Don’t settle for ordinary tomato soup. This Creamy Tomato Basil Soup is made with tomatoes, carrots, celery, and just the right amount of heavy cream. Topped with Parmesan cheese, it’s begging to be served alongside a loaf of crusty bread for soaking up every last drop.

  • 1 large pot with lid

Ingredients

  • 28 ounces crushed tomatoes with basil garlic and oregano
  • 28 ounces diced tomatoes with basil garlic and oregano
  • 28 ounces low sodium chicken broth
  • 1 cup heavy cream
  • 1 cup milk I used whole
  • 1 cup finely diced celery about 4 stalks
  • 1 cup finely diced carrots about 4 medium
  • 1 cup diced onion
  • ½ cup fresh basil chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh rosemary minced
  • salt and pepper to taste
  • Parmesan cheese for topping

Instructions

  1. In a large pot, combine the cans of crushed and diced tomatoes, chicken broth, heavy cream, milk, finely diced celery, carrots, and onion. Stir everything together until well combined.
  2. Cover the pot with a lid and cook on medium-high heat for 30 minutes, allowing the vegetables to soften and the flavors to begin to meld.
  3. After 30 minutes, reduce the heat to low and let the soup gently simmer for an additional 15 minutes. This slow simmer further deepens the flavors and ensures a cohesive blend.
  4. Remove the pot from the heat. Stir in the fresh basil, dried oregano, and minced fresh rosemary. Season generously with salt and pepper to taste, adjusting until the flavor is perfect. For a smoother, velvety consistency, use an immersion blender directly in the pot to puree the soup until desired smoothness is achieved. Alternatively, transfer batches to a regular blender (carefully!) and process.
  5. Ladle the hot soup into bowls and serve immediately, generously topped with freshly grated Parmesan cheese and optional crispy bacon bits. Enjoy!
