Traditional quiche crusts can sometimes be finicky, but the cream cheese ensures a much more manageable dough that bakes up beautifully golden and flaky. Breakfast Quiche - in muffin tins for perfect serving sizes

This Breakfast Mini Quiche is made in muffin tins. They are the perfect serving sizes so you don’t take too large a slice or eat too many smaller ones!

Ingredients

 

Crust

  • 1 cup cold butter, cut into small cubes
  • 3 oz. cream cheese
  • 2 cups all-purpose flour
  • 2 Tbs cold water

Filling

  • 1 small-medium onion, minced
  • 2 Tbs butter
  • salt and pepper to taste
  • ½ cup grated cheese (cheddar, Swiss, Jack, etc.)
  • 2 large eggs
  • ½ cup milk
  • tsp nutmeg
  • 1 tsp dried parsley
  • ½ cup cooked bacon or ham (bacon should be cooked crispy and crumbled; ham diced into small pieces)

Instructions

  • Combine the cold butter and cream cheese with the flour. You can do this by hand using a pastry blender, or for best results, use a food processor. Pulse until the mixture resembles coarse sand or small peas. Gradually add in the cold water, mixing just until the dough comes together to form a cohesive ball. Be careful not to overmix.
  • Form the dough into a flat disc, wrap it tightly in plastic wrap, and chill it in the refrigerator for at least 30 minutes. This chilling process is crucial for a tender, flaky crust and easier handling.
  • While the dough chills, preheat your oven to 425°F (220°C). Prepare your muffin tins by lightly greasing them to ensure the quiches don’t stick.
  • In a medium pan, melt 2 tablespoons of butter over medium-high heat. Add the minced onion and sauté until it becomes soft, translucent, and lightly golden brown, about 5-7 minutes. Season with a pinch of salt and pepper to taste, keeping in mind that bacon will add additional saltiness. Remove from heat and set aside to cool slightly.
  • In a large mixing bowl, lightly scramble the eggs. Whisk in the milk, cooled sautéed onions, grated cheese, nutmeg, dried parsley, and your cooked bacon or ham. Add a little more freshly ground black pepper if desired. Mix thoroughly until all ingredients are well combined.
  • Once the dough is adequately chilled, unwrap it. Break off small pieces and roll them into balls, approximately 1 ½ inches in size. Gently press each dough ball into the prepared muffin tins, shaping them to form an even crust that lines the bottom and sides. Alternatively, flatten the dough balls in the palm of your hand before pressing them into the tins. You should yield approximately 15-20 quiche crusts from this dough.
  • Carefully spoon the egg filling into each prepared crust, dividing it evenly among all the muffin cups. Fill them almost to the top, as the custard will puff slightly during baking.
  • Bake in the preheated oven for 20-25 minutes, or until the custard filling is fully set in the center (it should not jiggle when gently shaken), and the crusts are beautifully golden brown. Keep an eye on them towards the end to prevent over-browning.
  • Allow the mini quiches to cool slightly in the muffin tins before carefully removing them. They are best served warm, but are also delicious at room temperature. Enjoy your homemade, perfectly portioned mini quiches!
