I distinctly recall my particular fondness for Mom’s “Betty Crocker’s Cooky Book” from 1963. Its pages were filled with truly captivating cookie pictures, each one more tempting than the last! We often baked the Chocolate Crinkles from that book; their snowy powdered sugar tops and rich chocolate flavor made them an absolute favorite.

Today, I’ve cultivated a wonderful collection of my own, though I firmly believe one can always make room for more! In the coming months, I’m excited to share reviews of several new releases from my talented blogger friends. No-Bake Peanut Butter Pie

This No-Bake Peanut Butter Pie, with its crunchy Oreo crust, creamy peanut butter filling, and generous fresh whipped cream, is truly the perfect dessert for game night or any occasion!

Ingredients

  • 24 Oreo cookies
  • 5 tbsp (70 g) unsalted butter, melted
  • 3 ⅛ cup (735 ml) heavy cream, divided
  • 2 ¼ cups (270 g) powdered sugar, divided
  • 1 ½ cups (390 g) chunky peanut butter
  • 12 oz. (340 g) cream cheese, softened
  • ¼ cup (45 g) semisweet chocolate chips
  • 10 mini Reese’s Peanut Butter Cups, quartered (I used the mini Reese’s with Reese’s pieces inside)
  • ¼ cup (35 g) honey-roasted peanuts, chopped

Instructions

  1. Place the Oreo cookies into your food processor and pulse until they form fine crumbs.
  2. Slowly pour the melted butter in through the feed tube while pulsing until the crumbs are completely coated in butter.
  3. Pour the buttered crumbs into a 9-inch (23-cm) deep-dish pie plate and press the mixture firmly onto the bottom and up the sides to form the pie crust.
  4. Place the pie crust into the freezer to chill while you prepare the filling.
  5. In a large mixing bowl, whip 3 cups (705 ml) of the heavy cream and 3/4 cup (90 g) of the powdered sugar with an electric mixer until stiff peaks form. Refrigerate the whipped cream while you start the peanut butter filling.
  6. In a separate large bowl, beat the peanut butter, softened cream cheese, and the remaining 1 1/2 cups (180 g) of powdered sugar with an electric mixer until the mixture is light and fluffy, which should take about 3 minutes.
  7. Gently fold in half (approximately) of the prepared whipped cream into the peanut butter mixture until it is fully incorporated and smooth.
  8. Scoop the peanut butter filling into the chilled pie crust and spread it evenly to create a smooth layer.
  9. Place the pie into the refrigerator to chill while you prepare the delicious toppings.
  10. Combine the semisweet chocolate chips and the remaining 1/8 cup (30 ml) of heavy cream in a small microwave-safe mixing bowl.
  11. Microwave for 45 seconds. Let the chocolate sit undisturbed for 5 minutes to allow it to melt completely into the cream, then stir until the ganache is well-combined and smooth.
  12. Generously sprinkle the quartered Reese’s Peanut Butter Cups and chopped honey-roasted peanuts over the top of the pie.
  13. Drizzle the rich chocolate ganache over the top of the pie, creating an appealing pattern.
  14. Serve the pie immediately for a slightly softer texture, or refrigerate for a minimum of 4 hours (or overnight) to allow the pie to completely set for firmer slices. Enjoy!
