  • 1 head of cauliflower, broken down into florets
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • ¼ teaspoon salt

  • ¼ cup freshly grated Parmesan cheese
  • ½ cup shredded Gruyere cheese
  • ½ cup shredded Colby/Cheddar cheese
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons butter, melted
  • ½ cup seasoned Panko bread crumbs

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C), and prepare a 1-quart baking dish with cooking spray.
  2. Cook cauliflower florets in a pot of salted, boiling water for 5-6 minutes until tender-crisp.
  3. Drain the cauliflower thoroughly and place into the prepared baking dish. Season with a pinch of salt and ground pepper.
  4. To prepare the cheese sauce, melt 2 tablespoons of butter in a medium saucepan over medium-high heat. Whisk in the flour to create a light roux.
  5. Gradually add the milk, whisking continuously to ensure the roux blends in completely and no lumps form. Continue cooking and whisking until the sauce thickens to your desired consistency. Be careful not to boil. Season with salt and pepper to taste.
  6. Stir in the Gruyere and Parmesan cheeses. Continue stirring with a wooden spoon until all the cheeses are fully melted and the sauce is smooth and creamy. Mix in the Worcestershire sauce. Pour this rich cheese sauce evenly over the cooked cauliflower in the baking dish.
