Oreo Peppermint Rice Krispies Treats
Yields: Approximately 24 squares
Prep time: 15 minutes
Cook time: 5 minutes
These festive Oreo Peppermint Rice Krispies Treats are a holiday dream! Combining the classic gooey marshmallow and crispy cereal with crushed Winter Oreos and a refreshing peppermint kick, they’re an irresistible no-bake dessert that’s perfect for sharing. Topped with Andes Peppermint Crunch and a white icing drizzle, they are as delightful to look at as they are to eat.
Ingredients
- 1 10- ounce bag mini marshmallows
- 3 tablespoons unsalted butter
- 6 cups Rice Krispies Cereal
- 1 15- ounce package Winter Oreos red filling, crushed
- 1 teaspoon peppermint extract
- ¾ cup Andes Peppermint Crunch Baking Chips
- 1 package store-bought white cookie icing
Instructions
-
Prepare a 9 x 13-inch baking dish by generously spraying it with cooking spray. This will prevent sticking and make removal easier.
-
Crush the Winter Oreos in a large Ziploc bag. You want a mix of various sized pieces, from fine crumbs to larger chunks, for interesting texture. A rolling pin works perfectly for this.
-
Combine the crushed Oreos with the Rice Krispies cereal in a large mixing bowl. Set aside.
-
In a large pot or Dutch oven, melt the unsalted butter over medium heat. Be careful not to brown the butter, just melt it until smooth.
-
Add the entire bag of mini marshmallows to the melted butter. Stir continuously until the marshmallows are completely melted and smooth. Remove from heat immediately.
-
Stir in the peppermint extract into the melted marshmallow mixture until well combined. The aroma will instantly transport you to a winter wonderland!
-
Pour the Rice Krispies and crushed Oreos mixture into the pot with the melted marshmallows. Stir quickly and thoroughly until the cereal and cookie pieces are evenly coated.
-
Transfer the mixture into the prepared baking dish. Using a buttered spatula or wax paper, gently press the mixture into the pan, ensuring it touches all sides, but avoid compacting it too much. Over-compressing can make the treats hard.
-
While the treats are still warm and pliable, sprinkle the Andes Peppermint Crunch chips evenly over the top. Gently press them down slightly so they adhere to the surface.
-
Drizzle the store-bought white cookie icing decoratively over the top of the treats. This adds an extra touch of sweetness and visual appeal.
-
Allow the treats to set at room temperature for at least 10-15 minutes before slicing and serving. This ensures they firm up nicely for clean cuts.

Tips for Perfectly Gooey Rice Krispies Treats
- Don’t Overcook Marshmallows: Once melted, remove the pot from the heat immediately. Overcooking can lead to hard, brittle treats.
- Gentle Pressing: When pressing the mixture into the pan, be gentle. Too much pressure will result in dense, tough squares. A light touch keeps them soft and chewy.
- Fresh Ingredients: Always use fresh marshmallows and Rice Krispies cereal. Stale ingredients can affect the texture and taste.
- Grease Everything: Make sure your baking dish, spatula, and even your hands (lightly buttered or sprayed) are well-greased to prevent sticking.
- Even Distribution: Stir quickly but thoroughly to ensure the cereal and Oreos are evenly coated with the marshmallow mixture before it starts to set.
Serving and Storage Suggestions
Once your Oreo Peppermint Rice Krispies Treats have set, use a sharp, greased knife to cut them into squares. For best results, clean the knife after every few cuts. These treats are best enjoyed within 2-3 days. Store them in an airtight container at room temperature. Avoid refrigerating, as it can make them hard and less chewy.

On a personal note, while I generally try to avoid excessive food coloring, I must admit that the vibrant red filling of the Winter Oreos truly enhances the festive appeal of these treats. They’re so visually striking!
Beyond Christmas: Other Occasions and Variations
While these treats are undeniably perfect for Christmas, their colorful charm and delicious flavor make them suitable for other occasions too. Imagine serving them for Valentine’s Day! To adapt them, you could omit the peppermint extract (or reduce it significantly) and substitute the Andes Peppermint Crunch with white chocolate chips or festive sprinkles. A simple drizzle of melted white chocolate instead of store-bought icing would also look elegant and delicious.
For other holidays, you could experiment with different colored Oreos or food colorings. Green food coloring in the marshmallow mixture would make them ideal for St. Patrick’s Day or even Grinch-themed Christmas treats. The possibilities are truly endless, allowing you to customize this basic recipe to fit any celebration or preference.
These Oreo Peppermint Rice Krispies Treats truly earned their high marks in my kitchen – a solid 3 1/2 rolling pins out of 4! They were incredibly good and disappeared quickly. They’re a testament to how a classic can be transformed with simple additions to create something new and exciting.
