The Story Behind the Name: Artichoke Tomato Chicken
We’re big fans of chicken around here, and with over 50 chicken recipes shared, it’s safe to say it’s a staple protein in many households, including ours. While I might occasionally feel a touch of chicken fatigue, it’s recipes like this Artichoke Tomato Chicken that reignite my passion for this versatile meat. It reminds me why chicken is such a fantastic base for so many diverse and delicious meals.
Before settling on its straightforward name, we played around with a few more unconventional options. “Artimato Chicken” was an early contender, but my personal favorite was “Tomachoke Chicken.” While the family found “Tomachoke” amusing, we quickly realized it didn’t quite evoke the appetizing image we were going for. The last thing we want is for a name to suggest anything less than a delightful culinary experience! So, we landed on the simple, descriptive, and utterly delicious “Artichoke Tomato Chicken” – a name that perfectly highlights the star ingredients without any unfortunate connotations.

Artichoke Tomato Chicken
Saved!
Fresh herbs, tomatoes, chicken, artichokes, and cheese combine to create this super easy meal that’s on your table in under 30 minutes!
Ingredients
-
4 boneless skinless chicken breasts -
1 cup Italian style breadcrumbs -
1 6 oz. jar artichoke hearts drained and sliced -
4 plum tomatoes sliced -
1 tablespoon fresh basil chopped -
1 tablespoon fresh oregano chopped -
6 slices provolone cheese -
1 cup chicken broth
Instructions
-
Preheat your oven to 425 degrees F (220 degrees C). Prepare a 9×13 inch baking dish by lightly spraying it with cooking spray to prevent sticking.
-
Pour the Italian-style breadcrumbs into a shallow dish or plate. This will make it easy to coat the chicken breasts evenly.
-
Take one boneless, skinless chicken breast at a time and coat both sides thoroughly with the breadcrumbs. Once coated, place it into your prepared baking dish. Repeat for all four chicken breasts.
-
Arrange the sliced plum tomatoes evenly over each piece of breaded chicken. Follow by scattering the drained and sliced artichoke hearts on top of the tomatoes.
-
Evenly sprinkle the chopped fresh basil and fresh oregano over each chicken breast. These herbs will infuse incredible aroma and flavor.
-
Take the provolone cheese slices, cut them in half if desired, and place three slices over each chicken breast. The cheese will melt beautifully, creating a golden, gooey topping.
-
Gently pour the chicken broth into the bottom of the baking dish, around the chicken. This will keep the chicken moist and create a delicious pan sauce.
-
Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden. A meat thermometer inserted into the thickest part of the chicken should read 165°F (74°C).

Why This Recipe Shines: Flavor & Simplicity
There’s nothing quite like the satisfaction of bringing simple, quality ingredients together to create something truly delicious. This Artichoke Tomato Chicken delivers on that promise every time. The moment it comes out of the oven, bubbling and golden, you know you’re in for a treat.

The speed with which this dish comes together is genuinely spectacular. Yes, I said it – spectacular baking time! It might sound a little over the top, but for a busy individual or family, having a wholesome, flavorful meal ready in under 30 minutes is nothing short of amazing. This recipe is a lifesaver on chaotic evenings, offering convenience without sacrificing taste.
A Symphony of Flavors and Textures
What sets this chicken apart are the star ingredients that elevate plain chicken into something extraordinary. The tangy artichoke hearts, paired with the sweet burst of fresh plum tomatoes, create a delightful contrast. The fresh basil and oregano are not just garnish; they infuse the chicken with an aromatic, herbaceous depth that screams Mediterranean comfort. And let’s not forget the provolone cheese – melting into a gooey, savory blanket that brings everything together.
Furthermore, the chicken broth poured into the baking dish is a game-changer. It ensures the chicken breasts remain incredibly moist and tender, preventing them from drying out in the oven. The broth also marries all the flavors, creating a luscious pan sauce that you’ll want to spoon over everything on your plate. This thoughtful addition transforms what could be a simple dish into a rich and comforting experience.
Our family rates recipes on a scale of 1-4, with 4 being the highest, and this Artichoke Tomato Chicken proudly earned “3 rolling pins.” This signifies a dish that is consistently delicious, easy to prepare, and worthy of regular rotation in our meal plans. Served with a crisp spinach salad and a perfectly baked sweet potato, it made for one awesome and well-rounded dinner.

Customizing Your Artichoke Tomato Chicken
This recipe is wonderfully adaptable, allowing you to tailor it to your family’s preferences or what you have on hand. Don’t have provolone? Mozzarella, fresh parmesan, or even a blend of Italian cheeses would work beautifully. Feel free to experiment with different herbs – a touch of thyme or parsley could add another layer of flavor. For a spicier kick, consider adding a pinch of red pepper flakes with the herbs. You could also swap plum tomatoes for cherry tomatoes, halved, or even a good quality canned diced tomato in a pinch (though fresh is always best here!). If you prefer a lighter breading, you can skip the breadcrumbs entirely and just season the chicken well before adding the toppings.
For those looking to add more vegetables, consider tossing in some sliced bell peppers or thin zucchini rounds into the baking dish alongside the chicken. They will cook down in the flavorful broth, adding extra nutrients and texture. This dish also lends itself well to meal prepping; simply prepare the chicken and toppings ahead of time and store in the fridge, then bake when ready for a truly hands-off dinner.
Expert Tips for the Best Artichoke Tomato Chicken
- Pound Your Chicken: For even cooking and tenderness, gently pound your chicken breasts to an even thickness (about ¾ inch). This prevents the thinner parts from overcooking while the thicker parts catch up.
- Quality Ingredients: Since this recipe uses minimal ingredients, the quality truly matters. Opt for fresh, ripe plum tomatoes and good quality marinated artichoke hearts. Fresh herbs make a significant difference in flavor compared to dried ones.
- Don’t Overcrowd: Ensure your chicken breasts have enough space in the baking dish. Overcrowding can steam the chicken instead of baking it, preventing a nice golden crust on the cheese.
- Resting Time: After baking, let the chicken rest for 5-10 minutes before slicing and serving. This allows the juices to redistribute, resulting in more tender and flavorful chicken.
- Check for Doneness: Always use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) for food safety.
