Ingredients

  • 1 (28-ounce) bag Potatoes O’Brien
  • 1 (16-ounce) can refried beans
  • 4 corn tortillas
  • 8 eggs
  • 3 tablespoons canola oil, divided (and possibly more)
  • 1 cup Monterey Jack cheese, shredded
  • 1 ½ cups salsa
  • ¼ cup chopped green onion
  • ¼ cup crumbled Cotija cheese
  • 3 tablespoons freshly chopped cilantro

Instructions

  1. Preparation Note: This recipe works best with an extra set of hands for assembly, but it can certainly be managed by one person.
  2. Preheat your oven to its lowest setting. Place four serving plates and one extra plate (for keeping tortillas warm) into the oven to warm them.
  3. Cook half of the Potatoes O’Brien package according to the manufacturer’s directions until golden brown and tender. Set aside, keeping warm if possible.
  4. In a small saucepan or microwave-safe bowl, gently heat the refried beans until warm and spreadable.
  5. In a separate microwave-safe bowl, warm the salsa slightly.
  6. Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Fry the corn tortillas one at a time for approximately 20 seconds per side, or until they are lightly browned and slightly crisp.
  7. Transfer each fried tortilla to the warmed plate in the oven, separating them with a paper towel to absorb excess oil and keep them warm.
  8. Once all tortillas are fried, reduce the skillet heat to medium-low. Add the remaining 2 tablespoons of canola oil (or more if needed) to the skillet for cooking the eggs.
  9. Crack and cook two eggs at a time for about two minutes. For perfectly set whites and delightfully runny yolks, gently spoon some hot oil over the tops of the eggs during cooking. This ensures the yolks will break beautifully when pierced. Adjust cooking time for desired yolk doneness (e.g., cook longer for firmer yolks).
  10. Assembly: On each heated serving plate, place one fried tortilla. Spread about 1/4 to 1/3 cup of warm refried beans evenly over the tortilla.
  11. Add a generous 1/4 portion of the cooked Potatoes O’Brien onto the bean layer.
  12. Sprinkle about two tablespoons of shredded Monterey Jack cheese over the potatoes.
  13. Spoon two tablespoons of warm salsa over the cheese.
  14. Carefully place two freshly cooked eggs on top of the layered ingredients.
  15. Drizzle with two additional tablespoons of warm salsa and sprinkle with a little more Monterey Jack cheese.
