These Strawberry Cheesecake Dream Bars are layers of graham crackers, strawberries, white chocolate pudding, and whipped topping. It’s the perfect NO-BAKE dessert for strawberry season!

Ingredients

  • 1 ⅓ cups graham cracker crumbs plus additional for topping
  • 5 tablespoons unsalted butter melted
  • 16 ounces fresh strawberries divided, you’ll need 4 for the cream cheese layer and 5 whole for decoration, rest sliced
  • 1 ½ cups milk
  • 3.4 ounces package white chocolate instant pudding mix *See note below for alternatives
  • 4 ounces cream cheese room temperature
  • ½ cup confectioners’ sugar
  • 4 fresh strawberries mashed
  • 8 oz Cool Whip or Stabilized Whipped Cream divided

Instructions

  1. Set 5 whole strawberries aside for decoration. Mash 4 of them for the cream cheese mixture, and then slice the remaining strawberries thinly.
  2. Prepare an 8 X 8 baking dish by spraying it with cooking spray and optionally lining with parchment paper for easy removal.
  3. In a medium mixing bowl, combine the graham cracker crumbs and melted butter and mix until well incorporated.
  4. Press the crumb mixture firmly into the bottom of the prepared baking dish. Place it into the freezer for a minimum of 30 minutes to set.
  5. In a small bowl, mix the 1 ½ cups milk with the package of white chocolate instant pudding. DO NOT use the two cups as directed on the package; we want a firmer pudding for these bars. Refrigerate until ready to use.
  6. Place the cream cheese, mashed strawberries, and confectioners’ sugar into a mixing bowl. Cream until soft, fluffy, and well combined. Gently fold in 1 cup of the Stabilized Whipped Cream or Cool Whip.
  7. Remove the crust from the freezer. Arrange a single layer of the sliced strawberries evenly over the crust.
  8. Using an offset spatula, carefully place dollops of the cream cheese mixture on top of the strawberries and gently spread until it completely covers the strawberry layer.
  9. Spread the chilled pudding layer evenly over the cream cheese layer.
  10. Top with the remaining Stabilized Whipped Cream or Cool Whip.
  11. Decorate with the reserved whole and sliced strawberries, and sprinkle with additional graham cracker crumbs for a garnish.
  12. Refrigerate the bars for at least two hours before serving to ensure all layers are properly set.

Notes

  • The original Strawberry Creme pudding mix used in this recipe is now difficult to find. Sonic makes a Strawberry Shake pudding that could be an option (though I haven’t personally tried it). Instant vanilla pudding or white chocolate pudding will both work beautifully as substitutes.
