These Oatmeal Butterscotch Cookies are your all-time favorite oatmeal cookie made even better and sweeter with the addition of butterscotch chips. They are incredibly easy to make, delivering a comforting chewy texture and a delightful blend of hearty oats and sweet, caramel-like butterscotch flavor that will have everyone asking for more. Perfect for any occasion or simply as a comforting treat!

Ingredients

  • 8 tablespoons unsalted butter room temperature
  • ½ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • ¾ teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cups rolled oats (old-fashioned or quick-cooking)
  • 1 cup butterscotch chips

Instructions

  • Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper or silicone baking mats for easy cleanup and to prevent sticking.
  • In a medium-sized bowl, thoroughly whisk together the flour, salt, baking soda, and rolled oats. Set this dry mixture aside.
  • In a large mixing bowl, using an electric mixer on medium speed, cream together the softened unsalted butter and both the brown sugar and granulated sugar. Beat until the mixture is light, fluffy, and well combined, which typically takes about 3-4 minutes. Scrape down the sides of the bowl as needed to ensure even mixing.
  • Add the large egg and vanilla extract to the creamed butter and sugar mixture. Beat until just combined, ensuring the egg is fully incorporated. Do not overmix.
  • Gradually add the dry ingredients (flour, salt, baking soda, oats mixture) to the wet butter mixture. Mix on low speed until the dry ingredients are just blended into the wet ingredients. Be careful not to overmix the dough, as this can result in tough cookies.
  • Gently fold in the butterscotch chips using a spatula until they are evenly distributed throughout the cookie dough.
  • Drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them approximately 1 inch apart to allow for spreading. For uniform cookies, use a cookie scoop.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are just set. The cookies may still look soft in the middle, but they will firm up as they cool.
