- 4 tablespoons unsalted butter, melted
- 1 3.4-ounce package White Chocolate OR Cheesecake instant pudding mix (White Chocolate is preferred for best flavor)
- 1 ½ cups milk
- 4 ounces cream cheese, room temperature
- ½ cup confectioners’ sugar
- ½ teaspoon pure peppermint extract
- Red food coloring (optional, for festive color)
- 1 8-ounce container Cool Whip, divided
- 10-ounce package Andes Peppermint Crunch Baking Chips, divided (or crushed peppermint candies)
- 2 ounces white baking chocolate, separated (for grating)
Instructions
- In a blender or food processor, finely crush 20 Oreo cookies until they resemble fine crumbs.
- In a medium bowl, combine the melted butter and the finely crushed Oreo cookies. Mix thoroughly until the crumbs are well moistened and hold together.
- Press the cookie mixture firmly and evenly into an ungreased 8×8-inch baking dish. For easier removal and cleaner cuts, you can line the pan with parchment paper, leaving an overhang on the sides.
- Place the prepared crust into the freezer for at least 30 minutes while you prepare the other layers. This helps it set and become firm.
- Using a grater (the fine side works best), grate the white baking chocolate into a small bowl. Set aside for topping.
- In a separate small bowl, whisk together the instant pudding mix and 1 ½ cups of milk until smooth. Place this in the refrigerator to set, usually for about 5 minutes, or until thickened.
- In a large mixing bowl, beat the softened cream cheese with the peppermint extract and confectioners’ sugar until light and fluffy.
- Gently fold in 1 cup of the Cool Whip into the cream cheese mixture until thoroughly blended and smooth.

- Retrieve the set pudding from the refrigerator. Place dollops of pudding over the peppermint-cream cheese layer. Using an offset spatula or the back of a spoon, gently spread the pudding to completely cover the layer below.
- Spread the remaining Cool Whip evenly over the pudding layer, creating a cloud-like topping.
- Refrigerate the dessert for at least two hours to allow all layers to set completely, or freeze for one hour for a firmer, almost ice cream-like texture.
- Optional step for extra crunch: In a plastic bag, break up 8 of the remaining Oreo cookies into larger crumbs or small pieces.
