What Do I Need to Make These Decadent Chocolate-Covered Cherries?
The ingredient list for this delightful treat is wonderfully short, making it accessible even for impromptu dessert cravings. Chances are, you might already have all three essential items stocked in your pantry!
- Long Stem Maraschino Cherries –
While you can certainly use cherries without stems, opting for long-stemmed maraschino cherries significantly simplifies the dipping process. The stem provides a convenient handle, keeping your fingers clean and ensuring a uniform chocolate coating. Moreover, the elegant stem adds a touch of sophistication and visual appeal, making for a truly beautiful presentation when these cherries are used to decorate desserts or served on their own. Look for good quality, brightly colored cherries that are plump and firm. - Coconut Oil –
This is the secret ingredient that gives our chocolate a silky smooth texture and a perfect dipping consistency, allowing it to coat the cherries flawlessly and set beautifully. I highly recommend using refined coconut oil, as it is flavorless and odorless, ensuring that the natural taste of the chocolate and cherry shines through without any coconut undertones. If you don’t have coconut oil on hand, or prefer an alternative, an equal amount of vegetable oil can be substituted. Just ensure it’s a neutral-tasting oil. - Semi-Sweet Chocolate Chips –
Semi-sweet chocolate chips provide a balanced sweetness that beautifully complements the tartness of the maraschino cherries. However, feel free to get creative with your chocolate choice! Dark chocolate chips offer a richer, more intense flavor for those who prefer less sweetness. Milk chocolate chips will result in a creamier, milder treat, while white chocolate chips can add a different visual and flavor dynamic. Consider making a batch with various types of chocolate for a truly impressive assortment, perfect for gifting. If you plan to make a large batch or several varieties, using a double boiler over simmering hot water to melt the chocolate and coconut oil can be more efficient and maintain a consistent temperature, preventing the chocolate from seizing or burning.

How Do I Make These Delicious Coated Cherries?
Preparing these exquisite chocolate-covered cherries is surprisingly straightforward. Follow these simple steps for a perfect batch every time:
- Prepare Your Workspace: Begin by covering a plate or baking sheet with a sheet of parchment paper or wax paper. This non-stick surface will prevent the chocolate from sticking as it sets, making for easy removal later.
- Drain and Dry the Cherries Thoroughly: This is a critical step for perfect chocolate adhesion! Place two layers of paper towels on a separate plate. Carefully remove the maraschino cherries from their jar and spread them out on the paper towels. Allow them to drain for at least 15 minutes. After this initial draining, it is absolutely essential to gently blot each cherry with additional dry paper towels. Ensure they are completely dry and free of any residual moisture, as even a tiny drop of liquid can cause the chocolate to seize or become lumpy, preventing a smooth, even coating.
- Melt the Chocolate: In a small, microwave-safe bowl, combine your chosen chocolate chips with the coconut oil. Give them a quick toss to ensure the chips are lightly coated in the oil. Microwave the mixture for 30 seconds. Remove and stir well with a spoon or spatula. The chocolate may not look fully melted yet, but stirring helps distribute the heat. If needed, return the bowl to the microwave and reheat in 10-second intervals, stirring vigorously after each interval, until the chocolate is entirely melted and beautifully smooth, without any lumps. Be careful not to overheat the chocolate, as this can cause it to burn or become thick.
- Dip the Cherries: Holding each thoroughly dried cherry by its stem, gently dip it, one at a time, into the melted chocolate mixture. Slowly spin the cherry to ensure all sides and the top are evenly coated. As you remove it from the chocolate, allow any excess chocolate to drip back into the bowl. This prevents puddles of chocolate at the base and ensures a clean, elegant finish. Carefully place each dipped cherry onto the prepared parchment-lined plate.
- Chill to Set: Once all your cherries are dipped, place the plate of chocolate-covered cherries into the refrigerator. Allow them to chill and set for at least an hour. This cooling period ensures the chocolate hardens completely, giving them that delightful snap when bitten into, and makes them easy to handle, serve, or use in other desserts.

How Do I Store This Sweet Treat?
Proper storage ensures these homemade chocolate-dipped cherries remain fresh and delicious for an extended period. Once set, transfer them to an airtight container. They will keep beautifully in the refrigerator for up to two weeks, allowing you to enjoy them at your leisure or prepare them well in advance for special occasions.
If you’re making a larger batch, I recommend arranging the cherries in single layers within the container, separated by sheets of parchment paper. This prevents them from sticking together and helps maintain their perfect shape. This recipe is also an excellent candidate for making ahead, especially when you have a busy schedule leading up to an event. Preparing them in advance not only saves you time but also ensures you have a ready supply of these irresistible treats whenever the craving strikes or guests arrive.
Recipe Tips for Perfect Chocolate Covered Cherries
- Dry Cherries Are Key: For the absolute best results, it cannot be stressed enough: ensure your maraschino cherries are completely dry before you even think about dipping them into the chocolate. Any moisture will cause the melted chocolate to become lumpy and prevent it from adhering smoothly to the cherries. My first attempt taught me this lesson the hard way – inadequate drying resulted in an uneven, unsightly coating. Blot, blot, blot!
- Mastering the Melt: When melting the chocolate chips and coconut oil in the microwave, stick to the initial 30-second burst. Then, stir thoroughly. If it’s not entirely smooth, proceed with 10-second intervals, stirring well after each one. This incremental heating method is crucial for achieving a perfectly smooth, glossy chocolate without scorching it. Overheating chocolate can cause it to seize and become unusable.
- Temperature Matters: Ensure your melted chocolate is not too hot, but warm enough to be fluid. If it’s too hot, it will run off the cherries too quickly, leaving a thin, uneven coat. If it’s too cool, it will be too thick and clumpy. Aim for a consistency that coats the cherry evenly but allows excess to drip off easily.
- Decorate for Extra Flair: For an extra touch of elegance, consider sprinkling your freshly dipped cherries with chopped nuts, sprinkles, edible glitter, or a contrasting drizzle of white chocolate before they set. This makes them even more festive and personalized, especially when giving them as gifts.
- Experiment with Flavorings: For an adult twist, add a tiny drop (1/8 to 1/4 teaspoon) of almond extract or a liqueur like kirsch or amaretto to your melted chocolate. Stir it in thoroughly before dipping for an extra layer of flavor.
