Essential Ingredients for Perfect Apple Pie Bars

Creating these sweet dessert bars is straightforward, whether you opt for the convenience of store-bought apple pie filling or prefer the satisfaction of a homemade version. Here’s a detailed look at the full list of ingredients, along with some insights into their roles:

For the Buttery Shortbread Crust and Topping
  • All-purpose flour: This forms the foundational structure of our shortbread crust and topping, providing the perfect texture.
  • Baking powder: A leavening agent that gives the crust a slight lift and tender crumb.
  • Ground cinnamon, Ground nutmeg, Ground cloves: These warm, aromatic spices infuse the crust and topping with classic fall flavors, perfectly complementing the apple filling. Don’t underestimate their power to elevate the overall taste!
  • Salt: A pinch of salt balances the sweetness and enhances all the other flavors in the crust.
  • Butter (salted or unsalted, room temperature): The star of any good shortbread, butter provides rich flavor and tenderness. Using room temperature butter is crucial for achieving a smooth, well-combined dough when creaming.
  • Shortening: Contributes to the bar’s tender, flaky texture and helps create that melt-in-your-mouth quality, making it distinct from a regular cookie.
  • Granulated sugar: Sweetens the crust and helps with browning, creating that beautiful golden finish.
  • Large eggs: Eggs act as a binder, helping to hold the dough together and adding richness.
  • Pure vanilla extract: A touch of vanilla enhances the overall sweetness and provides a comforting aromatic depth.
For the Luscious Apple Filling
  • Canned apple pie filling: For ultimate convenience, a good quality canned apple pie filling works wonders. To ensure easier spreading and slicing of the finished bars, we recommend cutting the apple slices into smaller, bite-sized pieces. This also helps distribute the apple goodness more evenly throughout each bar. Alternatively, you can prepare your favorite homemade apple pie filling from scratch for a personalized touch.

For the Irresistible Powdered Sugar Glaze
  • Softened butter: Just a small amount of butter gives the glaze a silky texture and a richer flavor. Make sure it’s softer than room temperature for easy mixing.
  • Powdered sugar (confectioners’ sugar): The base of our sweet, smooth glaze.
  • Ground cinnamon, Ground nutmeg: These spices echo the flavors in the crust, tying the entire dessert together with a warm, comforting aroma and taste.
  • Milk: Used to thin the glaze to the perfect drizzling consistency. Start with a small amount and add more gradually.
  • Pure vanilla extract: A final touch of vanilla elevates the sweetness and adds another layer of classic flavor to the glaze.

How to Master These Easy Apple Pie Bars: Step-by-Step

Let’s dive into creating these delightful apple pie bars, starting with our incredibly versatile buttery crust and topping!

  1. Prepare Your Workspace: Begin by preheating your oven to 350°F (175°C). This ensures your oven is at the correct temperature when your dough is ready for its first bake.
  2. Combine Dry Ingredients: In a medium-sized bowl, whisk together your dry ingredients: all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground cloves, and salt. Whisking ensures these ingredients are evenly distributed, which is key for a consistent flavor and texture in your crust. Set this bowl aside for a moment.
  3. Cream Wet Ingredients: In a separate, large mixing bowl, use a hand mixer to cream together the softened butter and shortening on high speed until the mixture is smooth, light, and well combined. This process incorporates air, making your crust tender. Gradually add the granulated sugar and continue to beat until it’s fully incorporated and the mixture is fluffy. Remember to pause and scrape down the sides and bottom of the bowl frequently with a spatula to ensure everything is mixed thoroughly and no ingredients are left clinging to the bowl.
  4. Incorporate Eggs and Vanilla: Add the large eggs one at a time, mixing well after each addition. Stir in the pure vanilla extract. Continue mixing until everything is fully combined and smooth.
  5. Combine Wet and Dry Mixtures: Gradually add the whisked flour mixture to the wet ingredients in the large bowl. Mix on low speed until just combined. Be careful not to overmix, as this can lead to a tough crust. The dough will be thick and somewhat crumbly.
  6. Divide the Dough: Carefully set aside approximately 1 1/4 cups of this prepared dough. This portion will be used later as the delicious crumbly topping for your bars.
  7. Form the Crust: Press the remaining, larger portion of the dough evenly into the bottom of an ungreased 9×13-inch baking dish. Ensure it forms a uniform layer across the entire bottom of the pan.
  8. First Bake (Blind Bake): Place the baking dish with the crust into your preheated oven and bake for 12 minutes. When you remove it, the edges will be lightly golden brown, and the center may still appear slightly underdone. Don’t worry, this is exactly what you want! The crust will continue baking in the next step.

Assemble and Bake to Golden Perfection

Now that your crust is partially baked, it’s time to add the flavorful apple filling and the delicious topping, then complete the baking process.

  1. Add the Apple Filling: Gently and evenly spread the sweet apple pie filling over the entire par-baked bottom crust. If using canned filling with large slices, remember to cut them into bite-sized pieces beforehand for better distribution and easier slicing later.
  2. Crumble the Topping: Take the reserved 1 1/4 cups of dough and crumble it in small mounds over the apple layer. Don’t aim for perfect coverage; the scattered mounds will create a rustic, crumbly topping once baked.
  3. Final Bake: Return the pan to the oven and bake for approximately 30 minutes, or until the topping is beautifully golden brown and the filling is bubbly. The internal temperature of the bars should reach a safe level, and the crust will be fully cooked.
  4. Initial Cooling: Once baked, remove the pan from the oven and place it on a wire rack. Allow the bars to cool for at least 10 minutes before proceeding to glaze them. This initial cooling period helps the bars set slightly.

Crafting the Perfect Powdered Sugar Glaze

No Apple Pie Bar is complete without a smooth, spiced glaze to tie all the flavors together. This simple glaze adds a touch of elegance and extra sweetness.

  1. Prepare the Glaze Base: In a small bowl, combine the softened butter, powdered sugar, ground cinnamon, and ground nutmeg. Mix these ingredients together until they form a thick paste.
  2. Achieve Drizzling Consistency: Add the milk and pure vanilla extract to the mixture. Whisk vigorously until the glaze is smooth and free of lumps. The goal is a consistency that can be easily drizzled from a spoon. If your glaze is too thick, add additional milk, one teaspoon at a time, mixing well after each addition, until the desired consistency is reached. Be careful not to add too much milk at once, as it can quickly become too thin.
  3. Glaze the Bars: Using a spoon, evenly distribute the prepared glaze over the slightly cooled apple pie bars. You can drizzle it in an artistic pattern or simply spread it across the entire surface.
  4. Cool Completely: For the cleanest slices and best texture, allow the apple pie bars to cool completely on the wire rack before attempting to slice and serve them. This allows the filling to fully set and the glaze to harden slightly. Patience is key here, but it’s worth it for a dessert that’s truly better than a traditional slice of apple pie!

Expert Recipe Tips for Flawless Apple Pie Bars

Achieving bakery-quality Apple Pie Bars is easy with a few insider tips. Pay attention to these details to ensure your bars turn out perfectly every time:

  • Prep Your Apple Filling: The apple filling, especially if store-bought, often contains large apple slices. For a more even distribution of apples throughout each bar and to make slicing much easier, I highly recommend cutting these larger slices into smaller, bite-sized pieces. This ensures every bite has apple goodness and prevents the bars from tearing when cut.
  • Adjust Baking Time for Glass Pans: If you are using a glass baking pan instead of a metal one, be aware that glass retains heat differently. You may need to increase the baking time by approximately 5-7 minutes to ensure the bars are fully cooked and achieve that golden-brown perfection. Always check for doneness by observing the color and the bubbling of the filling.
  • Glaze Butter Consistency is Key: For the powdered sugar glaze, the butter should be softer than typical room temperature but not melted. This slightly softer consistency allows it to blend effortlessly with the powdered sugar, milk, and vanilla, creating a smooth, lump-free glaze that drizzles beautifully without being too runny or too thick.
  • Cooling is Crucial: While tempting to cut into these warm, delicious bars immediately, resist the urge! Allowing them to cool completely (or at least significantly) before slicing is essential. This gives the apple filling time to set and the crust to firm up, preventing messy, crumbling bars and ensuring clean, beautiful squares.
  • Don’t Overmix the Dough: When combining the wet and dry ingredients for the crust, mix just until no dry streaks of flour remain. Overmixing can develop the gluten in the flour, resulting in a tougher, less tender shortbread crust.
  • Use Quality Ingredients: As with any baking, the quality of your ingredients makes a difference. Fresh, good-quality butter and spices will yield the best flavor.

Frequently Asked Questions (FAQs) About Apple Pie Bars

Here are some common questions and helpful answers to ensure your Apple Pie Bars experience is a complete success:

How do I properly store Apple Pie Bars?

To maintain their freshness and flavor, store your Apple Pie Bars in the refrigerator. Ensure they are tightly covered with aluminum foil or transferred to an airtight container. When stored correctly, they will remain delicious for 3-5 days. This keeps the crust from getting soggy and the filling fresh.

Can I freeze these apple bars for later?

Absolutely! These apple bars are fantastic for freezing. Once they have cooled completely to room temperature, cover the entire pan tightly with a layer of plastic wrap, followed by a layer of aluminum foil. For individual servings, you can slice them first and then wrap each bar individually before placing them in an airtight freezer-safe container. They can be frozen for 1-2 months. When you’re ready to enjoy them, thaw the bars in the refrigerator overnight. You can gently rewarm them in a microwave or a low oven for a fresh-baked taste.

Can I use apple pie spice instead of the individual listed spices?

Yes, you certainly can use pre-mixed apple pie spice! However, be aware that the flavor profile will be slightly different from this recipe’s original intention. Apple pie spice blends typically include ginger and allspice, neither of which is present in our specific combination of cinnamon, nutmeg, and cloves. While the taste will vary, it will undoubtedly still be delicious and offer that familiar autumnal warmth!

Is the powdered sugar glaze optional, or can I omit it?

Of course, you can omit the powdered sugar glaze if you prefer a less sweet dessert or are looking to save a few calories. The bars are wonderfully flavorful even without it. If you still desire a sweet topping but want to skip the glaze, consider serving them with my Stabilized Whipped Cream, a scoop of vanilla ice cream on the side, or even a simple dusting of powdered sugar. A light sprinkle of cinnamon sugar would also be a fantastic alternative!

Enjoy the cozy flavors of Fall in these glazed Apple Pie Bars with a spiced shortbread crust, and apple pie filling. Serve plain or warm with a scoop of vanilla ice cream drizzled with caramel sauce!

Ingredients

  • 3 cups all-purpose flour

  • 1 ½ teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ¼ teaspoon ground cloves

  • ½ teaspoon salt

  • ½ cup butter , room temperature. I use salted

  • ½ cup shortening

  • 1 ¾ cups sugar

  • 3 large eggs

  • 1 teaspoon pure vanilla extract

  • 21 ounces apple pie filling See note.

Powdered Sugar Glaze

  • 1 tablespoon butter softened. See Note.

  • 1 cup powdered sugar

  • ¼ teaspoon ground cinnamon

  • teaspoon ground nutmeg

  • 1 tablespoon milk additional milk if needed, 1 teaspoon at a time

  • ½ teaspoon pure vanilla extract can substitute pure vanilla extract

Instructions

  • Preheat oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and salt.
  • In a large mixing bowl, cream the butter and shortening on high until smooth and well combined. Add the sugar, and completely combine. Be sure to scrape down the sides and bottom of the bowl.
  • Add the eggs and vanilla and mix well. Add the flour mixture, and thoroughly combine. Set aside 1 1/4 cups of the dough for the topping.
  • Press the remaining dough into an ungreased 9 X 13-inch baking pan. Bake for 12 minutes. The edges will be lightly golden, and the middle will be underdone, but not to worry, you’re going to bake them again.
  • Gently spread the apple pie filling over the entire crust. Drop the remaining dough in mounds over the filling.
  • Bake for about 30 minutes until golden brown. Place pan on a baking rack to cool for 10 minutes before glazing.

Powdered Sugar Glaze

  • In a small bowl, mix together the softened tablespoon of butter, 1 cup powdered sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Add the 1 tablespoon of milk, and 1/2 teaspoon vanilla extract. If needed, add 1 teaspoon of milk until glaze is of a consistency where it can be drizzled.
  • Using a spoon, evenly distribute the glaze over the top of the bars after they’ve sat for 10 minutes on the wire rack. Allow to cool completely before slicing into bars.

Notes

  • The apple filling has sliced apples, so I’ve found that the apples are better distributed when I cut the slices into bite-sized pieces. I think it will also be easier to cut the bars if you make the apples smaller as well.
  • If using a glass baking pan, you may need to increase the baking time by about 5-7 minutes.
  • The butter for the powdered sugar glaze should be softer than room temperature as it will be easier to mix with the powdered sugar. It doesn’t need to be melted.
