These Taco Hummus Wraps are a tasty and healthy way to elevate your Taco Tuesday, featuring a delicious homemade taco hummus base.

Ingredients

  

For the Taco Hummus

  • 1 15- ounce can of Bush’s Garbanzo Beans (chickpeas) drained (reserve water), and rinsed
  • 2 ½ tablespoons olive oil
  • 2 tablespoons tahini
  • 2 tablespoons homemade taco seasoning
  • 1 tablespoon lemon juice
  • 3-5 tablespoons reserved chickpea water

For Assembly (per wrap)

  • 1 large tortilla or flatbread
  • ¼ cup baby spinach
  • 2-3 tomato slices thinly sliced
  • 1-2 tablespoons thinly sliced red onion
  • 2 tablespoons Bush’s Seasoned Recipe Black Beans drained and rinsed
  • 1 tablespoon Mexican-style shredded cheese
  • 1 tablespoon freshly chopped cilantro

Instructions

Making the Taco Hummus

  • Combine all of the hummus ingredients, starting with three tablespoons of the reserved chickpea water, into a blender or food processor.
  • Blend until the mixture is completely smooth and well combined. If a creamier consistency is desired, gradually add the remaining chickpea water, one tablespoon at a time, until the ideal texture is achieved. Be careful not to make the hummus too runny.

Assembling Your Wraps

  • On one end of a tortilla or flatbread, spread two tablespoons of the prepared taco hummus. Spread an additional tablespoon of hummus on the opposite end; this will help seal the wrap and prevent it from unrolling.
  • Layer a few fresh spinach leaves over the hummus. Then, add a few slices of tomato and some thinly sliced red onion.
  • Evenly distribute two tablespoons of the drained and rinsed black beans over the vegetables.
  • Finish by sprinkling one tablespoon of Mexican-style shredded cheese and some freshly chopped cilantro over the fillings.

To Wrap and Enjoy

  • Carefully fold in the sides of the tortilla slightly over the ingredients. Then, starting from the end with the main filling, tightly roll the tortilla towards the opposite end until completely sealed. Slice in half if desired and serve immediately.
