Caprese Pasta Recipe

This incredibly easy Caprese pasta is a delightful and quick meal, perfect for any busy weeknight. Combining fresh mozzarella, juicy tomatoes, and aromatic basil with your favorite pasta, it’s a dish that’s sure to please everyone.

Ingredients

  • 1 lb. pasta (penne, fusilli, or farfalle work well)
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 lb. fresh mozzarella, diced (small balls like bocconcini or ciliegine are ideal)
  • 2 cloves garlic, minced
  • 2 (14.5 ounce) cans diced tomatoes, seasoned with garlic and basil, undrained
  • 2 teaspoons dried basil (or a generous handful of fresh basil, chopped)

Instructions

  1. Cook pasta according to package directions until al dente. While the pasta cooks, prepare your other ingredients.
  2. In a large bowl, combine the diced fresh mozzarella and chopped fresh basil (if using). Set aside.
  3. Once the pasta is cooked, drain it well. In a medium to large pot (the same one you cooked the pasta in, or a separate one if preferred), heat the 2 tablespoons of olive oil over medium heat.
  4. Add the minced garlic to the hot oil and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
  5. Pour in both cans of undrained diced tomatoes (the ones seasoned with garlic and basil are best for flavor). Bring the mixture to a low simmer.
  6. Add the drained pasta to the pot with the tomato mixture and toss to combine, ensuring the pasta is well coated and heated through. Cook for an additional 1-2 minutes to allow the flavors to meld and the pasta to absorb some of the sauce.
  7. Remove the pasta from the heat. Immediately pour the hot pasta and sauce into the large bowl with the mozzarella and basil. Toss gently to combine. The heat from the pasta will slightly melt the mozzarella, creating a wonderfully creamy texture and releasing the aroma of the fresh basil.
