Elvia has been an integral part of the Agrogana team for 12 years and currently serves as a production line field supervisor, a position of significant responsibility.

Elvia’s commitment to her community and personal growth is truly inspiring. She has actively participated in the Fair Trade committee, helping to steer decisions that benefit her fellow workers. As a mother of two daughters, aged 9 and 12, Elvia understands the importance of education and opportunity. Both she and her husband, Luis Alberto Villegas, also an Agrogana employee, are part of an exclusive group of five employees participating in a weekend adult school program, fully funded by the Fair Trade premium. This invaluable opportunity allows them to pursue their high school degrees, opening doors to a brighter future for themselves and their children.

Elvia shares her powerful perspective: “Before, I worked at a different local flower company where we were exploited, even when I was pregnant! Coming here, the difference was immense. This Double Chocolate Coconut Cream Filled Bundt Cake is a moist and rich chocolatey bundt filled with a delicious coconut cream. It’s all made from scratch using ingredients to support Fair Trade, offering both incredible flavor and ethical peace of mind.

Ingredients

Coconut Cream Filling

  • 2 tablespoons cornstarch
  • ¼ cup sugar
  • 1 cup milk, divided
  • 1 egg yolk
  • 1 ½ teaspoons pure vanilla extract
  • ⅔ cup sweetened coconut flakes

Double Chocolate Bundt Cake

  • 1 ⅔ cup all-purpose flour
  • 1 cup sugar
  • ½ cup Lake Champlain Unsweetened Cocoa (Fair Trade recommended)
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup buttermilk
  • ½ cup melted Spectrum Organic Virgin Coconut Oil (Fair Trade recommended)
  • 2 teaspoons pure vanilla extract
  • 1 12-ounce package Guittard Akoma Extra Semisweet Chocolate Chips, divided (Fair Trade recommended)

Garnish

  • Remaining Guittard Akoma Extra Semisweet Chocolate Chips, melted
  • ¼ cup sweetened coconut flakes, toasted
  • 2 tablespoons toasted sliced almonds, toasted
  • 5 Nutiva O’Coconut Classic Treats (Fair Trade recommended)

Instructions

Coconut Cream Filling

  1. In a small bowl, combine ¼ cup milk and the egg yolk. Whisk until smooth.
  2. In a small saucepan over medium heat, whisk together the cornstarch, sugar, and the remaining ¾ cup of milk. Stir constantly, allowing the mixture to come to a boil and thicken significantly. Continue stirring for an additional 30 seconds after it begins to boil, then remove from heat.
  3. To temper the egg yolk, slowly whisk a small amount (about ¼ cup) of the hot milk mixture into the egg yolk mixture. This prevents the egg from scrambling.
  4. Gradually pour the tempered egg yolk mixture back into the saucepan with the remaining hot mixture, whisking continuously until fully incorporated.
  5. Stir in the pure vanilla extract and the sweetened coconut flakes until well combined.
  6. Transfer the coconut cream filling to a clean bowl and allow it to cool to room temperature, stirring occasionally to prevent a skin from forming. This can be done while you prepare the cake batter.

Toast Coconut Flakes and Almonds

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Spread the sweetened coconut flakes and sliced almonds evenly onto a rimmed baking sheet.
  3. Bake for 5-10 minutes, or until they turn a beautiful golden brown. Make sure to toss them halfway through to ensure even toasting.
  4. IMPORTANT: Keep a very close eye on them during the last few minutes! Coconut and almonds can go from perfectly golden to burnt in a matter of seconds. Once toasted, remove from oven and let cool.

Double Chocolate Bundt Cake

  1. Reduce the oven temperature to 325 degrees F (160 degrees C).
  2. Prepare a 10-12 cup bundt pan by thoroughly greasing and flouring it. (A baking spray with flour, like Baker’s Joy, works wonderfully for this.) Ensure every crevice is coated to prevent sticking.
  3. In a large mixing bowl, whisk together the dry ingredients: all-purpose flour, sugar, Lake Champlain Unsweetened Cocoa, baking soda, and kosher salt.
  4. In a separate medium bowl, whisk together the wet ingredients: buttermilk, melted Spectrum Organic Virgin Coconut Oil, and pure vanilla extract.
  5. Slowly add the wet ingredients to the dry ingredients in the mixing bowl. Beat on low speed until just combined, being careful not to overmix. Overmixing can lead to a tough cake.
  6. Gently fold in 1 cup of the Guittard Akoma Extra Semisweet Chocolate Chips.

Cake Assembly

  1. Pour approximately half of the chocolate cake batter into the bottom of your prepared bundt pan.
  2. Using the back of a spoon, carefully create a shallow well or trench in the center of the batter, all around the pan. Be mindful not to scrape the bottom of the pan or push the batter too far to the outer edges, as you want to contain the filling.
  3. Evenly distribute spoonfuls of the cooled Coconut Cream Filling into the well you created.
  4. Carefully spoon the remaining chocolate cake batter over the coconut cream filling, gently smoothing it with an offset spatula to ensure the filling is completely covered.
  5. Bake for 55-60 minutes, or until a cake tester inserted into the deepest part of the cake (avoiding the filling) comes out clean.
  6. Once baked, remove the cake from the oven and place it on a wire cooling rack. Let it cool in the pan for 5-10 minutes before carefully inverting it onto a serving plate to cool completely.

Garnish

  1. In a microwave-safe bowl, melt the remaining Guittard Akoma Extra Semisweet Chocolate Chips. Microwave in 30-second intervals, stirring well after each, until smooth and pourable. If needed, heat for an additional 15 seconds, but be extremely careful not to overheat, as chocolate can seize and become unusable if overcooked.
  2. Carefully pour the melted chocolate into a small sandwich bag. Seal the bag, then snip off a tiny corner. Drizzle the melted chocolate artistically over the top of the cooled bundt cake.
  3. Arrange the 5 Nutiva O’Coconut Classic Treats around the top of the cake, creating a decorative border or pattern.
  4. Finally, generously sprinkle the toasted coconut flakes and toasted sliced almonds over the entire cake for added texture and flavor.
