It’s time for another exciting Secret Recipe Club reveal!!

I can hardly believe this marks my fourth month participating in the wonderful Secret Recipe Club! Time truly flies when you’re having so much fun, and this culinary adventure has been an absolute delight. For those unfamiliar, the Secret Recipe Club (SRC) is a vibrant community of bloggers who come together once a month. Each participant is secretly assigned another blogger’s website, from which they must choose and prepare a recipe, finally revealing their creation on a designated “reveal day.”

Every single month, the anticipation builds to an almost unbearable level as I eagerly await the announcement of my assigned blog. It’s truly one of the most exciting aspects of my blogging calendar! But remember, shhhhh…, it’s a secret! The core premise of the club is a delightful element of surprise; we’re not supposed to inform the assigned blogger that we’ve been given their site until the reveal day. This creates a thrilling dynamic of “blog stalking,” allowing me to thoroughly explore their archives, uncover new culinary inspiration, and virtually “meet” a fellow passionate foodie.

The entire concept, ingeniously based on the “Secret Santa” tradition, was originally conceived by Amanda of Amanda’s Cookin’. Her brainchild has flourished beyond imagination, growing exponentially over the past few years to now encompass an impressive four separate groups! I’m sure Amanda herself never envisioned her wonderful idea would blossom into such a massive, thriving community.

Within this expansive club, I’m proudly part of a group led by the incredibly supportive Angela from the blog, Big Bear’s Wife. Both Angela and Amanda have been instrumental in the club’s success, offering tremendous guidance, encouragement, and a constant source of inspiration to all of us. A massive baking hug and heartfelt thanks go out to both of them for their tireless dedication and hard work in nurturing this fantastic community!

Discovering “A Couple In The Kitchen”: A Journey Back Home

This month, the stars aligned, and I was thrilled to be assigned a blog from a fellow New Englander! While I may no longer reside in the picturesque landscapes of New England, that region will forever hold a special place in my heart as “home.” My blog assignment, filled with the promise of exciting new recipes and a nostalgic connection, was none other than:

I couldn’t wait to dive into their blog and explore all the culinary treasures it held! “A Couple In The Kitchen” immediately impressed me with their beautifully organized and varied list of recipes. Their content is neatly categorized, making it incredibly easy to navigate and find exactly what you’re craving, whether it’s a quick weeknight meal or a decadent dessert.

My initial browsing session involved sifting through many, many of their fantastic recipes. However, staying true to my blog’s primary focus, I deliberately steered clear of the drinks and soups/stews categories. As I often remind myself and my readers – go ahead and say it with me:

“This is primarily a baking blog, and I was determined to find something wonderful I could bake!”

While that mantra holds true for now, I must admit, I won’t be confining myself to just baking for too many more months! I’m incredibly excited about the prospect of expanding my culinary horizons and venturing into a much wider array of wonderful creations from various blog assignments once my current 365-day baking challenge concludes. Just imagine the possibilities: refreshing drinks (not that I’m much of a drinker, but their concoctions certainly look enticing!), hearty soups, delicate candies, and the list goes on! The Secret Recipe Club continually inspires me to push my boundaries and explore new facets of cooking.

Beyond the impressive recipe collection, I also discovered a fascinating section on their blog titled “Et Cetera.” This unique category showcased a list of recipes they had entered into various contests and, notably, had won awards for – a true testament to their culinary skill! Additionally, this section featured insightful restaurant reviews and other engaging topics. As a former New England resident, I was particularly excited to peruse their list of restaurant recommendations, already mentally bookmarking a few establishments I absolutely must visit on my next trip back home. It’s these personal touches and broader interests that truly make a blog stand out.

The Perfect Fall Indulgence: Apple Crumb Pie

After a considerable amount of delightful perusing and careful consideration, the recipe I ultimately settled on was, in hindsight, a complete no-brainer. With autumn in full swing, the season practically calls for warm, comforting desserts. We absolutely adore apples in our household, and our love for pie knows no bounds! The recipe that captured my heart and palate was their “Early-Apple Crumbly Pie.” I made a few personal adaptations, which I’ll delve into after sharing the original recipe details. My excitement for this particular pie was heightened by my absolute adoration for Marie Callendar’s Apple Pie with its signature crumb topping – a true classic, and I was eager to create my own homemade version that captured that same comforting essence.

Apple Crumb Pie

Pie Crust

For the crust, I followed the recipe for the Crisco single 9-inch pie crust found here. (Note: While I referenced this, I typically make my crust from scratch, as discussed in my adaptations below).

Crumb Topping

  • 3/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 3 tablespoons melted butter
  • 1 teaspoon ground cinnamon

Pie Filling

  • 7 apples (I recommend a mix of sweet and tart, like Honeycrisp and Granny Smith, for best flavor and texture)
  • 1 stick unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cardamom
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1 teaspoon pure vanilla extract

Instructions for a Perfectly Baked Apple Crumb Pie

Preheat your oven to 425ºF (220ºC). Prepare your chosen pie crust (whether homemade or store-bought) and carefully place it into a 9-inch pie plate, crimping the edges as desired.

In a medium bowl, combine all the crumb topping ingredients: brown sugar, all-purpose flour, melted butter, and ground cinnamon. Mix these together thoroughly with a fork or your fingertips until the mixture resembles coarse crumbs. Once achieved, set this delicious topping aside.

Next, prepare your apples. Peel, core, and dice them into uniform pieces. This ensures even cooking and a consistent texture throughout the pie. Transfer the diced apples into a large mixing bowl.

Now, let’s create the luscious pie filling sauce. In a medium saucepan, melt the stick of unsalted butter over medium-low heat. Once melted, stir in the 3 tablespoons of flour and all the warm spices: cinnamon, freshly grated nutmeg, allspice, and cardamom. Cook this mixture for about one minute, stirring constantly, until it begins to thicken and a wonderful aroma fills your kitchen. This creates a roux that will help thicken your filling.

Add both the white and brown sugars to the saucepan, stirring diligently until the mixture is smooth and the sugars have dissolved. Finally, stir in the water and the pure vanilla extract.

Increase the heat slightly and bring the mixture to a gentle boil. Once boiling, reduce the heat to a simmer and let it cook for five minutes, allowing the flavors to meld and the sauce to thicken further. This step is crucial for developing a rich, flavorful base for your apples.

Pour this warm, aromatic sauce over your diced apples in the large bowl. Toss the apples gently to ensure they are thoroughly coated with the delicious mixture. Each piece should glisten with the spiced sugar syrup.

Carefully pour the coated apple mixture into your prepared pie crust, spreading it out evenly to fill the shell. Ensure there aren’t too many large gaps, as this will help the pie set properly.

Finally, sprinkle the crumb topping evenly over the apples, creating a beautiful, textured layer that will become delightfully golden and crunchy during baking.

Place the pie in the preheated oven and bake at 425ºF (220ºC) for 15 minutes. This initial high heat helps to set the crust and crumb topping. After 15 minutes, reduce the oven temperature to 350ºF (175ºC) and continue to bake for another 30 minutes, or until the apples are tender and the topping is golden brown and bubbling.

Once baked to perfection, carefully remove the pie from the oven. Resist the urge to slice into it immediately! Place it on a wire rack to cool completely. This crucial cooling period allows the filling to set properly, ensuring beautiful, clean slices.

Reflections and Adaptations: My Baking Journey with Apple Crumb Pie

As I mentioned earlier, I made a few adaptations to “A Couple In The Kitchen’s” original “Early-Apple Crumbly Pie” recipe. Firstly, I opted to make my pie crust entirely from scratch. While the referenced Crisco recipe is excellent, there’s something deeply satisfying and personal about creating a homemade crust; it’s simply what I prefer to do for that authentic touch and control over ingredients.

My second adaptation involved the spices. Instead of using a pre-mixed 1/2 tablespoon of apple pie spice, I chose to incorporate individual spices: cinnamon, nutmeg, allspice, and cardamom. This allowed me to fine-tune the flavor profile, adding layers of warmth and complexity that I find particularly appealing in an autumn dessert. Using freshly grated nutmeg, for example, makes a noticeable difference in aroma and taste.

Lastly, I altered the method for coating the apples. The original recipe suggests pouring the sauce over the apples once they are already in the pie plate. However, I preferred to toss the diced apples with the mixture from the saucepan in a large bowl before transferring them to the pie crust. I find this method ensures a more even and thorough coating of every apple piece, leading to a more consistent flavor throughout the entire pie.

Learning from the “Soupy” Moment

When I finally went to cut into the pie after it had cooled for a while, I must admit, I was initially a bit disappointed. The pie was extremely soupy, and the slices didn’t hold their shape well at all. This is a common challenge with apple pies, often due to the high moisture content of apples, especially certain varieties.

However, true to the baker’s spirit of perseverance, I decided to refrigerate the pie overnight. And what a difference a night in the fridge made! The next morning, the pie held together beautifully, allowing for perfectly firm and delicious slices. More importantly, the overnight rest allowed all the wonderful spices and apple flavors to meld and deepen significantly, transforming a merely “good” pie into a truly yummy one. This experience reinforced my belief that some things are simply better enjoyed cold, or at least after a proper chill, allowing the flavors to fully develop.

Future Improvements and Baking Insights

For my next attempt at this delicious Apple Crumb Pie, I have a few ideas to refine the process and potentially avoid the initial “soupy” texture. I think I would simplify the filling creation by just tossing the peeled and diced apples directly with the sugars and spices to coat them. Then, I would place this mixture straight into the pie crust, completely omitting the saucepan step where the butter, flour, and spices are cooked into a sauce. This approach would rely more on the apples’ natural juices and the added sugars to create a thicker, more cohesive filling during baking.

Of course, I wouldn’t dream of omitting the butter – that would be absolutely WRONG on so many levels when it comes to pie! Instead of melting it into a sauce, I would cut the stick of butter into smaller pieces. These small butter cubes would then be dotted among the apple filling (perhaps even strategically hidden in a few places for delightful pockets of richness!) before the crumb topping is generously spread over the apples. This should provide the necessary richness and help create a more set filling.

I rate everything I bake on a scale of 1-4, with 4 being the absolute best. Despite the initial soupiness and the need for overnight refrigeration, this Apple Crumb Pie truly impressed me with its ultimate flavor and comforting appeal. It earned a respectable 3 rolling pins!
