Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced (about 2 cups)
  • 4 cloves garlic, minced
  • 16 ounces sweet Italian Sausage
  • 4 cups low sodium chicken broth
  • 15 ounces tomato sauce
  • 1 pound linguine
  • 10.5 ounces cherry tomatoes
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (or more to taste)
  • 1 ½ cups chopped fresh spinach
  • ½ cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, then sauté until fragrant, which usually takes about 2-3 minutes.
  2. Add the sweet Italian sausage to the pot, breaking it apart with a spoon as it cooks. Continue to cook until the sausage is completely browned, draining any excess grease if necessary.
  3. Increase the heat to high. Pour in the chicken broth and tomato sauce. Add the linguine, cherry tomatoes, Italian seasoning, and crushed red pepper flakes. Stir everything well to combine. Bring the mixture to a rolling boil.
  4. Boil the pasta uncovered for approximately 8 minutes. Use tongs to periodically rotate and stir the linguine to ensure it cooks evenly and doesn’t stick together.
  5. After 8 minutes, add the fresh spinach and chopped basil to the pot. Continue to cook for an additional two minutes, or until the liquid has almost completely evaporated and the pasta is al dente. Taste and season with salt and pepper as needed.
