Here at our home, we opted for a rather quiet and wonderfully low-key Easter. The infamous Easter Bunny, ever diligent, certainly didn’t forget the teenagers, bringing them an assortment of delightful treats. And, much to my personal delight, there was an extra Cadbury Creme Egg tucked away just for mom – a little indulgence I’m already eagerly anticipating enjoying once they hit the sale racks tomorrow! With our daughter preparing to head back to college today, I found myself filled with that familiar mix of pride and a touch of wistful longing. To make her send-off a little sweeter and to create one last memorable moment, I decided to surprise both kids with a homemade treat they absolutely adore: strawberry blintzes. Of course, it had to be strawberry! It seems that strawberries and lemons are the culinary muses that predominantly inspire my fruity creations in the kitchen. Making these blintzes is truly a labor of love, requiring a good two to three hours of dedicated prep work, meticulously crafting the delicate crepes, preparing the luscious filling, and then carefully frying each one to golden perfection. It’s a commitment, but the joy they bring makes every minute worthwhile. Consequently, it’s a dish I reserve for those truly “special occasions,” making it no more than three times a year. I began my clandestine operation before any of the three sleepyheads had stirred. As they each drifted into the kitchen at different times, they noticed me busily at work but, remarkably, none of them connected the dots or even thought to ask what culinary magic I was conjuring. I rather enjoy flying under the radar in these moments, allowing the surprise to build. So, the look on my son’s face when I finally revealed my delicious project was utterly priceless. His jaw quite literally dropped, his eyes widened to saucers, and he was rendered momentarily speechless. Then, in a burst of pure, unadulterated affection, he practically sprinted over to me, professing his undying love for his mother and enveloping me in an endless hug. It was an incredibly heartwarming and hilariously dramatic display. His sister, meanwhile, simply watched him with an amused expression, as if he’d completely lost his mind, adding another layer of delightful chaos to our Easter morning. These are the cherished moments that make all the effort in the kitchen absolutely worth it, solidifying traditions and creating memories that will be recounted for years to come.
Following a long and wonderfully productive but equally demanding morning in the kitchen, and feeling that familiar, unwelcome wave of feverishness creeping back (I truly thought I was finally kicking this persistent bug!), I decided to take things down a notch for the rest of the day. The idea of embarking on another elaborate baking project simply didn’t appeal. Instead, I opted for something much simpler, yet incredibly satisfying, to accompany the delicious tri-tip roast we had planned for dinner: homemade popovers. Despite my extensive baking experience, I had never before ventured into the world of popovers. In my mind’s eye, I envisioned them puffing up dramatically, light and airy, and possessing that same delicious, comforting quality as the Yorkshire Pudding I had successfully made years ago. The anticipation of watching them rise was exciting. To guide me on this new culinary adventure, I turned to a trusted resource in my collection, finding a promising recipe nestled on page 662 of my beloved New Doubleday Cookbook, authored by the esteemed Jean Anderson and Elaine Hanna, published by Doubleday, a division of Random House, Inc., and identifiable by ISBN 0-385-19577-X. Relying on such a well-regarded cookbook instantly instills confidence, knowing that the recipe has been tested and refined by culinary experts. Popovers, often considered a cousin to Yorkshire pudding, offer a wonderful texture contrast to a hearty roast, providing a delicate yet satisfying bite that beautifully soaks up savory juices. They are a fantastic example of how simple ingredients can transform into something truly impressive with the right technique, making them an ideal choice for a day when I wanted maximum impact with minimal fuss. This straightforward approach allowed me to enjoy the process without feeling overwhelmed, perfect for a day when my energy levels were less than stellar. The thought of these golden, airy delights complementing our evening meal was exactly the comfort I needed.
Classic Popovers – A Delightful Accompaniment
These elegant yet simple popovers are perfect for complementing any roast or hearty meal. This recipe yields 6 delicious popovers, ideal for a family dinner.
Ingredients:
- 1 cup sifted all-purpose flour
- ½ teaspoon fine sea salt
- ¾ cup whole milk (ensure it’s at room temperature for best results)
- ¼ cup cold water
- 2 large eggs (also ideally at room temperature)
Instructions:
To begin, preheat your oven to a robust 450ºF (232ºC). The high initial heat is crucial for achieving that signature dramatic rise, creating the characteristic “pop” that gives these delightful breads their name.
In a small mixing bowl, combine all the listed ingredients. Using a rotary beater, or for a more modern approach, an electric hand mixer or even a whisk, beat the mixture until it is just smooth. It’s important not to overmix the batter, as this can develop the gluten too much, resulting in tough popovers rather than light and airy ones. During the beating process, take a rubber spatula and scrape down the bottom and sides of the bowl once or twice to ensure all ingredients are thoroughly incorporated, preventing any pockets of dry flour or unmixed liquid.

Once your batter is perfectly mixed, prepare your muffin tin. Generously grease each cup of a standard 6-cup muffin tin. You can use butter, shortening, or a non-stick cooking spray. The thorough greasing helps the popovers release easily and contributes to their crispy exterior. During this time, resist the urge to open the oven door, especially in the first 20-25 minutes, as this can cause the popovers to deflate. Observe them through the oven window as they magically puff up, turn a beautiful golden-brown, and become firm to the touch. The high heat creates steam inside the batter, which rapidly expands, pushing the popovers upwards and creating their hollow, airy interior.

Note for a drier, crisper finish: If you prefer your popovers to have a drier, even crisper texture, you can adjust the baking time slightly. After baking for the initial 35 minutes, quickly and carefully remove the muffin tin from the oven. Using a small, sharp knife, make a tiny slit in the side of each popover. This allows any trapped steam to escape, which helps them dry out and become even crispier. Return them to the oven and bake for an additional 5 to 10 minutes, or until they reach your desired level of crispness and deep golden brown color. This extra step prevents them from becoming soggy and ensures a delightful crunch.

Once baked to perfection, serve your popovers immediately. They are best enjoyed fresh out of the oven, while still warm and wonderfully puffed. Admitting to a slight deviation from the specified directions (sometimes, a baker just has to follow their instincts!), I made the recommended slit not in the side, but rather quite directly in the top of each popover. I then returned them to the oven for just another 5 minutes, ensuring they achieved that lovely dry crispness without becoming overly dark.
The verdict from our dinner table was overwhelmingly positive! We thoroughly enjoyed these popovers and, after much deliberation, awarded them a commendable 3½ rolling pins on my personal rating system, where 4 is the absolute pinnacle of baking perfection. My husband, ever the discerning critic, noted that they didn’t possess a strong, standalone flavor profile, but that’s precisely their charm and purpose. Popovers are designed to be an elegant accompaniment to a meal, a supporting player that beautifully complements the main course rather than detracting from it with an overpowering taste. They provided the perfect canvas for the savory juices of the tri-tip roast. Even plain, they were remarkably tasty, offering a delicate, slightly eggy flavor and a wonderfully airy texture. However, when generously slathered with butter, they transformed into something truly sublime – the rich, creamy butter melting into the hollow interior, enhancing every bite with a luxuriousness that made them utterly delicious. They were a delightful discovery, and certainly a recipe I’ll be revisiting.
