Baked Blueberry Waffles

Homemade waffles filled with creamy cream cheese and sweet blueberries, then topped with a rich brown sugar caramel sauce and baked to perfection. This warm, delightful breakfast is packed with flavor and delicious fruit, ensuring your family will be eager for seconds!

Ingredients

  

  • 12 Buttermilk Waffles (I made a double batch and had 4 extra)
  • 6 ounces cream cheese (room temperature)
  • 3 ½ cups blueberries (plus more for garnish – I used 2 1/2 cups frozen and 1 cup fresh on top before baking, with additional fresh berries for serving)
  • 1 ½ cups milk
  • 6 eggs
  • ¼ cup maple syrup
  • ¾ cup packed brown sugar
  • ¾ cup butter (1 1/2 sticks)

Instructions

  1. Make buttermilk waffles according to your preferred recipe.
  2. Prepare a 9×13-inch baking dish by generously spraying it with cooking spray.
  3. Divide the room temperature cream cheese into 6 equal portions. Spread one portion of cream cheese evenly onto the top of one waffle. Place this waffle, cream cheese side up, in a single layer at the bottom of the prepared baking dish. Repeat this process with 5 more waffles and the remaining cream cheese portions, creating a base layer of 6 cream-cheese-topped waffles.
  4. Evenly sprinkle 2 1/2 cups of the blueberries over the cream cheese layer.
  5. Carefully place the remaining 6 waffles on top of the blueberry layer, creating 6 “waffle sandwiches.”
  6. In a medium-sized bowl, lightly beat the eggs. Add the milk and maple syrup, then mix well until all ingredients are thoroughly combined. Using a ladle, carefully pour this mixture evenly over all the waffles in the baking dish, ensuring each waffle is well coated and the liquid seeps between the layers.
  7. Cover the baking dish tightly with plastic wrap and refrigerate for at least 30 minutes. This allows the waffles to absorb the egg mixture.
  8. After 30 minutes, remove from the refrigerator. Using a metal spatula and a clean hand, carefully turn each individual waffle sandwich over. Don’t worry if they separate slightly or look a bit messy; simply rearrange the blueberries and gently press the waffles back together as best as you can.
  9. Replace the plastic wrap tightly and refrigerate overnight. This crucial step allows the waffles to fully soak up the custardy mixture, resulting in an incredibly moist and flavorful final dish.
  10. When you are ready to bake in the morning, preheat your oven to 375 degrees F (190 degrees C).
  11. While the oven is warming up, prepare the brown sugar caramel sauce. In a small saucepan, combine the butter and packed brown sugar.
  12. Heat the mixture over medium-high heat, stirring constantly, until the butter is completely melted and the brown sugar is fully dissolved. To check if the sugar is dissolved, rub a tiny bit of the mixture between your fingers; if it feels gritty, continue to heat and stir until smooth.
  13. Remove the waffles from the refrigerator. Pour the warm brown sugar caramel sauce evenly over the top of the waffles in the baking dish.
  14. Bake for 25-30 minutes, or until the waffles are golden brown and the center is set (a toothpick inserted into the center should come out mostly clean).
  15. Allow the baked waffles to stand for 10 minutes before serving. This resting time helps the flavors settle and the structure firm up slightly.
