Instructions

Preheat oven to 350° F (175° C) and spray a 9X5-inch loaf pan with cooking spray. Place a piece of parchment into the loaf pan so that it is long enough on both sides to lift the bread out of the pan. Doing this will keep the topping intact.

In a medium bowl, whisk together the flour, sugar, 1 3/4 teaspoons pumpkin spice, baking soda, and salt.

In a large bowl, beat the eggs with a fork. Add the pumpkin puree, butter, and milk. Mix until thoroughly combined.
