The world is filled with awe-inspiring beauty, isn’t it? No matter where you reside, there are moments of natural splendor waiting to be discovered. Last month, my husband, Kurt, and I embarked on an extraordinary Alaska cruise with Princess Cruises. Honestly, I never in my wildest dreams imagined I’d visit Alaska! Hailing from Rhode Island, one of the smallest states on the East Coast, Alaska felt like a distant, almost mythical land.

Growing up, my understanding of Alaska was limited to a childhood friend who had moved to Rhode Island from there. I knew it was the largest state in the Union, but it wasn’t until I googled it recently that I grasped the sheer scale: Rhode Island could fit into Alaska over 425 times! It’s truly astonishing. In 2002, Kurt and I moved our family from Rhode Island to Arizona, bringing us geographically a bit closer to the Last Frontier. Over the years, we’ve spotted Alaskan license plates, met many Alaskans, and watched numerous TV shows set in this rugged state. While I’d seen countless beautiful pictures, nothing prepared me for the incredible reality of seeing Alaska in person.
I anticipated abundant trees, towering mountains (and I mean *really* big mountains), and plenty of snow. However, the scenery on our Princess Alaska cruise was utterly breathtaking. Kurt and I were constantly amazed, embracing every minute of the crisp, chilly temperatures and the vibrant, lush green foliage. As desert dwellers now, we especially appreciate such verdant views and unique experiences. It was a stark and beautiful contrast to our daily lives in Phoenix, where natural ice is a rarity outside of our freezers!

The Majestic Voyage of the Glaciers: An Alaska Cruise Highlight
Our unforgettable journey with Princess Cruises was the 7-Day Voyage of the Glaciers. Departing from Vancouver, British Columbia, we sailed majestically up the coast of Canada, making stops at various captivating destinations before concluding our adventure in Whittier, Alaska. This trip was packed with incredible moments, which I’ll delve into in upcoming posts, but I must share one of the absolute highlights for both Kurt and me: witnessing the glaciers up close and personal. It was an incredibly cool experience, especially getting to see them “calving.” This phenomenon occurs when massive chunks of ice break off from the glacier and crash into the water due to the glacier’s natural forward motion. I had eagerly hoped to witness this, and we did! Though I wasn’t quick enough with my camera to capture the exact moment, the memory is etched forever in my mind.

An Alaska cruise offers an unparalleled array of activities and sights. You certainly won’t find yourself bored, and trust me, you will eat exceptionally well! Oh, the food aboard a Princess cruise is an experience in itself. Everything you savor is incredibly fresh. The bread is baked continuously, 24/7. All the exquisite sauces are crafted from scratch using only the finest ingredients. Steaks are aged and hand-cut directly on board. And for a sweet finish, they make homemade ice cream every single day – a luxury I rarely even manage at home!
Beyond the ship’s gourmet offerings, each port provides opportunities to explore fantastic local restaurants. We indulged in fresh, local seafood unlike anything I’ve ever tasted before, a topic I’ll also be highlighting in an upcoming feature. Among the many dining options on the ship, the Horizon Court buffet was a particular favorite. They serve a wide variety of cuisines throughout the day, always in a delightful buffet style. It was here, during our morning visits to the buffet, that I first fell in love with Chocolate Bear Claws. They felt like such a fitting pastry, especially with the exciting chance of spotting actual bears during our Alaskan adventure!
Effortless Indulgence: Crafting Your Own Chocolate Bear Claws
These pastries are not only incredibly delicious but also surprisingly simple to make, making them a fantastic weekend breakfast or brunch project. Just one bite, and I’m instantly transported back to the crisp Alaskan air and the cherished memories of our Princess cruise. The combination of flaky puff pastry, rich chocolate chips, and a sweet almond topping is pure bliss.

Expert Tips for Perfect Chocolate Bear Claws Every Time
- **Thawing the Pastry Dough:** Patience is key here. Ensure your puff pastry is fully thawed but still cold enough to work with, typically no more than 40 minutes at room temperature. Don’t rush this step, as frozen dough won’t roll out properly, and overly warm dough can become sticky and hard to handle. Your oven should be preheated and ready to go once the dough is thawed.
- **Easy Transfer:** To avoid any sticky situations, I find it easiest to roll out the dough directly on a piece of parchment paper. Once shaped and filled, you can simply slide the entire parchment paper with the pastries onto your baking sheet. If you’re not using parchment for rolling, a large, thin spatula can assist in transferring them carefully.
- **Chocolate Choice:** I prefer semi-sweet chocolate chips for their balanced flavor and perfect sweetness, which complements the buttery pastry beautifully. However, feel free to customize! Dark chocolate chips will offer a richer, more intense flavor, while milk chocolate chips will make for a sweeter, creamier treat.

Chocolate Bear Claws Recipe

Make breakfast extra special with these Easy Chocolate Bear Claws. Using store-bought puff pastry and chocolate chips, they’re not just for breakfast; they’re perfect with your afternoon tea or coffee, too!
Ingredients
- 1 sheet puff pastry, thawed
- ½ cup semi-sweet chocolate chips
- 1 large egg
- 1 tablespoon water
- ⅓ cup sliced almonds
- Powdered sugar, for dusting
Instructions
- Thaw the pastry dough for no longer than 40 minutes at room temperature. While the dough thaws, preheat your oven to 400° F (200° C). Prepare a baking sheet by lining it with parchment paper.
- Place a piece of parchment paper on your work surface. Unfold the thawed pastry dough and gently roll it into a 10 x 10-inch square. Using a sharp knife or pastry wheel, cut the large square into four equal 5-inch squares.
- Spoon approximately 2 tablespoons of the semi-sweet chocolate chips into the center of one of the 5-inch dough squares, ensuring they are about 1/2-inch away from all edges.
- In a small bowl, whisk the large egg with the 1 tablespoon of water to create an egg wash. Lightly brush the top and bottom edges of the dough square (around the chocolate filling) with this egg wash.
- Carefully fold one side of the dough over the chocolate chips to meet the opposite side, forming a rectangle. Gently press the wet edges together to seal the pastry, enclosing the chocolate filling.
- To create the characteristic “bear claw” shape, use a knife to make 5 small, even slices along the folded edge of the pastry, extending about halfway into the dough. Gently curve the pastry slightly to mimic a claw.
- Repeat steps 3 through 6 with the remaining three dough squares. Carefully transfer all four shaped pastries to the prepared baking sheet.
- Brush the tops of each bear claw pastry generously with the remaining egg wash. Sprinkle a good amount of sliced almonds over the top of each pastry, placing one sliced almond on each “toe” for a classic look and extra crunch.
- Bake the Chocolate Bear Claws in the preheated oven for 20-25 minutes, or until they are beautifully golden brown and have puffed up significantly.
- Once baked, remove the bear claws from the oven and allow them to cool slightly on the baking sheet before transferring to a wire rack. Just before serving, dust them liberally with powdered sugar. Enjoy warm or at room temperature.
