Blue Raspberry Cream Dream Bars make a perfect sweet treat for summer or a gender reveal party! Classic raspberry cheesecake bars are tinted blue with a creamy whipped topping and blue sprinkles in this easy, fun, no bake delicious dessert recipe.

Ingredients
- 8 ounces Cool Whip or 1 recipe of my Stabilized Whipped Cream (instructions to divide below)
Nilla Wafer Crust
- 1 ½ cups Nilla Wafer Cookie Crumbs (about 45 cookies)
- 5 tablespoons unsalted butter
Raspberry Cream Layer
- 3 ounce package blue raspberry jello
- ¾ cup boiling water
- ¾ cup cold water
- 8 ounces cream cheese (room temperature)
- 1 teaspoon raspberry extract
- 8 -10 drops blue food coloring
- 2 cups Cool Whip or Stabilized Whipped Cream
Cheesecake Layer
- 8 ounces cream cheese (room temperature)
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 cup Cool Whip
- Additional Cool Whip, my Stabilized Whipped Cream or can whipped cream for serving (if desired)
- Blue sugar for sprinkling (if desired, pictured and directions in recipe)
- Blue sprinkles or edible decorations (if desired)
Instructions
Nilla Wafer Crust
- Line an 8 x 8-inch baking pan with parchment, ensuring excess hangs over the sides for easy removal and slicing of the bars.
- In a medium bowl, melt the 5 tablespoons of butter in the microwave for approximately 30 seconds. Stir, and if necessary, microwave for another 5-10 seconds until fully melted.
- In a food processor, pulse the Nilla Wafers until they become fine, uniform crumbs. Add these cookie crumbs to the melted butter and mix thoroughly with a rubber spatula until all crumbs are well incorporated and moistened.
- Pour the mixture into the prepared baking pan and spread it evenly, pressing down firmly to create a compact crust. Place the pan into the freezer for a minimum of 30 minutes while you prepare the remaining layers of the recipe.
Blue Raspberry Gelatin
- Into a 2-cup measuring glass, combine the blue raspberry gelatin with ¾ cup of boiling water. Stir continuously until the gelatin is completely dissolved. Add the ¾ cup of cold water and stir again. Place the mixture into the refrigerator until it is completely cooled but not set, which typically takes about 10 minutes.
Blue Raspberry Cream Layer
- In a separate mixing bowl, beat 8 ounces of softened cream cheese with the raspberry extract (if using) and blue food coloring until the mixture is smooth and evenly colored.
- Slowly pour the chilled gelatin mix into the cream cheese mixture while continuously mixing everything together. Continue mixing until the entire mixture is completely smooth and uniform. Once smooth, place this mixture into the refrigerator to chill and thicken for one hour. *See Note below for important tips.
Cheesecake Layer
- In another mixing bowl, beat the remaining 8 ounces of room temperature cream cheese, the confectioners’ sugar, and vanilla extract together until the mixture is smooth and creamy. Using a rubber spatula, gently fold in one cup of Cool Whip until just combined.
- Place dollops of the cheesecake mixture onto the frozen crust. With an offset spatula or the back of a spoon, carefully spread it to form an even, smooth layer over the crust.
Blue Raspberry Layer Continued
- Using a rubber spatula, gently fold the remaining Cool Whip (approximately 2 cups) into the chilled blue raspberry cream mixture. Continue combining until the Cool Whip is evenly distributed and the mixture is smooth and airy.
- Carefully pour the blue raspberry cream mixture onto the cheesecake layer. Use an offset spatula to spread it evenly across the surface, creating the top layer.
- Place the entire pan into the refrigerator overnight, or for a minimum of 6 hours, to allow the bars to set completely. I have found that chilling overnight yields the best results and ensures firm, distinct layers.
- When you are ready to slice, remove the bars from the pan by lifting them out using the parchment paper overhang. For cleaner cuts, run a large knife under hot water, carefully dry it, and then slice through the bars. Repeat this process for each cut if desired, which will help create crisp, defined slices.
- Serve each bar with dollops of additional Cool Whip, homemade Stabilized Whipped Cream, or canned whipped cream, and top with blue sugar or sprinkles for a festive finish.
Blue Sugar (Optional Decoration)
- In a small bowl, combine 2 tablespoons of granulated sugar with 2 drops of blue food coloring. Mix thoroughly until the sugar is uniformly colored blue.
- Pour the colored sugar onto a folded paper towel and set it aside to dry completely. Sprinkle this vibrant blue sugar over the bars just before serving, if desired, for an extra decorative touch.
Notes
Please use the specific amounts of water provided in THIS recipe for mixing the raspberry gelatin. DO NOT use the amounts listed on the JELL-O box instructions. We are aiming for a more stable and concentrated gelatin layer. If the raspberry cream mixture is left in the refrigerator for more than one hour before combining with Cool Whip, the gelatin may begin to set and form small clumps. This is not necessarily an issue unless you desire a completely smooth and creamy top layer with absolutely NO blue gelatin specks. Additionally, the more slowly and gradually you pour the cooled gelatin into the cream cheese mixture, the more evenly it will incorporate without clumping.
