These Triple Chocolate Toffee Caramel Cookies are an indulgent dream! Combining three types of chocolate with crunchy toffee bits and chewy caramel pieces, they create a perfect symphony of textures and flavors. Ideal for sharing with loved ones or sending as a thoughtful care package.

Ingredients


  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • ½ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup dark chocolate chips
  • cup white chocolate chips
  • cup semi-sweet chocolate chips
  • ½ cup toffee bits
  • 1 ⅓ cups wrapped caramels, cut into quarters (approximately 15 individual caramels)

Instructions

  • Preheat your oven to 375 degrees F (190 degrees C). Prepare one or two baking sheets by lining them with parchment paper. This step is crucial, as the melted caramels can easily stick to an unlined pan, making removal difficult.
  • In a medium-sized bowl, whisk together the flour, baking soda, and salt. Ensure they are well combined. Set this dry mixture aside.
  • In a large mixing bowl, preferably fitted with a paddle attachment, cream together the softened butter, granulated sugar, and light brown sugar until the mixture is light and fluffy. Stir in the vanilla extract.
  • Add the eggs one at a time, mixing thoroughly after each addition until fully incorporated. This helps create a smooth, emulsified dough.
  • Gradually add the reserved flour mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. If necessary, scrape down the sides of the bowl to ensure all ingredients are incorporated. Finally, fold in the dark chocolate chips, white chocolate chips, semi-sweet chocolate chips, toffee bits, and the quartered caramels.
  • Using a tablespoon or a small cookie scoop, drop rounded portions of dough onto the prepared baking sheets, leaving enough space between cookies for spreading. Bake for 8-10 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  • Allow the cookies to cool on the baking sheets for about 5-7 minutes. This is important, especially with the melted caramel, as it gives them time to set. After this initial cooling, carefully transfer them to a wire rack to cool completely.
