The Secret to Extra Crispy Smashed Loaded Potatoes

Achieving that coveted extra crispy exterior while maintaining a tender, fluffy interior is key to perfect smashed potatoes. The magic begins with a pre-boil. By simmering the potatoes until they are fork-tender, you ensure they’re easily smashable and cook more evenly in the oven. This initial boiling step softens the potato flesh, preparing it for the glorious crisping process that follows.

When you first smash the boiled potatoes, don’t worry if they seem to “fall apart” a little. This is actually a good sign! It means you’re creating plenty of rough edges and surface area, which are crucial for developing that delightful crispiness. The goal is to flatten them to about a half-inch thick, exposing as much of the potato as possible to the high oven heat.

As these humble potatoes bake with their flavorful toppings, the exposed skins and starchy interiors transform. The high temperature of the oven works wonders, turning those soft edges into golden, crunchy perfection. The melted cheese not only adds incredible flavor and richness but also helps to bind the smashed pieces together, creating perfectly delicious, irregular little piles of potato goodness. They might not be uniform in shape, but their rustic appearance only adds to their charm, and their taste is nothing short of amazing!

Essential Ingredients for Loaded Smashed Potatoes

The beauty of these loaded smashed potatoes lies in their simple yet powerful ingredient list. Each component plays a vital role in creating the ultimate flavor and texture profile. Here’s a closer look at what you’ll need to gather:

  • Small Red Potatoes: These are the stars of the show! Small red potatoes are ideal because their skins are thin, which contributes to a fantastic crispy texture without being tough. Their waxy texture also holds up well to boiling and smashing. Avoid larger potatoes, as they take longer to cook and are much harder to smash evenly.
  • Olive Oil: Essential for coating the potatoes before baking, promoting that beautiful golden-brown crisp and adding a subtle fruity note.
  • Salt & Freshly Ground Black Pepper: Basic seasonings that are foundational to any great potato dish. Don’t be shy with the salt during boiling; it infuses flavor into the potatoes from the inside out.
  • Unsalted Butter: Melted butter forms the base of our savory seasoning mixture, adding richness and helping the spices adhere to the potatoes.
  • Minced Garlic: Aromatic and pungent, fresh minced garlic infuses the potatoes with a warm, savory depth that is truly irresistible.
  • Old Bay Seasoning: This secret weapon is a game-changer! Old Bay adds a unique, zesty, and slightly spicy flavor profile that complements potatoes perfectly, making them incredibly addictive.
  • Chopped Green Onions: These provide a fresh, mild oniony bite and a vibrant green color, offering a refreshing contrast to the rich toppings.
  • Monterey Jack/Colby Cheese: A blend of these two cheeses offers excellent meltability and a mild, creamy flavor that perfectly blankets the potatoes. Freshly grated cheese melts more smoothly and tastes better than pre-shredded varieties.
  • Cooked and Crumbled Bacon: The ultimate “loaded” topping! Crispy, salty bacon bits add a smoky, meaty crunch that ties all the flavors together. For best results, cook your bacon until extra crispy before crumbling.

How to Make Extra Crispy Loaded Smashed Potatoes

Creating these sensational loaded smashed potatoes is a straightforward process, but paying attention to each step ensures maximum crispiness and flavor. Follow these detailed instructions for a perfect batch every time:

  1. Prepare Your Workspace: Begin by thoroughly rinsing and gently scrubbing your small red potatoes under cold running water to remove any dirt. Preheat your oven to a blazing 500°F (260°C). This high heat is crucial for achieving that superior crisp. Prepare a large, rimmed baking sheet by generously spraying it with cooking spray to prevent sticking.
  2. Boil the Potatoes to Perfection: Fill a medium or large pot with enough water to cover your potatoes. Add a generous two tablespoons of Kosher salt to the water – this seasons the potatoes from the inside. Bring the water to a rolling boil, then add the scrubbed potatoes. Boil for approximately 15 minutes, or until the potatoes are fork-tender. You should be able to easily pierce them with a fork, but they shouldn’t be mushy.
  3. Craft Your Flavorful Seasoning Butter: While the potatoes are boiling, prepare the aromatic butter mixture. In a small, microwave-safe bowl, melt the unsalted butter. Stir in the minced garlic, Old Bay seasoning, and ¼ teaspoon of freshly ground black pepper. Mix thoroughly until all ingredients are well combined. This is where a significant part of your potato’s flavor comes from!
  4. Drain and Dry the Potatoes: Once tender, carefully drain the boiled potatoes. It’s crucial to pat them as dry as possible using paper towels. Excess moisture is the enemy of crispiness, as it will steam rather than crisp in the oven.
  5. Season and Smash: In a large mixing bowl, pour in the 3 tablespoons of olive oil. Add salt and pepper to taste – remember, the potatoes were already seasoned during boiling, so adjust accordingly. Gently add the dried potatoes to the bowl and toss them carefully to ensure they are evenly coated with the olive oil. Now, transfer the coated potatoes to your prepared rimmed baking sheet, leaving some space between each one. Using a heavy-bottomed glass, a sturdy mug, or a potato masher, flatten each potato until it’s about ½-inch thick. Don’t worry if they crack or break; those irregular edges are prime spots for crisping! Using a pastry brush, liberally brush each smashed potato with the prepared butter and seasoning mixture.
  6. Initial Bake for Crispiness: Place the baking sheet into the preheated 500°F oven. Bake for an initial 5 to 7 minutes. This short burst of high heat starts the crisping process beautifully.
  7. Load Up the Toppings: After the initial bake, carefully remove the baking sheet from the oven. Sprinkle one tablespoon of the chopped green onions evenly over the potatoes. Next, distribute half of your cooked and crumbled bacon among the potatoes. Finally, place an equal amount of freshly grated Monterey Jack/Colby cheese on top of each potato. For that extra touch of freshness and crunch, sprinkle the remaining green onions and bacon over everything.
  8. Final Bake for Melty Goodness: Return the baking sheet to the oven and bake for another 5 to 7 minutes, or until the cheese is beautifully melted and bubbly, and the edges of the potatoes are deeply golden and crispy.
  9. Serve Immediately and Enjoy! These loaded smashed potatoes are best enjoyed hot and fresh from the oven, when their crispiness is at its peak.

Recipe Variations & Serving Suggestions

One of the best things about these loaded smashed potatoes is how adaptable they are. While the classic loaded version is incredibly delicious, feel free to get creative with toppings and cooking methods to suit your taste or what you have on hand.

  • Endless Topping Possibilities:
    • Creamy Delights: A dollop of sour cream or Greek yogurt can add a wonderful tangy creaminess.
    • Spicy Kick: A sprinkle of red pepper flakes or a drizzle of sriracha ranch will awaken your palate.
    • Herbaceous Freshness: Freshly chopped chives, parsley, or dill can add another layer of flavor and color.
    • Vegetable Boost: Sautéed mushrooms, caramelized onions, or even finely diced bell peppers can be added with the cheese.
    • Protein Power: Leftover shredded chicken or pulled pork can turn this side into a more substantial appetizer or light meal.
    • Cheese Swaps: Experiment with different cheeses like sharp cheddar, Gruyere, or a smoky provolone for varied flavors.
  • Griddle Cooking Method (Blackstone Inspired): For a different kind of crisp, you can make these on a griddle!
    • Preheat your griddle (like a Blackstone) to medium-high heat.
    • Boil and drain your potatoes as instructed.
    • Toss the potatoes with olive oil, salt, and pepper.
    • Place the potatoes directly on the hot griddle and smash them flat.
    • Brush them with the garlic-butter-Old Bay mixture.
    • Cook for 5-6 minutes until golden and crispy on one side.
    • Flip the potatoes, cook for another 5-6 minutes, then add your cheese, bacon, and green onions.
    • Cover with a dome (if you have one) for a few minutes to help the cheese melt. Serve immediately.

Perfect Pairings: Loaded Smashed Potatoes are versatile enough to complement a wide range of main dishes. They are fantastic with grilled steak, roasted chicken, pan-seared pork chops, or even a simple burger. For a vegetarian option, serve them alongside a hearty lentil loaf or a vibrant seasonal salad. They also make a superb appetizer for game day or any casual get-together!

Expert Tips for Smashed Potato Success

While the recipe is straightforward, a few expert tips can ensure your loaded smashed potatoes turn out perfectly crispy and delicious every time:

  • Choose the Right Potatoes: As mentioned, small, waxy potatoes like red potatoes or Yukon golds are best. Their skins crisp up beautifully, and their flesh remains creamy. Avoid starchy russets, which tend to fall apart too much when smashed.
  • Season Your Boiling Water: Don’t skip the salt in the boiling water. This is your first opportunity to infuse flavor into the potatoes from the inside out. They will absorb the salt, making them taste much better than just adding salt at the end.
  • Don’t Overcrowd the Pan: Give your smashed potatoes plenty of space on the baking sheet. If they are too close together, they will steam instead of roast, leading to soggy rather than crispy results. Use two baking sheets if necessary.
  • High Heat is Your Friend: The 500°F oven temperature is intentional. It creates an intensely hot environment that quickly crisps the exterior of the potatoes. Don’t be tempted to lower the temperature unless your oven runs exceptionally hot.
  • Pat Them VERY Dry: After boiling, ensure your potatoes are as dry as possible before tossing with oil and smashing. Any residual moisture will hinder the crisping process.
  • Don’t Be Afraid to Smash Hard: The goal is to maximize surface area. Smashing them flat (around ½-inch thick) creates all those wonderful irregular edges that turn crispy in the oven. A heavy mug or the bottom of a glass works perfectly.
  • Freshly Grated Cheese: While pre-shredded cheese is convenient, it often contains anti-caking agents that prevent it from melting as smoothly. Freshly grated Monterey Jack or Colby will melt into a beautifully gooey topping.
  • Pre-Cook Bacon Until Crispy: Ensure your bacon is cooked to your desired level of crispiness before crumbling and adding it. It won’t get much crispier in the short final bake time.

FAQs About Loaded Smashed Potatoes

Got questions about making these delicious potatoes? Here are answers to some common inquiries:

Can I use another type of potato to make Loaded Smashed Potatoes?

Absolutely! While small red potatoes are recommended for their thin skin and waxy texture, you can certainly use other small, waxy varieties. Baby Yukon gold potatoes are another excellent choice, offering a slightly creamier texture and a beautiful golden color when roasted. The key is to select smaller potatoes (about 1.5 to 2 inches in diameter) as they cook faster and smash more easily and uniformly.

How many does this recipe serve?

This recipe is designed to yield approximately 6 generous servings, making it perfect for a family meal or a small gathering. However, serving sizes can always be adjusted based on appetite or if these are being served as a main dish versus a side. Feel free to scale the ingredients up or down if you need to feed a larger crowd or just a couple of people.

How do I store leftover Smashed Potatoes?

If you happen to have any leftovers (which is rare!), store them in an airtight container in the refrigerator for up to 3-4 days. For reheating, the best method to regain some crispiness is to warm them in a preheated oven or air fryer at around 375°F (190°C) for 10-15 minutes, or until heated through and re-crisped. The microwave can be used for convenience, but the potatoes may lose some of their crispy texture.

Can I prepare smashed potatoes ahead of time?

While best served fresh, you can do some prep work in advance. You can boil and smash the potatoes a day ahead. After smashing, let them cool completely, then store them in a single layer in an airtight container in the fridge. When ready to bake, proceed with adding the oil, seasoning butter, and baking as instructed, allowing a few extra minutes in the oven since they are starting cold. Add toppings during the last 10-15 minutes of baking.

Can I make these vegetarian?

Absolutely! Simply omit the bacon. You can replace the bacon with other savory toppings like crispy fried onions, toasted breadcrumbs, or even a sprinkle of smoked paprika for a smoky flavor. Roasted vegetables like bell peppers or zucchini would also be a delicious addition.
