Yay! It’s that time of the month again for another thrilling Secret Recipe Club reveal! Can you believe it’s already my fourth month participating in this incredible community? Time truly flies when you’re having so much fun discovering new recipes and connecting with fellow food bloggers. This club has become such a cherished part of my culinary journey, offering a delightful blend of anticipation, creativity, and camaraderie.
Unveiling the Secret: A Culinary Adventure
For those new to the concept, the Secret Recipe Club is a unique gathering of bloggers, united by a shared passion for food and discovery. Once a month, each participant is secretly assigned another blogger’s platform from which to choose, create, and then share a recipe. The catch? It’s a complete secret until reveal day! This element of surprise is what makes each assignment so exhilarating. I literally cannot wait to find out whose blog I’ll be “stalking” next!
The beauty of this club lies in its foundation, inspired by the beloved “Secret Santa” tradition. It was ingeniously started by Amanda of Amanda’s Cookin’, and it has blossomed far beyond her wildest dreams. What began as a single group has now grown into four distinct communities, a testament to the club’s engaging nature and the vibrant spirit of its members. It’s truly inspiring to witness such a wonderful initiative flourish, fostering countless new connections and culinary explorations.
Leading my specific group with unwavering support and guidance is Angela of Big Bear’s Wife. Both Angela and Amanda deserve immense credit and a massive baking hug for their tireless dedication and hard work. Their efforts create a nurturing environment where bloggers can thrive, experiment, and share their passion. This monthly ritual is more than just cooking; it’s about building bridges within the blogging world, learning new techniques, and drawing inspiration from diverse kitchens.
Discovering “A Couple In The Kitchen”
This month’s secret assignment brought a special sense of nostalgia, as I was paired with a fellow New Englander’s blog. Although my home base has shifted, New England will always hold a special place in my heart, and any connection to it instantly brings a smile to my face. The blog I had the pleasure of exploring was none other than…
I was genuinely thrilled to dive into their culinary world. Their blog immediately impressed me with its user-friendly design and a beautifully varied collection of recipes. Everything was thoughtfully categorized, making navigation an absolute breeze. From comforting mains to delightful desserts, their repertoire seemed endless, promising a wealth of inspiration for any home cook.
As a dedicated baking blogger, my primary mission for this Secret Recipe Club challenge was clear: find something I could bake! While “A Couple In The Kitchen” offered a tempting array of drinks, soups, and stews, I steadfastly focused on the sweet delights. “This is a baking blog, and I wanted to find something I could bake,” I repeatedly told myself, almost as a mantra during my extensive browsing. However, I must confess, this self-imposed limitation might soon be a thing of the past!
I’m incredibly excited about the prospect of broadening my culinary horizons once my current “365-day baking challenge” concludes. The thought of exploring other wonderful creations from future blog assignments—be it tantalizing drinks (they certainly looked delicious, even if I’m not a big drinker myself!), hearty soups, or intricate candies—fills me with absolute glee. The world of food blogging is so vast and inspiring, and I’m eager to delve into every delicious corner!
Beyond the recipes, “A Couple In The Kitchen” also featured an intriguing section titled “Et Cetera.” This unique corner showcased recipes that had won awards in contests, alongside insightful restaurant reviews and other engaging topics. I particularly enjoyed perusing their restaurant recommendations, mentally bookmarking several establishments for future visits when I inevitably return to my beloved New England.
The Perfect Fall Pie: Early-Apple Crumbly Pie
After much joyful perusing, the recipe that ultimately captured my heart and earned a spot in my kitchen was an absolute no-brainer. With fall in full swing, and our family’s profound love for apples and, more importantly, pie, the “Early-Apple Crumbly Pie” was the obvious choice. There’s something undeniably comforting about a homemade apple pie, especially one crowned with a generous, buttery crumb topping. I’m utterly nuts about Marie Callendar’s Apple Pie with its signature crumb, so the chance to recreate that magic from scratch was incredibly exciting!
This recipe promised all the quintessential flavors of autumn, combining sweet, tart apples with a symphony of warm spices, all encased in a flaky crust and finished with a satisfying crumbly texture. It was the perfect opportunity to embrace the season and bring a heartwarming dessert to our table. While I adhered closely to the essence of their recipe, I did make a few thoughtful adaptations to suit my personal baking style and ingredient preferences, which I’ll detail after the recipe.
Classic Apple Crumb Pie Recipe
Yields: 8 servings | Prep time: 30 minutes | Cook time: 45 minutes
Pie Crust
For the pie crust, I followed a reliable recipe for a single 9-inch pie crust. You can use your favorite homemade recipe or a high-quality store-bought option. (The original recipe linked here for a Crisco single 9-inch pie crust, but I prefer to make mine from scratch).
Crumb Topping Ingredients
1/2 cup all-purpose flour
3 tablespoons melted butter
1 teaspoon ground cinnamon
Pie Filling Ingredients
1 stick (1/2 cup) unsalted butter
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon allspice
1/4 teaspoon cardamom
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup water
1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 425ºF (220ºC).
- Prepare your chosen pie crust and carefully fit it into a 9-inch pie plate. Crimp the edges decoratively.
- In a medium bowl, combine the brown sugar, all-purpose flour, melted butter, and ground cinnamon for the crumb topping. Mix with a fork or your fingertips until the mixture resembles coarse crumbs. Set this aside.
- Peel, core, and dice the apples into uniform pieces. Place them into a large mixing bowl.
- In a medium saucepan, melt the stick of unsalted butter over medium-low heat.
- Stir in the 3 tablespoons of flour, 1 teaspoon cinnamon, nutmeg, allspice, and cardamom. Cook for about a minute, stirring constantly, until the mixture starts to thicken and become fragrant.
- Add both the white and brown sugars to the saucepan and stir until the mixture is smooth and the sugars have dissolved.
- Stir in the water and the pure vanilla extract.
- Bring the mixture to a gentle boil, then reduce the heat and let it simmer for five minutes, allowing the flavors to meld beautifully.
- Pour the warm sauce over the diced apples in the large bowl and toss gently to ensure all apple pieces are evenly coated with the rich, aromatic filling.
- Carefully pour the apple mixture into the prepared pie crust, spreading it out evenly.
- Generously sprinkle the crumb topping evenly over the apples, creating a beautiful, textured layer.
- Bake at 425ºF (220ºC) for 15 minutes. Then, reduce the oven temperature to 350ºF (175ºC) and continue to bake for another 30 minutes, or until the apples are tender and the crumb topping is golden brown and fragrant.
- Once baked, carefully remove the pie from the oven and place it on a wire rack to cool. This allows the pie to set properly and prevents the bottom crust from becoming soggy.

My Culinary Journey: Adaptations and Reflections
As promised, I made a few personal adaptations to the original recipe, aligning it more closely with my baking preferences. Firstly, instead of using a pre-made crust or a specific brand’s recipe, I opted to make my pie crust entirely from scratch. There’s a certain satisfaction and superior flavor that comes with a homemade crust, and it’s a step I rarely skip. Secondly, the original recipe used a pre-mixed apple pie spice blend, but I prefer to control the nuances of flavor, so I individually measured out cinnamon, nutmeg, allspice, and cardamom for a more layered and fresh spice profile.
My third adaptation involved the method of incorporating the apple filling. Rather than pouring the saucepan mixture over apples already arranged in the pie plate, I tossed the diced apples directly with the warm sauce in a large bowl before transferring them to the crust. This ensures every apple piece is thoroughly coated, promising a more uniform and intensely flavored filling.
Upon removing the pie from the oven and letting it cool for a while, I must admit, my initial assessment was a bit disheartening. The pie, when sliced, appeared extremely soupy, causing a moment of concern for its structural integrity.

However, true to the magic of pie making, a night in the refrigerator worked wonders. The next morning, the pie had set beautifully, transforming into a perfectly sliceable, cohesive dessert. The flavors, too, had undergone a remarkable transformation, deepening and blending overnight to create an incredibly yummy pie. This experience reinforced a valuable lesson: some things, especially fruit pies, are truly better after they’ve had a chance to chill and allow their components to fully harmonize.
Future Enhancements and My Baking Rating
While the pie was ultimately delicious, my continuous quest for baking perfection has me pondering further modifications for next time. I believe simplifying the process for the filling could yield an even better result. My thought is to bypass the saucepan step entirely and instead toss the peeled, diced apples directly with both sugars and all the spices. This method would coat the apples beautifully without the initial cooking of the sauce, potentially leading to a firmer filling.
Of course, I would never dream of omitting the butter – that would be an absolute travesty on so many levels! Instead, I would cut the butter into small pieces and strategically dot them throughout the apple mixture in the pie crust. Perhaps even tucking a few hidden gems beneath the surface, ensuring that rich, buttery flavor permeates every bite as the pie bakes. This would allow the butter to melt slowly and mingle with the apple juices, creating a naturally thickened and incredibly flavorful sauce right within the pie. I’m excited to test this theory and compare the results.
I rate everything I bake on a scale of 1 to 4, with 4 being the absolute best. After much consideration and enjoying its delicious transformation, this Apple Crumb Pie proudly earned 3 rolling pins. It’s a wonderful recipe with great potential, and I’m eager to refine it further!
