Later, my husband, our son, and I ventured out for dinner, as our daughters were enjoying time with their friends. Okay, I’ll admit, I might have tasted it a bit too enthusiastically before the meal. But honestly, it was *that* good. Historically, I’ve enjoyed blue cheese dressing, but I wouldn’t consider myself a massive fan, especially if it contains large, chunky pieces of cheese. My preference leans towards a smoother, creamier consistency.

When dining out, I typically avoid ordering it with my salad. However, it’s my absolute top choice for dipping wings alongside crisp celery and carrots, far surpassing ranch dressing in my book. Interestingly, when I went to the store, I intended to buy blue cheese, but it was placed right next to the Gorgonzola. And, *apparently*, someone had moved a container of Gorgonzola onto the blue cheese shelf, which I, of course, grabbed. I was a bit frustrated when I got home, as I honestly had no idea what Gorgonzola was.

BBUUTTTT… it turns out (and I’m sharing this in case you, like me, weren’t aware) that Gorgonzola is, in fact, a type of blue cheese native to Italy! So, my accidental purchase was actually a stroke of luck. Imagine if it had been cheddar!

This happy accident reminded me that there are many different types of blue cheese, each with its own distinct characteristics. They range in flavor from mild and subtly tangy to intensely pungent and sharp, and they are produced from the milk of various animals, including cows, sheep, and goats. The characteristic blue veins are created by injecting specific strains of Penicillium mold, such as *Penicillium roqueforti* or *Penicillium glaucum*, into the cheese during its maturation process. These molds thrive in the internal air pockets of the cheese, developing the signature color and robust flavor.

For instance, Roquefort, hailing from France and made from sheep’s milk, is often lauded as one of the finest blue cheeses, known for its moist, crumbly texture and sharp, salty, and complex flavor. Montbriac, also French but made from cow’s milk, offers a softer, creamier texture reminiscent of brie, with a milder blue tang. Then there’s Stilton from England, a firm-textured cow’s milk blue cheese with a rich, mellow, and slightly nutty flavor that develops with age.

While I could list many more varieties, the world of blue cheese is vast and fascinating! For a comprehensive guide to different types and their origins, I highly recommend visiting the Cook’s Thesaurus. According to Cook’s, the best blue cheeses for salad dressing typically include Stilton, Roquefort, Bavarian Blue, Gorgonzola, or Cabrales. Even though Gorgonzola isn’t always at the very top of such lists, I found it to be absolutely perfect in this particular dressing recipe.

Homemade Creamy Gorgonzola (Blue Cheese) Dressing

Ingredients

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tablespoon milk
  • 2 tablespoons white vinegar
  • ¼ teaspoon Worcestershire sauce
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon garlic powder
  • ½ cup crumbled Gorgonzola cheese

Instructions

  1. In a medium bowl, whisk together the mayonnaise, Greek yogurt, milk, white vinegar, Worcestershire sauce, sugar, salt, freshly ground black pepper, and garlic powder until smooth and well combined.

Interestingly, we didn’t use this magnificent dressing on a traditional salad right away, which is why you won’t see a picture of it adorning fresh greens.
