That wonderful Chocolate Crinkle Cookie filled with Andes mints!

There’s something inherently comforting about a classic chocolate crinkle cookie. That distinctively fudgy, chewy interior encased in a sweet, snowy exterior evokes warmth and nostalgia. But what if we told you this beloved classic could get even better? Introducing our Mint Chocolate Crinkles – a delightful twist on the traditional, infusing every bite with the refreshing zest of Andes mints. These aren’t just cookies; they’re a celebration of flavor, a marriage of rich chocolate and cool peppermint, designed to melt in your mouth and leave you craving more.

A Nostalgic Bake with a Fresh Minty Spin

Chocolate Crinkles have always held a special place in my heart, a cookie that truly defines childhood baking for me. Growing up, they were a staple in our home, often preferred over even the most popular chocolate chip varieties. There’s an undeniable charm to their cracked, powdered sugar coating that makes them visually irresistible, a promise of the soft, chocolatey goodness within. They weren’t just cookies; they were moments of joy, baked with love.

This particular recipe comes with an exciting story, born from our monthly “Cookie of the Month” challenge. Every month, a group of wonderful bloggers and I come together to bake using a specific ingredient. It’s a fantastic way to stretch our culinary creativity and discover new flavor combinations. For March, the ingredient spotlight was on mint! Naturally, my mind immediately went to the perfect pairing: chocolate and mint. And what better way to honor a classic than by giving it a vibrant, minty makeover?

The combination of rich chocolate and cool, invigorating mint is a timeless classic for a reason. It’s a flavor profile that evokes holiday cheer, refreshing after-dinner treats, and pure indulgence. By incorporating chopped Andes Creme De Menthe Thins into the heart of our beloved chocolate crinkles, we’ve created a cookie that pays homage to tradition while offering an exciting, refreshing experience. The subtle hint of mint, perfectly balanced with the deep cocoa notes, transforms these cookies into something truly extraordinary.

Prep time: 15 minutes

Chill time: 2 hours

Cook time: 12 minutes

Yield: Approximately 36 cookies

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder (for a deep chocolate flavor)
  • 1 teaspoon baking powder
  • ½ teaspoon Kosher salt (to balance sweetness)
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup mini semi-sweet chocolate chips
  • 40 Andes Creme De Menthe Thins, finely chopped (plus extra for topping)
  • ½ cup confectioners’ sugar (for rolling)

Instructions

  1. In a large mixing bowl, thoroughly whisk together the dry ingredients: flour, granulated sugar, cocoa powder, baking powder, and Kosher salt. Ensure there are no lumps and everything is well combined.
  2. In a separate small bowl, lightly beat the two large eggs. Stir in the pure vanilla extract until combined.
  3. Gradually pour the egg mixture and the melted butter into the bowl with the dry ingredients. Mix everything together until a thick, uniform dough forms. Be careful not to overmix; just combine until no dry streaks remain.
  4. Fold in the mini semi-sweet chocolate chips and the finely chopped Andes mint candies. Distribute them evenly throughout the dough.
  5. Cover the bowl tightly with plastic wrap and refrigerate the dough for at least two hours. This chilling step is crucial for the dough to firm up, making it easier to handle and ensuring the cookies hold their shape and develop the characteristic crinkles.
  6. Preheat your oven to 325 degrees F (160 degrees C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  7. Pour the ½ cup of confectioners’ sugar into a shallow bowl, preparing it for coating the cookie dough balls.
  8. Using a flat tablespoon or a small cookie scoop, portion out the chilled dough. Roll each portion into a smooth ball between your palms.
  9. Immediately roll each dough ball generously in the confectioners’ sugar, ensuring it’s completely covered. The more sugar, the more pronounced the crinkles will be. Your hands might get a bit sticky as the dough warms up, so try to work quickly.
  10. Place the coated dough balls onto the prepared baking sheet, leaving about 1 inch of space between each cookie to allow for spreading.
  11. Bake for 12 minutes. The cookies will puff up and develop their characteristic crinkled tops. Do not overbake, as they will continue to set as they cool.
  12. Allow the cookies to cool on the baking sheet for 5 minutes. While still warm, gently make a slight indentation in the top of each cookie. Into this indentation, sprinkle a few extra pieces of the remaining chopped Andes candies. This adds a fresh burst of mint and a beautiful visual touch.
  13. After 5 minutes, transfer the cookies to a wire rack to cool completely. Enjoy these decadent mint chocolate crinkles!

Tips for Crinkle Cookie Perfection

Achieving those perfectly crinkled, soft, and minty cookies is a rewarding experience. Here are some pro tips to ensure your Mint Chocolate Crinkles turn out flawlessly every time:

  • **Don’t Skimp on the Chill Time:** The two-hour refrigeration period is non-negotiable. Chilling the dough helps firm up the butter and chocolate, making the dough much easier to handle. More importantly, it prevents the cookies from spreading too much in the oven and helps to create those distinct crinkles when the sugar coating expands and cracks.
  • **Roll Generously in Confectioners’ Sugar:** For the best crinkle effect, be liberal with the powdered sugar coating. The dough balls should be completely coated, almost like little snowballs. This thick layer is what will crack and create the beautiful crinkled pattern during baking. If the coating is too thin, the crinkles might not be as prominent.
  • **Handle Dough Quickly:** As you roll the dough balls, your hands will warm them up, potentially making them sticky. Work quickly to roll the dough and coat it in sugar to maintain its chilled state as much as possible. If the dough becomes too soft, pop it back into the fridge for 10-15 minutes.
  • **Monitor Baking Time Closely:** Crinkle cookies are best when slightly underbaked, resulting in a fudgy, chewy center. Bake for exactly 12 minutes. The edges should be set, but the centers might still look a little soft. They will firm up as they cool. Overbaking can lead to dry, crumbly cookies.
  • **The Andes Melt is Expected (and Delicious!):** Don’t be disappointed if the Andes candies melt into the cookies. This is normal and actually infuses the entire cookie with a wonderful, subtle mint flavor. The extra chopped candies sprinkled on top after baking provide a fresh burst of mint and texture. You can even melt a few extra Andes mints and drizzle them over the cooled cookies for an extra layer of minty chocolate goodness.
  • **Consider Cookie Size:** For a more substantial cookie, like I prefer, use two tablespoonfuls of dough per cookie instead of one. Adjust baking time by a minute or two if making larger cookies.

Flavor Variations and Serving Suggestions

While these Mint Chocolate Crinkles are stellar as is, don’t hesitate to experiment with variations to suit your taste or occasion:

  • **Extract Power:** If you want an even more intense mint flavor, you can add ¼ to ½ teaspoon of pure peppermint extract to the wet ingredients. However, be cautious, as mint extracts can be very strong. The Andes mints provide a great balance without additional extract.
  • **Different Chocolates:** Try using white chocolate chips alongside or instead of semi-sweet for a different flavor profile.
  • **Holiday Flair:** For seasonal variations, consider adding a pinch of ground cinnamon or a touch of almond extract for different twists.
  • **Garnish Galore:** Beyond the chopped Andes mints, a drizzle of melted white chocolate or a dusting of extra cocoa powder can add an elegant touch.

These cookies are best enjoyed freshly baked, perhaps slightly warm from the oven, paired with a cold glass of milk, a hot cup of coffee, or a rich espresso. They also make a fantastic addition to any dessert platter, especially during the holidays or for a special gathering. Store any leftover cookies in an airtight container at room temperature for up to 3-4 days to maintain their freshness and chewy texture.
