These Cranberry Cheese Balls are a quick mini appetizer made with two types of cheese and coated with dried cranberries and pistachios. Add pretzel sticks for easy serving at any party or potluck!

Ingredients

  • 8 ounces cream cheese room temperature
  • 1 cup shredded white cheddar cheese freshly shredded from a block is preferred
  • 1 cup roughly chopped dried cranberries, divided
  • 1 cup chopped pistachios, divided with some chopped fine
  • 2 tablespoons chopped fresh rosemary
  • salt and pepper to taste *See note.
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon honey
  • 30 pretzel sticks optional

Instructions

  1. In a large mixing bowl, add the 8 ounces cream cheese, 1 cup cheddar cheese, 1/2 cup dried cranberries, 1/2 cup chopped pistachios, 2 tablespoons rosemary, salt and pepper, 1 tablespoon parsley, and 1 tablespoon honey. Mix until everything is well incorporated, scraping down the sides of the bowl as needed.
  2. In a medium bowl, mix together the remaining 1/2 cup cranberries, 1/2 cup chopped pistachios and 1 tablespoon of parsley.
  3. Using a #60 cookie scoop or a tablespoon, shape the cream cheese mixture into individual balls. Roll each ball in the cranberry pistachio mixture to coat. If using pretzel sticks for serving, place one into each of the balls. Cover and refrigerate for at least 30 minutes before serving.
  4. If you’d like, drizzle with a Balsamic Glaze before serving for some added flavor.

Notes

  • I used raw pistachios and added about 1/4-1/2 teaspoon each of salt and pepper. If using salted pistachios do not add the additional salt.
  • You can also make or buy a Balsamic Glaze to drizzle over the top of them before serving to enhance the flavor.
