For this month’s Secret Recipe Club assignment, I had the pleasure of exploring The Freshman Cook, a blog brimming with an incredible array of recipes, passionately crafted by Teri. Her blog is a treasure trove of culinary inspiration, presenting such a vast selection that I genuinely struggled to pick just one recipe. Each post exuded warmth and expertise, making the decision both challenging and exciting. However, as soon as I stumbled upon a particular recipe, a lightbulb went off, and I knew instantly that this was the one I had to try. It was an absolute no-brainer!
What truly captivated me about Teri’s blog, beyond the sheer volume of delicious ideas, is the philosophy behind it. An Irresistible Classic with a S’Mores Twist: S’Mores Rice Krispie Treats
The recipe I ultimately chose from Teri’s delightful blog was her S’Mores Rice Krispie Treats. If you’ve been following my culinary adventures here at 365 Days of Baking, you’ll know that Rice Krispie Treats hold a very special place in our home. We absolutely adore them! I’ve experimented with various renditions in the past, from Butterfinger Rice Krispie Treats to indulgent Cake Batter Krispie Bars. These delightful squares have a mysterious way of disappearing almost as quickly as they’re made, which constantly fuels my quest for new combinations and exciting twists on this beloved classic.
Teri’s S’Mores version immediately spoke to me. The thought of combining the chewy, satisfying crunch of Rice Krispie Treats with the campfire magic of s’mores—toasted marshmallows, melty chocolate, and a hint of graham cracker—was simply too good to pass up. It promised a symphony of textures and flavors that would elevate the humble Rice Krispie Treat to a whole new level of dessert indulgence.

Ingredients
- 5 tablespoons butter
- 6 cups Rice Krispies Cereal
- 10 ounces miniature marshmallows (one standard bag)
- ½ cup graham cracker crumbs
- 2 cups milk chocolate chips
- 8 ounces Jet-Puffed StackerMallows or regular size marshmallows (for topping)
- 10 Mini Hershey chocolate bars, broken into individual squares (frozen for easier handling)
Instructions
- Preheat oven to 350°F (175°C). Generously spray a 9×13-inch baking dish with cooking spray to prevent sticking. This step is crucial for easy removal of your treats later.
- In a large saucepan, melt the butter over medium-low heat. Once the butter is fully melted, add the miniature marshmallows. Stir continuously until the marshmallows are completely melted and smooth. Reduce the heat to low. *A personal tip: While many recipes suggest removing from heat, I’ve found it’s much easier to incorporate the Rice Krispies if the marshmallow mixture remains warm. It can become quite stiff and difficult to stir as it cools, saving your wrist some strain!*
- Stir in the graham cracker crumbs until well combined with the marshmallow mixture. This infuses the base with that classic s’mores flavor.
- Remove the pan from the heat. Add the Rice Krispies cereal and mix thoroughly until every piece is coated with the marshmallow mixture. *Here’s a fantastic tip Teri shared, which I now swear by: spray your spatula or spoon with cooking spray before mixing! This ingenious trick prevents the sticky marshmallow mixture from adhering to your utensil, making the mixing process significantly easier.*
- Stir in the milk chocolate chips. Don’t worry if they start to melt; that’s perfectly normal and desirable, as it creates a wonderfully gooey chocolate layer throughout the treats.
- Pour the entire mixture into your prepared baking dish. Using a rubber spatula, or even hands generously sprayed with cooking spray (after a good wash, of course, especially if serving to family!), press the mixture down evenly to completely cover the bottom of the pan. You can also use buttered wax paper for this step.
- Arrange the StackerMallows (or regular marshmallows) in a single layer over the Rice Krispies mixture, ensuring the entire surface is covered.
- Place the baking dish into the preheated oven for about 15-17 minutes, or until the marshmallows are lightly golden brown and toasted. Keep a close eye on them, especially after the 7-minute mark, as ovens can vary. For an extra touch of golden perfection, you can carefully use a hand-held mini torch to brown the marshmallows further.
- Once the treats are removed from the oven and while they are still warm, gently press a frozen Mini Hershey chocolate square into the center of each toasted marshmallow. The residual heat will slightly melt the chocolate, creating that quintessential s’mores experience. Allow the treats to cool completely at room temperature before cutting into squares. This ensures clean cuts and prevents the treats from falling apart.











My Culinary Adventure & Adaptations: Crafting the Perfect S’Mores Rice Krispie Treats
Embarking on Teri’s S’Mores Rice Krispie Treats recipe was an absolute delight, and as with many great recipes, I found myself inspired to put my own subtle spin on it. My goal was to enhance certain flavors and textures, making it truly my own while honoring the original concept. I decided to make a few key adjustments, guided by my past experiences with Rice Krispie Treats and a keen desire for maximum flavor and ease of preparation.
Firstly, instead of incorporating actual graham cracker pieces into the base, which can sometimes lead to a drier texture, I opted for finely ground graham cracker crumbs. I then mixed these directly into the melted marshmallows. This ensured a more even distribution of that distinct graham cracker flavor throughout the entire base, providing a subtle, earthy note in every bite without compromising the chewiness of the treats. This small change made a big difference in creating a more cohesive flavor profile.
Secondly, when it came to the topping, Teri’s original recipe called for large marshmallows. However, I decided to experiment with the flat Jet-Puffed StackerMallows. My intention was to achieve a more uniform layer of toasted marshmallow across the top of the treats. While the Stackermallows did create a beautiful, even surface, I later learned that the larger, traditional marshmallows might have yielded a deeper, more satisfying golden-brown toast in the oven. This was a valuable lesson in marshmallow dynamics!
Finally, in a move that I believe no baker would question, I increased the amount of butter in the recipe. Because, as any true food enthusiast knows, you can *never* have enough butter, right? A little extra butter contributes to a richer flavor, a softer chew, and that undeniable melt-in-your-mouth quality that makes Rice Krispie Treats so addictive. This modification, while seemingly small, amplified the luxuriousness of the base, making it even more irresistible.
These slight tweaks were made with the aim of personalizing the recipe and experimenting with different textural elements. The beauty of baking, especially with a recipe as versatile as Rice Krispie Treats, lies in the freedom to adapt and discover new favorites. Each modification taught me something new about the ingredients and how they interact, adding another layer to my culinary journey.
The Verdict: A Sweet Success (with a Few Learnings!)
After all the mixing, pressing, and toasting, it was finally time for the moment of truth: tasting the S’Mores Rice Krispie Treats. On my personal rating scale of 1-4, with 4 being the absolute best, these treats proudly earned a commendable 3.5 rolling pins! They were undeniably delicious, a harmonious blend of rich chocolate and perfectly toasted marshmallow, all built upon that comforting, chewy Rice Krispie base. The overall experience was wonderfully chocolaty and sweet, and that golden, slightly caramelized marshmallow topping was truly a highlight.
However, every culinary experiment offers insights for future improvements. My primary feedback revolves around the graham cracker element. While the crumbs provided a subtle undertone, I found that I detected only a *slight* taste of the graham cracker. I had initially considered using a full cup of crumbs instead of half, but I hesitated, fearing the marshmallow batter would become too thick to effectively stir in the Rice Krispies. Next time, I plan to experiment with actual crushed graham crackers to see if they deliver a more pronounced flavor and texture, perhaps layering them or incorporating them more directly.
Regarding the marshmallows on top, my experience with the StackerMallows led to a bit of a challenge in achieving that deep golden brown hue. Teri’s original recipe, using larger marshmallows, suggested an oven time of only 5-7 minutes, whereas I had mine in for 15 minutes, and they still weren’t as browned as I would have liked. This led me to pull out my trusty mini blow torch to get that desired char. Yes, I admit, I “cheated” a little to achieve that perfect toast! I suspect using the larger, traditional marshmallows, as Teri did, would likely result in a more satisfyingly browned top in the specified shorter timeframe. They tend to puff up and caramelize more readily.
Another small hiccup I encountered was a slight sticking to the bottom of the pan. While they weren’t impossible to remove, it did require a little more patience and occasional “elbow grease” than I anticipated. This might have been due to the extended baking time or simply needing a more generous layer of cooking spray, especially since I omitted the graham cracker layer that might have provided a natural barrier. For next time, I’ll definitely ensure a more thorough spray and revert to using the larger marshmallows, adhering to the shorter baking time. Or, for a truly quick browning, broiling them for a minute or two (with extreme vigilance!) could be an excellent alternative, provided your broiler is in working order – mine, unfortunately, is “kaput,” so that wasn’t an option for me!
