Double Chocolate Peppermint Sandwich Cookies with Whipped Cream Filling

Why These Peppermint Chocolate Cookies Are a Must-Bake This Season

With their luscious whipped cream frosting, these chocolate cookies offer everything you crave to satisfy that deep-seated sugar craving. They are more than just a dessert; they are an invitation to indulge in the simple pleasures of the season. The magic lies in the symphony of flavors: the intense cocoa of the double chocolate cookies, complemented by the refreshing zing of peppermint, all brought together by a silky, airy whipped cream. This combination is particularly enchanting during the holidays, evoking warmth, comfort, and a touch of festive cheer.

The Perfect Harmony of Rich Chocolate and Cool Peppermint

These cookies stand out for their exceptional flavor profile and delightful texture. The cookies themselves are deeply chocolatey, featuring both cocoa powder and semi-sweet chocolate chips, creating a rich, fudgy base that is wonderfully chewy. But what truly elevates them is the filling: a homemade vanilla bean whipped cream infused with a vibrant burst of peppermint extract. This light and fluffy cream provides a cooling counterpoint to the intense chocolate, making each sandwich cookie a perfectly balanced bite of sweet, minty bliss. Rolling the edges in crushed peppermint candies adds not only a beautiful visual touch but also an extra crunch and a concentrated burst of peppermint flavor, enhancing the overall sensory experience.

From My Kitchen: Finding Joy and Balance Through Holiday Baking

The holidays often bring a whirlwind of activities, and for me, that often means feeling a little overwhelmed. I tend to pile a lot onto my plate, leaving tasks until the last minute – a habit I’ve carried since my school days. Funny enough, I always performed my best under pressure. My husband, Mr. 365, even jokes that I “thrive in crisis mode.” Yet, despite this tendency, I often find myself with a headache and a good deal of anxiety. Now that I’m out of work, I aim for a more relaxed, happy-go-lucky approach to life, focusing on family and simple joys. But old habits die hard, especially when it comes to the holiday rush.

There’s a saying, isn’t there? “You can’t keep doing what you’re doing and expect different results.” Perhaps it’s time for me to heed that advice. Sometimes, all it takes is a step back, a deep breath, and a moment to regroup. It’s about finding that balance again, sifting out the bad and embracing the good. And often, for me, that balance is found right here in the kitchen, surrounded by the comforting aromas of baking. Creating something delicious, like these double chocolate peppermint sandwich cookies, helps me recenter and enjoy the present moment, turning potential stress into a sweet, therapeutic escape.

Inspiration and Adaptations: Crafting the Perfect Sandwich Cookie

The journey to perfecting these cookies involved a bit of experimentation and inspiration from fellow food enthusiasts. While I’m always on the lookout for fantastic dessert ideas, certain recipes truly resonate. For instance, I can’t speak highly enough about the toffee crème caramel from Fuss-Free Flavours – it’s an absolute triumph. And when it comes to seasonal delights, Naturally Ella’s pumpkin cheesecake is pure heaven; you’ll want to guard that with your life! For these particular sandwich cookies, I found my initial inspiration for the cookie base from Fat Girl Trapped in a Skinny Body, which itself was adapted from Cookie Madness. The luscious cream filling, however, is a wonderful adaptation from Joy the Baker. Her original application for the cream looked so incredibly tempting that I almost ventured down that path today, but a shortage of eggs led me to pivot towards these “whoopie” pies.

My initial attempt at making whoopie pies didn’t quite go as planned. They emerged from the oven beautifully puffy, full of promise, but alas, they succumbed to gravity upon cooling, flattening into what I affectionately dubbed “sandwich cookies.” While they weren’t the lofty whoopie pies I envisioned, they transformed into something equally delicious – chewy, fudgy chocolate cookies perfect for a sweet filling. Sometimes, happy accidents lead to new favorites, and that was certainly the case here. I fully intend to conquer the art of true whoopie pies down the line, but for today, these delightful sandwich cookies steal the show.

Double Chocolate Peppermint Sandwich Cookies

Created by: Lynne Feifer

Course: Dessert
Cuisine: American
Yields: 48 cookies

Ingredients

For the Double Chocolate Cookies:

  • ½ cup butter, softened to room temperature
  • ¾ cup granulated sugar
  • ½ cup packed dark brown sugar
  • 1 large egg
  • ⅓ cup plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder, sifted
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 1 cup semi-sweet chocolate chips
  • Crushed peppermint candies, for rolling (optional)

For the Peppermint Vanilla Bean Whipped Cream:

  • 1 ¼ cup heavy whipping cream, well chilled
  • 2 tablespoons granulated sugar
  • 1 vanilla bean, split lengthwise and scraped for seeds
  • 1 teaspoon pure peppermint extract

Instructions

To Prepare the Double Chocolate Cookies:

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. In a large mixing bowl, using an electric mixer fitted with the paddle attachment, cream together the softened butter with the granulated sugar and dark brown sugar until the mixture is light, fluffy, and well combined. This usually takes 2-3 minutes.
  3. Add the egg to the butter mixture and beat thoroughly until fully incorporated. Next, stir in the Greek yogurt and vanilla extract, mixing until just combined.
  4. In a separate medium bowl, whisk together the dry ingredients: all-purpose flour, sifted unsweetened cocoa powder, baking powder, baking soda, and salt. Sifting the cocoa powder helps prevent lumps and ensures a smoother cookie dough.
  5. Gradually add the dry ingredient mixture to the wet butter mixture, mixing on low speed until just combined. Be careful not to overmix the dough, as this can lead to tough cookies.
  6. Gently fold in the semi-sweet chocolate chips until they are evenly distributed throughout the dough.
  7. Using rounded tablespoons or a small cookie scoop (about 1.5 inches in diameter for uniform sandwich cookies), drop portions of the dough onto the prepared baking sheet, spacing them approximately 2 inches apart.
  8. Bake for 10-12 minutes. It’s crucial not to overbake these cookies; they should still appear slightly moist in the center when you remove them from the oven. They will continue to set and firm up as they cool on the baking sheet.
  9. Allow the cookies to cool completely on the baking sheet before attempting to handle or assemble them into sandwiches.

To Prepare the Peppermint Vanilla Bean Whipped Cream:

  1. In a thoroughly chilled mixing bowl, fitted with a wire whisk attachment, pour in the very cold heavy whipping cream. Chilling the bowl and whisk beforehand helps the cream whip up faster and holds its shape better.
  2. Add the scraped vanilla bean seeds and the peppermint extract to the cold cream.
  3. Begin beating the cream on medium-high speed. Gradually add the granulated sugar as the cream starts to thicken.
  4. Continue beating until soft, yet somewhat stiff peaks are formed. Be vigilant not to overbeat, as the cream can quickly turn grainy or into butter.

Assembly of the Sandwich Cookies:

  1. Once the chocolate cookies are completely cooled, take one cookie and spread a generous tablespoon of the peppermint vanilla bean whipped cream onto its flat underside.
  2. Gently top with another cooled cookie, pressing down slightly to create a cohesive sandwich.
  3. For an extra festive touch and added peppermint flavor, place crushed peppermint candies on a small plate. Carefully roll the outer edges of each assembled sandwich cookie through the candies, ensuring the whipped cream filling is covered with the crushed peppermints.
  4. Serve these delightful double chocolate peppermint sandwich cookies immediately, or store them in an airtight container in the refrigerator for up to 2-3 days.

Tips for Perfect Peppermint Sandwich Cookies Every Time

Crafting the perfect sandwich cookie can be a delightful baking adventure. Based on my own experiences and a few trial-and-error moments, here are some invaluable tips to ensure your Double Chocolate Peppermint Sandwich Cookies turn out perfectly every time:

  • Achieve Uniform Cookie Size: For sandwich cookies, consistency is key. Using a cookie scoop (preferably a 1.5-inch one) ensures that all your cookie halves are the same size, making them easier to match up and create neat sandwiches. This prevents the “oddly shaped, uneven” frustration I sometimes experienced.
  • Do Not Overbake the Cookies: This is paramount for fudgy chocolate cookies. Remove them from the oven when the edges are just set and the centers still look slightly soft or moist. They will continue to bake slightly from residual heat on the cookie sheet as they cool, leading to that coveted chewy, fudgy texture. Overbaking results in dry, crumbly cookies.
  • Chill Your Whipping Cream Bowl and Whisk: For the most stable and voluminous whipped cream, place your mixing bowl and whisk attachment in the freezer for 10-15 minutes before you start whipping. Cold equipment helps the cream whip faster and maintain its airy structure for longer.
  • Adjust Sweetness to Your Liking: The original recipe for the whipped cream called for a bit more sugar. I reduced it to 2 tablespoons in this recipe, finding it perfectly sweet, especially with the added crushed peppermint candies on the outside. Taste the whipped cream before adding all the sugar and adjust to your preference – you might find less is more, particularly with the sweetness of the cookies and candies.
  • Mind the Filling Amount: While a generous amount of whipped cream filling is tempting and delicious, be mindful not to overfill your sandwich cookies. An excessive amount can lead to the filling “squirting out in all directions” when you take a bite, which can be a little frustrating. A large tablespoon per cookie half is usually ideal.
  • Cool Completely Before Assembly: Ensure your chocolate cookies are entirely cooled before adding the whipped cream filling. Warm cookies will melt the cream, creating a messy situation. Patience is a virtue in sandwich cookie assembly!

I rate everything I bake on a scale of 1-4, with 4 being the best, and these Double Chocolate Peppermint Sandwich Cookies with Vanilla Bean Whipped Cream earned a very respectable 3.5 rolling pins. The cookies themselves were an absolute delight—rich, deeply chocolatey, and wonderfully fudgy! I loved them so much that we even ended up eating some of the plain cookies without the whipped cream. Their chewy, fudgy texture was just irresistible on its own. While the aspiration was a whoopie pie, the resulting sandwich cookie was a delicious success.

Initially, I was dropping rounded tablespoonfuls of dough onto the cookie sheet. However, after the first batch baked up a bit too large for a comfortable sandwich (though they would have been perfect as a single cookie with a big glass of milk!), I adjusted. For subsequent batches, I used a slightly flattened tablespoon of dough. This made them more manageable for sandwiching, even if they sometimes ended up a bit oddly shaped or uneven, which can be a minor challenge when aiming for perfectly matched pairs. Despite the minor assembly quirks, the flavor combination was a definite win!

A Little Bit of Winter Wonderland in Arizona: A Snowy Surprise

Many people are surprised to learn that it snows in Arizona. While we Phoenix residents don’t get to see it often, a trip up north during the winter months can transform our desert landscape into a beautiful snowy wonderland. It’s a stark contrast to our usual sunny climate and a magical experience for those of us who rarely witness snowfall. Last winter, Mr. 365 and I embarked on one such trip, deciding to bring a little piece of that magic home to our son as a surprise.

We carefully packed a cooler with fresh snow, eager to see his reaction. When we arrived home, he rushed out to greet us, and we immediately started a playful snowball fight. His sheer delight and excitement were priceless! He was absolutely psyched to experience snow right in our backyard.

Sunny road leading to snowy Arizona mountains

The journey itself was an adventure. Our drive up was sunny and picturesque, but on the way back, a storm began rolling in, blanketing the mountains in a thick, eerie fog. Driving through those winding mountain roads with limited visibility was quite unnerving, especially when large tractor-trailer trucks would suddenly appear out of the mist. It was a stark reminder of nature’s unpredictable beauty and power, adding an unexpected thrill to our holiday escapade.
