Our two older daughters are currently away at college, leaving our 15-year-old son as the sole child at home. This new dynamic has created a precious opportunity for more one-on-one time with him and his dad, which has been a wonderful adjustment for us all.

A Family Affair: My Son’s French Toast Dilemma

One of the more interesting adjustments to our household dynamic has been cooking for a smaller crew of three. Fortunately, our teenage son is an active athlete, currently in the beginning of his track season, which means his appetite is on a rapid ascent. This allows me to happily pretend we’re still a family of four in the kitchen, churning out hearty meals.

Our son’s love for French Toast is legendary in our home. I often joke that if he were limited to only three foods for the rest of his life, his choices would undoubtedly be Chicken Piccata, Pasta, and French Toast. (Oh, and I always forget Tacos, which would make it four!) Knowing his deep affection for this breakfast classic, I decided to surprise him with a special version this morning.

When I announced my plans for Blackberry Baked French Toast for breakfast, I was met with a rather dramatic turn of his nose. The idea of adding blackberries to his sacred “plain ol’ French Toast” seemed to be an affront to his culinary sensibilities. Here I am, a passionate food blogger (even if only part-time now), and he’s giving me the evil eye, as if I haven’t a clue what I’m doing in the kitchen!

I gently reminded him that cereal was always an option if he truly couldn’t stand the idea of berries in his French toast. Needless to say, after the first bite, any reservations he had completely vanished. The plate was clean in record time, proving once again that a little culinary adventure can be a very good thing, even for the pickiest of eaters. His enthusiastic approval, even if begrudging at first, truly made my day.

Blackberry Baked French Toast

Ingredients

  • ½ loaf french bread, cut into one inch cubes
  • 6 oz. fresh blackberries, halved
  • 4 eggs
  • 1 cup milk
  • ¼ cup heavy cream
  • cup plus 1 tablespoon sugar (6 tablespoons total)
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ½ teaspoon cinnamon
  • teaspoon salt
  • ½ stick (4 tablespoons) cold unsalted butter, cut into small pieces

Instructions

  1. Lightly spray an 8×8-inch baking dish with cooking spray. In a large bowl, gently combine the cubed French bread and halved fresh blackberries. Evenly transfer the mixture into the prepared baking dish.
  2. In a separate medium bowl, whisk together the eggs, milk, heavy cream, sugar, and vanilla extract until well combined and smooth.
  3. Carefully pour the egg mixture evenly over the bread cubes and blackberries in the baking dish. Ensure all the bread is moistened. Cover the baking dish tightly with plastic wrap and refrigerate overnight, allowing the bread to fully soak up the custardy mixture.
  4. In another medium bowl, prepare the streusel topping: combine the all-purpose flour, light brown sugar, and cinnamon. Mix these dry ingredients thoroughly. Add the small pieces of cold butter and, using a pastry cutter or two forks, blend the butter into the flour mixture until it resembles coarse crumbs.
  5. Transfer the streusel mixture into a plastic bag, seal it, and refrigerate overnight alongside the French toast. Alternatively, you can prepare this topping in the morning just before baking.
  6. The next morning, preheat your oven to 350 degrees F (175 degrees C).
  7. Remove the plastic wrap from the baking dish. Evenly sprinkle the refrigerated streusel topping over the French toast and blackberries. Bake uncovered for 45-50 minutes. Baking for 45 minutes will yield a softer, more custardy result, while 50 minutes will create a slightly firmer texture with a crispier topping.
  8. Serve warm, optionally with a pat of butter and an extra drizzle of maple syrup, if desired. Enjoy!

The final result was truly exceptional, earning a solid 4 out of 4 rolling pins from my personal rating system! And yes, even my initially skeptical son absolutely loved it. *snicker, snicker* I always knew he would. When will that kid learn to trust his momma’s culinary instincts?

My camera battery, unfortunately, decided to give up just as I was trying to capture more mouth-watering photos of the finished product. By the time it was charged, breakfast was already a distant memory. Hmph!

I’m genuinely thrilled I decided to incorporate the blackberries. They added such a wonderful tartness and fresh flavor that elevated the dish significantly. While it would still be good plain, the berries truly make it something special. This is definitely a recipe that will be made again, and again, and again. I anticipate needing to make a larger 9×13-inch dish of it when our daughters return home for their next break. I also think it would be equally delicious with blueberries!
