Beyond traditional sandwiches, PB2 effortlessly integrates into various baked goods. What Ingredients Do I Need for This Peanut Butter and Jelly French Toast Casserole?
To prepare this delightful make-ahead French toast casserole, gather these key ingredients. The beauty of this recipe lies in its simplicity and the use of readily available items, ensuring a fuss-free cooking experience:
- PB2 Organic Powdered Peanut Butter: The star ingredient that delivers rich peanut butter flavor with less fat.
- Bread: A sturdy loaf of day-old French, Italian, sourdough, or Challah bread works best. Day-old bread absorbs the custard better without becoming soggy.
- Cream Cheese: Softened cream cheese adds a wonderful richness and creamy texture to the custard base.
- Eggs: Essential for the French toast custard, binding everything together and creating that classic eggy texture.
- Sugars: Granulated sugar for the custard and brown sugar for the irresistible crumb topping.
- Dairy: Milk and heavy cream combine to create a luscious, flavorful custard.
- Grape Jam (or preserves): Crucial for the “jelly” part of PB&J. Opt for jam or preserves as they contain fruit pieces, which will add texture and a more authentic flavor compared to jelly. Feel free to use your favorite fruit flavor!
- Pure Vanilla Extract: Enhances all the sweet flavors in the casserole.
- Oats: Quick or old-fashioned oats are used in the crumb topping for a delightful textural contrast.
- Spices: Cinnamon and nutmeg bring warmth and aromatic notes, complementing the peanut butter and jam.
- Salt: A pinch of salt balances the sweetness and brings out the other flavors.
- Butter: Chilled butter is vital for creating a perfectly crumbly topping.

How Do I Make This Baked French Toast Casserole Recipe: Step-by-Step!
Crafting this delightful Peanut Butter and Jelly Baked French Toast Casserole is surprisingly simple, especially since most of the work happens the night before. Follow these straightforward steps to prepare a breakfast that will impress with minimal morning effort:
- The night before, begin by lightly spraying an 8 X 8-inch baking dish with cooking spray to prevent sticking.
- Arrange half of your cubed bread evenly across the bottom of the prepared dish. This forms the first layer of your delicious casserole.
- In a separate medium mixing bowl, beat the softened cream cheese until it’s smooth and free of lumps. Then, incorporate the PB2 Organic Powdered Peanut Butter, granulated sugar, pure vanilla extract, and salt. Continue mixing on low speed as you gradually pour in the milk and heavy cream. Once those are well combined, add the eggs and mix thoroughly until the custard is smooth and uniform.
- Carefully pour half of this rich peanut butter batter over the bread cubes in the pan.
- Next, using a teaspoon, place 8 dollops of grape jam evenly over the batter and bread layer.
- Add the remaining bread cubes to the dish, then pour the rest of the batter evenly over them. Finish by placing the remaining jam in dollops on top of this final layer.
- Cover the baking dish tightly with plastic wrap and refrigerate it overnight, or for a minimum of 6-8 hours. This crucial step allows the bread to fully soak up the custard, resulting in a wonderfully moist and flavorful French toast.
- For the topping, which can also be prepared the night before, combine the oats, brown sugar, PB2 Organic Powdered Peanut Butter, cinnamon, nutmeg, and salt in a medium bowl. Using your fingers or a pastry cutter, blend in the chilled butter until the mixture resembles coarse crumbs. Transfer this topping mixture into a sealed plastic bag and refrigerate overnight. If preferred, you can also prepare the topping fresh in the morning before baking.
- In the morning, preheat your oven to 350°F (175°C). Remove the plastic wrap from the casserole dish.
- Evenly sprinkle the prepared crumb topping over the casserole. Bake for 45-50 minutes, or until the casserole is golden brown and set in the center. Serve warm, perhaps with a dusting of powdered sugar and a drizzle of maple syrup. Enjoy your effortless and delicious breakfast!
