Ingredients
Blueberry Filling
- 12 ounces fresh blueberries
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- Zest of one lemon
- 1 tablespoon water
- 2 tablespoons crystallized ginger, finely chopped
- 3 tablespoons granulated sugar
Cream Cheese Mixture & Danish
- 6 ounces cream cheese, softened to room temperature
- ¼ cup confectioners’ sugar
- ½ teaspoon vanilla extract
- 1 sheet puff pastry dough, thawed
- 1 large egg
- 2 teaspoons water
- ¼ cup McCormick® Good Morning Blueberry Ginger Breakfast Topper, divided
- 1 tablespoon raw sugar (turbinado sugar)
Instructions
- Preheat your oven to 400°F (200°C).
- Remove the puff pastry dough from the freezer and allow it to thaw at room temperature for approximately 40 minutes.
For the Blueberry Filling
- In a large mixing bowl, combine the fresh blueberries, cornstarch, lemon juice, lemon zest, water, finely chopped crystallized ginger, and granulated sugar. Mix gently until all ingredients are well combined and the blueberries are evenly coated.
For the Cream Cheese Mixture & Assembly
- In a separate mixing bowl, beat the softened cream cheese with an electric mixer until it is light and fluffy.
- Add the vanilla extract and confectioners’ sugar to the whipped cream cheese. Continue beating until the mixture is smooth and well blended.
- Carefully unroll the thawed puff pastry dough onto a piece of parchment paper. Roll it out slightly to achieve a rectangle measuring approximately 12 inches by 14 inches.
- Using a sharp knife or a pizza cutter, make parallel strips along both long sides of the dough. Each strip should be about 3 inches long towards the center and approximately 1-inch in width. Ensure the center portion of the dough remains uncut, forming a solid base for the filling.
- Evenly spread the prepared sweetened cream cheese mixture down the center, uncut portion of the pastry dough.
- Spoon the blueberry ginger filling over the layer of cream cheese.
- Sprinkle 2 tablespoons of the McCormick® Good Morning Blueberry Ginger Breakfast Topper evenly over the blueberry filling.
- Starting at one end, carefully fold two opposite strips of dough over the filling in a crisscross pattern. Continue this braiding technique down the length of the danish until you reach the opposite end, gently pressing the ends to seal.
- In a small bowl, whisk together the egg and 2 teaspoons of water to create an egg wash.
- Using a pastry brush, generously coat the entire surface of the assembled danish with the egg wash. This will help achieve a beautiful golden-brown crust.
- Sprinkle the remaining 2 tablespoons of McCormick® Good Morning Blueberry Ginger Breakfast Topper and the raw sugar along the top of the braided dough.
- Carefully transfer the danish, still on its parchment paper, to a baking sheet. Place it into the preheated oven and bake for 20 minutes, or until the pastry is golden brown and puffed, and the filling is bubbling slightly.
