For many, the mention of pork chops might conjure up memories of dry, overcooked meals – perhaps the infamous “pork rocks” or “hockey pucks” of decades past. We’ve all been there, enduring tough, flavorless meat that required copious amounts of sauce to make palatable. But those days are long gone! Modern pork, when cooked correctly, is a revelation. It’s tender, succulent, and brimming with natural flavor, making it a fantastic protein choice for any meal.

I am proud to be partnering with the National Pork Board to bring you this Parmesan Pork Chops with Pesto recipe. I have been compensated and participated in the 2018 Pork Tour, but as always, all opinions are 100% my own.

My own experiences with pork chops used to mirror this sentiment. I vividly recall childhood dinners where dry pork dominated the plate, necessitating generous dollops of applesauce to soften each bite. The chewing seemed endless, a testament to how severely overcooked the meat was. This left a lasting impression, deterring me from cooking pork chops for my own family for years. That is, until I discovered the secrets to truly tender, juicy pork.

Mastering the Art of Tender Pork Chops: The 145°F Difference

The key to unlocking the incredible flavor and texture of modern pork chops lies in understanding and implementing the correct cooking temperature. The National Pork Board recommends cooking most cuts of pork, including chops, to an internal temperature of 145°F, followed by a three-minute rest. This critical resting period allows the juices to redistribute throughout the meat, resulting in unparalleled tenderness and succulence. Gone are the days of dry, bland pork; embracing this simple temperature guideline will transform your cooking.

Once you try these Parmesan Pork Chops, you’ll understand why they’ve earned a top spot on my family’s favorite dinner list. Even my husband, Kurt, who was initially skeptical given our past experiences, absolutely raved about them! He was genuinely surprised by how much he loved the tender texture and rich flavor. This recipe doesn’t just meet expectations; it exceeds them, proving that a truly delicious pork chop dinner is not only possible but also incredibly easy to achieve.

The reason these chops are so incredibly delicious is precisely because they are cooked to the recommended 145°F and then allowed to rest. This small but mighty step is the secret to a perfectly tender and juicy chop every single time. It ensures that the meat retains its moisture, creating a melt-in-your-mouth experience that is a stark contrast to the “pork rocks” of yesteryear. The transformation in pork farming over the years has been truly remarkable. Dedicated pork farmers have made immense strides in ensuring their pigs are raised in healthy, humane environments. This commitment to animal welfare and advanced nutritional science directly translates into the high-quality, delicious pork we enjoy today. The focus on healthy practices means that modern pork is leaner, more tender, and consistently flavorful, allowing us to cook it to a safe internal temperature that also maximizes its juiciness. Essential Tips for Crafting Perfect Parmesan Pork Chops with Pesto:

  • Prepare Pesto in Advance: For ultimate convenience, make your Pesto recipe ahead of time. It’s incredibly simple to whip up, and having it ready to go means you can quickly assemble your meal. While these pork chops are fantastic on their own, the fresh, herbaceous pesto adds an undeniable layer of flavor that truly elevates the dish.
  • Achieve the Perfect Crust: If dietary concerns like gluten aren’t an issue, don’t skip the flour coating. The flour acts as a crucial binder, helping the egg wash adhere effectively, which in turn ensures that the Parmesan cheese mixture forms a beautiful, crispy crust. For gluten-free alternatives, suitable flour substitutes can be used.
  • Invest in a Meat Thermometer: This is arguably the single most important piece of advice for this recipe. A reliable meat thermometer is your best friend in the kitchen, guaranteeing your pork chops are cooked perfectly—never underdone, and certainly never dry like those dreaded “pork rocks.” Aim for an internal temperature of 145°F. This precise measurement is the key to achieving a consistently safe, tender, and juicy result.
  • The Crucial Resting Period: After removing the pork chops from the pan, allow them to rest for a full three minutes before slicing. This resting time is vital. It allows the muscle fibers to relax and reabsorb the juices, ensuring every bite is as moist and flavorful as possible. Skipping this step risks losing those precious juices onto your cutting board instead of keeping them in the meat.
  • Swift Cooking: These pork chops cook quickly! For chops about 1/2 to 3/4 inch thick, you’ll only need 4-5 minutes per side. This makes it an ideal choice for busy evenings, fitting seamlessly into schedules packed with activities. Be mindful of the time; avoid distractions like social media or preparing side dishes during the actual cooking process to prevent overcooking.
  • Adjust for Thickness: The cooking time will vary depending on the thickness of your pork chops. While 1/2-inch to 3/4-inch chops are ideal for this quick recipe, thicker cuts (around 1 inch) will require an additional 1-2 minutes per side. Always rely on your meat thermometer to confirm the internal temperature of 145°F, regardless of chop thickness, to guarantee perfect results every time.

My culinary journey has led me to truly appreciate the versatility and deliciousness of pork. Over the past few years, I’ve had the incredible opportunity to visit several pig farms and get up close and personal with the farmers who dedicate their lives to providing us with high-quality pork. This experience has deepened my respect for the product and inspired me to explore countless ways to incorporate it into my recipes.

These Parmesan Pork Chops with Pesto are both flavorful and super easy to make. They’re a great weeknight dinner when everyone’s busy and time is tight.

Ingredients

  • 4 center-cut boneless pork loin chops, 1/2-inch thick
  • 1 large egg
  • ⅓ cup all-purpose flour
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 tablespoons canola oil, plus more if needed

Instructions

  1. Prepare your favorite Pesto recipe. You can find a great one here: https://www.365daysofbakingandmore.com/pesto-pesto-pesto/
  2. Set up a dredging station: Place the flour in one shallow bowl, beat the egg in a second bowl, and combine the grated Parmesan cheese, garlic powder, black pepper, and salt in a third bowl. Mix the cheese mixture thoroughly.
  3. Coat each pork chop: First, dredge one pork chop in the flour, ensuring it’s fully coated. Next, dip it completely into the beaten egg. Finally, coat all sides generously with the seasoned Parmesan cheese mixture. Place the prepared chop on a clean plate and repeat with the remaining pork chops.
  4. Heat a large skillet over medium-high heat (just under), then add 2 tablespoons of canola oil.
  5. Once the oil is shimmering, carefully place the coated pork chops into the hot skillet. Cook for 4-5 minutes per side, or until golden brown and a meat thermometer inserted into the thickest part reads 145°F. Add more canola oil during cooking if needed to prevent sticking.
  6. Remove the cooked pork chops from the pan and transfer them to a serving plate. Allow them to rest for 3 minutes before slicing and serving. This resting period is crucial for juicy results.
  7. Serve each Parmesan pork chop topped with a generous dollop of fresh pesto. Enjoy!
