the filling reaches a perfectly smooth and creamy consistency. Remember to scrape down the sides of the bowl to ensure an even mix.
Chocolate Buttercream Frosting

In a large mixing bowl, cream the solid vegetable shortening and unsalted butter together until they are well combined and fluffy.

Add the unsweetened cocoa powder to the creamed mixture and mix until fully incorporated, ensuring no dry spots remain.

Stir in the pure vanilla extract until the flavor is evenly distributed throughout the mixture.

Gradually add half of the confectioners’ sugar to the bowl and mix well until smoothly combined.

Thoroughly mix in the remaining confectioner’s sugar until the frosting is thick and smooth.

Begin by adding 4 tablespoons of milk and beat the frosting at medium speed until it becomes light, fluffy, and spreadable. If a thinner consistency is desired, add the remaining tablespoons of milk, one at a time, mixing well after each addition until your preferred texture is reached.

Should the frosting remain too dry, incorporate additional milk by teaspoons, not tablespoons, until it reaches the ideal consistency. Conversely, if the frosting becomes too moist or runny, gradually add more confectioners’ sugar, one tablespoon at a time, mixing until it thickens sufficiently.
Assembly

Once the cupcakes are completely cooled, carefully insert an apple corer or a dedicated cupcake corer into the middle of each cupcake and remove the center portion.

Using a piping bag, pipe enough peanut butter filling into each cored hole until it is completely filled. Then, spread a thin, even layer of the remaining peanut butter filling on the top surface of each cupcake, covering the filled hole.

Finally, using the Wilton 1M Open Star decorating tip (or your preferred tip), frost each cupcake generously with the prepared chocolate buttercream, creating a beautiful swirl on top.
