Get into the Halloween spirit with these Frankenstein Rice Krispie Treats! These easy cereal treats put a spooky twist on the classic treats with melted chocolate, icing and candy eyes and will be so much fun to serve at your Halloween party!
Yields: 9 pieces
Ingredients
- 10 ounces large marshmallows (can use mini marshmallows)
- 8 cups Rice Krispies cereal
- ¼ cup unsalted butter
- ½ cup marshmallow fluff
- 5-8 drops green food coloring (gel dye recommended)
- 1 cup dark chocolate chips
- 1 tablespoon vegetable oil
- 18 large candy eyes
- 9 small Tootsie Rolls
- ½ cup black or brown icing
Instructions
- In a large skillet, melt butter over medium heat. Once butter is melted, add marshmallows and marshmallow fluff to the skillet. Stir constantly over medium-high heat until they are completely melted and smooth.
- Add 5-8 drops of green food coloring. You can add more or less to achieve the desired color. Stir well until evenly colored.
- In a large bowl, quickly combine the melted green marshmallow mixture with the Rice Krispies cereal until very well mixed. The mixture will be thick and sticky, so work quickly as it will start to set as it cools. For easier mixing, you may lightly butter your hands.
- Press the Rice Krispy mix evenly into a 9×13 inch greased baking dish. Do not press too firmly.
- Place into the refrigerator for at least 15 minutes or until firm. Once firm, remove from the refrigerator and cut them into approximately 3 x 4-inch squares.
- In a small microwavable safe-bowl, combine the dark chocolate chips with vegetable oil and mix until all chocolate chips are well coated. Microwave for 30-second intervals, stirring between each, until the chocolate is melted and smooth. Do not overheat or mix with water, as this will cause the chocolate to seize and become chunky.
- Dip the top inch of each Rice Krispy treat into the melted chocolate for Frankenstein’s “hair,” then place them on a greased cooling rack or another non-stick surface. It may take a few minutes for the chocolate to become firm; you can put them in the refrigerator to speed up this process.
- Using your black or brown icing, make small dots on the treats where you want the eyes to be and stick the candy eyes to these dots. Use the same icing to add a mouth under the eyes.
- Cut your Tootsie Rolls in half (or into smaller pieces if preferred) and use a small dab of icing to stick them to the sides of your Frankenstein heads as “neck bolts.”
- Once the icing and chocolate have set, serve and enjoy your spooky creations!
