Elvia has dedicated 12 years to working at Agrogana, where she currently serves as a production line field supervisor – a role she achieved through hard work and dedication.
Elvia’s connection to Fair Trade runs deep; she has previously served on the Fair Trade committee, actively contributing to the initiatives that benefit her community. She is also a loving mother to two daughters, aged 9 and 12, whose futures are brighter thanks to the opportunities Fair Trade provides. Elvia and her husband, Luis Alberto Villegas, who also works at Agrogana, are two of only five employees who have been able to participate in a weekend adult school program, fully paid for by the Fair Trade premium. Ingredients
Coconut Cream Filling
- 2 tablespoons cornstarch
- ¼ cup sugar
- 1 cup milk, divided
- 1 egg yolk
- 1 ½ teaspoons pure vanilla extract
- ⅔ cup sweetened coconut flakes
Double Chocolate Bundt Cake
- 1 ⅔ cup all-purpose flour
- 1 cup sugar
- ½ cup Lake Champlain Unsweetened Cocoa (Fair Trade)
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup buttermilk
- ½ cup melted Spectrum Organic Virgin Coconut Oil (Fair Trade)
- 2 teaspoons pure vanilla extract
- 1 12-ounce package Guittard Akoma Extra Semisweet Chocolate Chips (Fair Trade), divided
Garnish
- Remaining Guittard Akoma Extra Semisweet Chocolate Chips, melted
- ¼ cup sweetened coconut flakes, toasted
- 2 tablespoons toasted sliced almonds, toasted
- 5 Nutiva O’Coconut Classic Treats (Fair Trade)
Instructions
Coconut Cream Filling
- In a small bowl, combine ¼ cup milk and the egg yolk. Whisk until well blended.
- In a small saucepan over medium heat, whisk the cornstarch, sugar, and the remaining ¾ cup of milk. Continue stirring constantly to prevent lumps, until the mixture begins to boil and thickens significantly. Stir for an additional 30 seconds after it boils, then remove from heat.
- To temper the egg yolk mixture, slowly whisk a small amount (about ¼ cup) of the hot milk mixture into the egg yolk mixture. This brings the temperature of the egg yolk up gently without scrambling it.
- Gradually pour the tempered egg yolk mixture back into the saucepan with the remaining hot mixture, whisking continuously to ensure everything is fully incorporated.
- Stir in the pure vanilla extract and the sweetened coconut flakes until completely combined.
- Allow the coconut cream filling to cool to room temperature while you prepare the cake batter. Stir occasionally during cooling to prevent a skin from forming on top.
Toast Coconut Flakes and Almonds
- Preheat your oven to 350 degrees F (175 degrees C).
- Spread the sweetened coconut flakes and sliced almonds in a single layer on a rimmed baking sheet.
- Bake for 5 to 10 minutes, or until they turn a beautiful golden brown. Make sure to toss them halfway through baking to ensure even toasting.
- Important: Keep a very close eye on them during the last few minutes. Coconut and almonds can go from perfectly golden to burnt in a matter of seconds.
Double Chocolate Bundt Cake
- Reduce the oven temperature to 325 degrees F (160 degrees C).
- Prepare your bundt pan thoroughly by greasing it generously and then lightly flouring it. (A baking spray with flour, like Baker’s Joy, works wonderfully for this.) Ensure every crevice is coated to prevent sticking.
- In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, sugar, Lake Champlain Unsweetened Cocoa, baking soda, and kosher salt.
- In a separate medium bowl, combine the wet ingredients: buttermilk, melted Spectrum Organic Virgin Coconut Oil, and pure vanilla extract. Whisk until smooth.
- Gradually add the wet ingredients to the dry ingredients in the mixing bowl. Beat until the batter is just combined and smooth, being careful not to overmix. Gently fold in 1 cup of the Guittard Akoma Extra Semisweet Chocolate Chips.
Cake Assembly
- Pour approximately half of the chocolate bundt cake batter into the bottom of the prepared bundt pan.
- Using the back of a spoon, carefully create a shallow well (or trench) in the center of the batter, all around the pan. Be mindful not to dig too deep or extend the well to the outer edges of the pan, as this could cause the filling to leak out.
- Evenly distribute spoonfuls of the cooled Coconut Cream Filling into the well you’ve created in the batter.
- Carefully cover the coconut cream filling with the remaining chocolate cake batter. Use an offset spatula or the back of a spoon to gently smooth the top, ensuring the filling is fully enclosed.
- Bake for 55 to 60 minutes, or until a cake tester inserted into the thickest part of the cake (avoiding the filling) comes out clean.
- Once baked, remove the bundt pan from the oven and place it onto a wire cooling rack. Let the cake cool in the pan for exactly 5 minutes before carefully inverting it onto a serving plate to cool completely.
Garnish
- In a microwave-safe bowl, melt the remaining Guittard Akoma Extra Semisweet Chocolate Chips. Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and melted. If needed, heat for an additional 15 seconds, but be extremely careful not to overheat, as chocolate can seize and become unusable if overcooked.
- Transfer the melted chocolate to a small sandwich bag. Seal the bag, then snip off a tiny corner. Drizzle the melted chocolate artistically over the cooled bundt cake.
- Arrange the 5 Nutiva O’Coconut Classic Treats gracefully around the top of the cake, or in the center.
- Finally, sprinkle the toasted coconut flakes and toasted sliced almonds over the top of the cake for added texture and flavor.
