  • Butter
  • 2 8-inch tortillas
  • 2 cups shredded Mexican cheese blend (divided)
  • 1 cup cooked shredded chicken (divided)
  • 1 Roma tomato (diced small and divided)
  • 2 green onions (divided)

Instructions

  1. Lightly butter one side of each tortilla, making sure to cover the whole surface.

  5. Allow the tortilla to cook for a couple of minutes, so that the bottom becomes toasted and crispy, and the cheese completely melts.
  6. To fold the quesadilla, use a spatula to lift the cheese side over onto the fillings. Gently press together and cook for another minute or so, until completely heated through. Flip and cook on the other side for about a minute.
  7. Place onto a plate and cut into thirds or two halves. Serve with pico de gallo, guacamole, salsa, and sour cream.
