June 16th Bulletin

A heartfelt belated Happy Father’s Day to all the incredible dads out there! I sincerely hope your day was filled with joy, surrounded by loved ones, and celebrated with an abundance of delicious food. As we cherish these moments of togetherness and good eating, it’s increasingly important to discuss a growing trend that impacts our culinary experiences online.

The Rise of AI in Food Media: A Warning for Home Cooks

If you’re an active participant in online recipe communities, particularly on platforms like Facebook, Pinterest, or Instagram, chances are you’ve recently encountered a surge of captivating, albeit often unreal, food imagery. These aren’t the genuine creations of dedicated home cooks or professional chefs; they are sophisticated AI-generated photos, designed to grab attention and often paired with deeply flawed or entirely inaccurate recipes.

As fellow food enthusiasts and recipe developers, we, along with other legitimate bloggers, are committed to sharing only thoroughly tested and proven recipes. We stand united against the proliferation of these deceptive AI food photos and the unreliable instructions that frequently accompany them. This isn’t just about food; similar AI-generated content is also appearing in gardening and nature photography, blurring the lines of digital reality across various interests. Even a simple Google search now often prioritizes AI-synthesized answers, making it harder to discern authentic sources.

Protecting Your Time, Ingredients, and Culinary Joy

It is crucial that you become highly discerning and cautious about the food images you see and the recipes you choose to follow online. We’ve observed concerning patterns, including instances where individuals exploit these AI images to scam unsuspecting users, particularly women over 50 who frequently seek recipes on platforms like Facebook. These perpetrators aim to lure you with visually stunning, yet largely unattainable, food photos. The recipes provided are often incomplete, wildly inaccurate, or simply unworkable. While they might look mouth-watering and deceptively simple, attempting them will likely result in wasted ingredients, precious time, and ultimately, a disappointing culinary outcome.

Every recipe I share with you has been meticulously tested and refined in my own kitchen. You can rest assured that I will never present AI-generated images as my own creations. If you happen to encounter any AI-fabricated recipe images falsely attributed to “365 Days of Baking and More,” I urge you to report them immediately to the respective social media platform. These deceptive images are not confined to Facebook; they’re now appearing on Pinterest and Instagram as well. Just yesterday, I spotted an AI rendition of my beloved Red Velvet Cherry Dream Bars on Instagram.

Photo by saida.moh.52 on Instagram (An example of an AI-generated image).

The recipe shared alongside that particular Instagram photo bizarrely instructed that the cake layer should form the bottom crust, despite the visual clearly showing it nestled within the dessert. This blatant inconsistency is a classic hallmark of AI-generated content, which often fails to grasp the logical steps or physical realities of cooking and baking.

Distinguishing Real from AI: Visual Cues to Look For

To help you identify these digital deceptions, here’s a crucial tip: examine the image closely for tell-tale signs of AI manipulation. Look for distorted body parts – hands, fingers, or even faces might appear unnatural, bent, or in impossible positions. For instance, in the image below, observe the woman’s hands:

This is what my authentic Red Velvet Cherry Dream Bars truly look like:

In the following AI-generated example, what immediately stands out about the woman’s hands? She’s holding a spoon in her right hand, but her left hand is positioned on her left arm in a physically impossible way. Such anomalies are strong indicators of AI creation.

In food photography, utensils might appear bent, warped, or oddly shaped. The food itself may not resemble what it’s supposed to be, exhibiting unusual textures, impossible structures, or an unnatural sheen. Consider this “Turtle Cake” example:

For this “Turtle Cake” below, the cookies are supposedly Oreos, but a closer look reveals misspelled words on several of them. Furthermore, some cookies are distinctly misshapen, deviating from the uniform appearance of actual Oreos. These subtle but significant flaws are often overlooked by AI and can be a dead giveaway.

The frustrating reality is that, as seen in the copied post above, these fake pictures are being shared thousands of times, garnering immense likes and comments. This virality is disheartening, especially knowing that these individuals are not investing the effort to create, test, and refine their own recipes. Instead, they are directly stealing the intellectual property and hard work that genuine content creators, like myself, dedicate to helping you save time and feed your families with confidence.

To be frank, it’s incredibly frustrating and frankly, quite infuriating to witness this blatant exploitation. I strongly oppose those who seek to take advantage of others for personal gain. I highly recommend taking a moment to hear what Rachel Farnsworth of The Stay at Home Chef has to say on this matter, particularly her insights into the activities of individuals like Jesse Cunningham who are actively scamming people. Please take a moment to watch this informative video. It’s vital to be fully aware of where you source your recipes and which online communities and sites you choose to trust and follow.

I will continue to share more examples of AI-generated photos in next week’s newsletter to further equip you with the knowledge to navigate this evolving digital landscape.

Kitchen Wisdom: Tip of the Week for Perfect Shrimp

Are you tired of rubbery, tough, and easily overcooked shrimp? Employ this simple yet revolutionary tip to consistently achieve plump, tender shrimp that are surprisingly resistant to overcooking. Here’s how: Toss 1 pound of raw shrimp with just 1/4 teaspoon of baking soda, then refrigerate for 15 minutes. Afterward, proceed to cook the shrimp as directed in your chosen recipe. The baking soda effectively raises the pH level of the shrimp, which prevents the meat proteins from clenching together too tightly and significantly reduces moisture loss, resulting in that desirable tender texture.
