These easy Meringue Christmas Trees are a sweet treat the whole family will love. They’re dairy-free, gluten-free, and adorable, and perfect for parties or holiday cookie plates! Santa will love them!

Ingredients

  • 4 large egg whites (room temperature)
  • 1 cup sugar
  • A pinch of cream of tartar
  • ½ teaspoon pure vanilla extract
  • 1 teaspoon green food coloring
  • Golden star sprinkles
  • Assorted white and gold sprinkles
  • Colored nonpareils

Instructions

  1. Preheat oven to 175 degrees F. Line a large baking sheet with parchment paper. Meringues will not spread, so place them about 1-inch apart.
  2. Fill a medium saucepan with a couple of inches of water and bring it to a simmer over medium heat.
  3. In a heatproof mixing bowl, combine egg whites, sugar, and cream of tartar.
  4. Place the bowl over the saucepan and whisk constantly until all sugar is dissolved and egg whites are warm (approx. 3-4 minutes). Test by rubbing the solution between clean fingers; it should feel smooth.
  5. Remove the bowl from heat. Using a stand mixer with a whisk attachment (or electric mixer), beat on low speed, gradually increasing to high. Beat for 7-10 minutes until egg whites form stiff, glossy peaks. Add green food coloring and vanilla, mixing until well combined and scraping down the bowl sides.
  6. Place a Wilton open star tip 4B into a piping bag. Cut off the bag’s tip. To fill, fold the top of the bag over a tall glass and spoon in meringue, filling ⅔ – ¾ full.
  7. Pipe Christmas tree shapes onto the parchment-lined baking sheet, holding the piping bag at a 90-degree angle. You can squeeze to form a base, then pull up and squeeze smaller sections for the middle and top, or swirl for a similar effect. (The layered squeeze method yields more uniform trees as pictured).
  8. Place a gold star on top of each tree, and sprinkle with white and gold sugar and/or colored nonpareils.
  9. Bake for 2 hours without opening the oven door at any point.
  10. Turn oven off (again, without opening the oven door) and allow meringues to remain in the oven for another 4 hours or overnight to fully dry and cool. Before serving, dust with powdered sugar for a snowy appearance if desired.
  11. Store cooled meringues in an airtight container at room temperature for up to 4 days.

Notes

I found the layered squeeze method for piping the trees (creating three distinct sections by pulling up the piping bag) resulted in more uniform and tree-like shapes compared to the swirl method. All trees pictured in this post were made using the layered technique.

It’s very important to hold the piping bag at a 90° angle over the parchment to ensure the trees stand straight and don’t slump.

Aim for trees around 1 ¼ inches in height. Taller trees may struggle to stand upright after baking. For a beautiful snowy finish, I dusted some of the cooled meringues with powdered sugar using my OXO sugar duster.
