Add more vegetables to your meals with these easy tender Cabbage Steaks! Slice up a head of cabbage, flavor it with some simple seasonings, and you’ve got a delicious vegetarian side or main dish!

Ingredients

  • 1 head green cabbage
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt, plus more if desired
  • ½ teaspoon fresh ground black pepper, plus more if desired

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with a sheet of aluminum foil or parchment.
  2. Cut the bottom off of the cabbage to create a flat surface. Position the cabbage so that it is standing up on the cutting board and cut it into 1-inch thick slices. Place the slices onto the prepared baking sheet. Be careful when transferring each end to the baking sheet as they may fall apart.
  3. Drizzle the olive oil over the slices and sprinkle each with salt and pepper.
  4. Cover the baking sheet with another sheet of aluminum foil, and bake for 45 minutes or until a fork can easily be pierced into the core.

Notes

Feel free to add more spices to your taste, like chili pepper, garlic, ginger, or Old Bay seasoning for added flavor, or sprinkle with a little fresh lemon juice before serving.
