What Exactly Are Dream Bars? The Secret to Layered Dessert Perfection
Dream bars, also affectionately known as dessert lasagna or lush bars, are renowned for their irresistible combination of textures and flavors. They typically feature a delightful crust, followed by various creamy, fruity, or chocolatey layers, all topped with a light and airy finish. These “no-bake” style desserts (or partially baked, as with our red velvet crust) are incredibly popular because they are easy to assemble, highly customizable, and always deliver a stunning presentation. The beauty of dream bars lies in their harmonious blend of different elements that create a truly unforgettable dessert experience.
For this particular recipe, the star of the show is undoubtedly the vibrant red velvet crust. Its rich color and unique cocoa flavor make it an ideal choice, especially with holidays like Valentine’s Day or Christmas just around the corner. To achieve a perfectly thick and chewy cookie base, we’ve opted to use a boxed red velvet cake mix, but without following the package’s liquid instructions. This unconventional method yields a dense, brownie-like crust that holds up beautifully under the creamy layers, providing a much better texture and more intense red color than crushed cookies might offer.
Given the generous volume of the cake mix crust and the multiple layers, a 9×13-inch baking dish is essential for these dream bars. While many of my other dream bar recipes are designed for an 8×8-inch pan, the expanding nature of the cake mix requires the larger size to prevent overflow and ensure even layers. If you prefer to halve the recipe, my suggestion would be to create a crust using one package of Red Velvet Oreos, following the specific directions outlined in this recipe for crushed cookie crusts. This adaptation allows for flexibility while still delivering that beloved red velvet flavor.

Essential Ingredients for Your Red Velvet Cherry Dream Bars
Gather these key ingredients from your grocery store to create this spectacular layered red velvet dessert. Quality ingredients make a noticeable difference in the final taste and texture of your dream bars, so ensure you have everything on hand:
- 1 (16.5-ounce) package Red Velvet cake mix: This forms the base of our cookie crust. Remember, we will NOT be following the ingredient directions listed on the cake mix package, but rather the specific instructions below!
- 2 large eggs: Essential for binding the cake mix into a cookie-like crust.
- ⅓ cup canola oil: Adds moisture and richness to the red velvet crust. Vegetable oil also works as a substitute.
- 2 (3.4-ounce) packages instant vanilla pudding: For a smooth and creamy vanilla layer. Ensure it’s instant pudding for ease and proper setting.
- 3 cups whole milk: The richer the milk, the creamier your pudding and cheesecake layer will be. Lower-fat milk can be used, but whole milk is recommended for optimal texture.
- 10 ounces cream cheese, softened to room temperature: Crucial for the tangy, sweet cheesecake layer. Softened cream cheese ensures a lump-free, smooth consistency.
- 1 teaspoon pure vanilla extract: Enhances the sweet flavors in the cream cheese layer.
- 1 cup confectioners’ sugar: Sweetens the cream cheese layer, giving it a delicate, melt-in-your-mouth quality.
- 1 (21-ounce) can cherry pie filling: The star fruity layer, providing a beautiful color contrast and tart sweetness.
- 2 (8-ounce) containers Cool Whip: For a light, airy, and fluffy topping. Dairy Whip is a suitable alternative.
A Note on Whipped Topping: If you prefer to avoid store-bought Cool Whip, you can easily make your own Stabilized Whipped Cream from scratch. This homemade option provides an even richer, more natural flavor and holds its shape beautifully. For these Red Velvet Cherry Dream Bars, you’ll want to double my standard stabilized whipped cream recipe to ensure you have enough for both the cream cheese layer and the generous topping.

Crafting Your Red Velvet Cherry Dream Bars: A Simple Step-by-Step Guide
Creating this stunning layered dessert is easier than you think! We’ll prepare each delicious layer individually before bringing them all together for a truly impressive finish.
Baking the Perfect Red Velvet Cookie Crust
- Begin by preheating your oven to 350 degrees F (175 degrees C). Prepare a 9×13-inch baking dish by lightly spraying it with cooking spray. For easier removal and cleaner slices, you might consider lining the pan with parchment paper, leaving an overhang on the sides.
- In a medium mixing bowl, lightly beat the eggs. Then, add the canola oil and the entire package of red velvet cake mix. Mix these ingredients together until they are thoroughly combined and no lumps remain. The batter will be exceptionally thick, almost like a dense brownie dough, quite different from a typical light and airy cake batter.
- Using a silicone spatula or your hands (lightly floured if sticky), firmly press this thick red velvet batter evenly into the bottom of your prepared baking pan. Ensure the crust is uniformly spread for consistent baking.
- Bake the crust in the preheated oven for 12-15 minutes, or until the center is set and a toothpick inserted comes out with moist crumbs, not wet batter.
- Once baked, transfer the baking dish to a wire rack to cool completely. It’s crucial that the crust is fully cooled before adding the next layers to prevent them from melting or becoming runny.
Preparing the Smooth Vanilla Pudding Layer
While your crust is cooling, you can prepare the vanilla pudding. In a medium bowl, whisk together the instant vanilla pudding mix and 3 cups of whole milk until smooth and lump-free. The mixture will start to thicken almost immediately. Once combined, place the bowl into the refrigerator to chill and set thoroughly, which typically takes about 5-10 minutes.
Creating the Sweet and Tangy Cream Cheese Layer
In a separate large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until it becomes light, fluffy, and completely smooth. This usually takes 2-3 minutes. Gradually add the confectioners’ sugar and pure vanilla extract, continuing to beat until everything is well combined and the mixture is airy. Finally, gently fold in 2 cups of your Cool Whip (or homemade stabilized whipped cream) with a silicone spatula until just incorporated. Set this creamy mixture aside until you’re ready to assemble your dream bars.

Assembling Your Magnificent Red Velvet Cherry Dream Bars
Now comes the most exciting part – putting all the delicious layers together to create this show-stopping dessert!
- Once your red velvet cookie crust is completely cooled, carefully spread dollops of the sweet cream cheese mixture evenly over the top. An offset spatula works wonderfully for achieving a smooth, consistent layer.
- Next, gently pour the cherry pie filling over the cream cheese layer. Spread it carefully to create an even, vibrant red coating that contrasts beautifully with the white layers.
- Now, retrieve your set vanilla pudding from the refrigerator. Spoon the pudding over the cherry pie filling and spread it out evenly. Its smooth texture will create another delightful layer.
- Finally, lavishly cover the vanilla pudding layer with the remaining Cool Whip (or stabilized whipped cream), spreading it from edge to edge to create a fluffy, inviting topping.
- Place the entire assembled dessert into the refrigerator to chill for at least 2 hours. This crucial chilling time allows all the layers to set properly, firm up, and meld their flavors, making for easier and cleaner slicing.
- When you’re ready to serve these magnificent Red Velvet Cherry Dream Bars, consider decorating them with festive holiday sprinkles, red sanding sugar, or even fresh cherries for an extra touch of elegance. Enjoy every luscious bite!

Expert Tips for Perfectly Slicing Your Dream Bars
To ensure your Red Velvet Cherry Dream Bars look as good as they taste, especially when serving guests, follow these simple cutting tips:
- Thorough Chilling is Key: Never attempt to cut these bars before they are thoroughly chilled. At least 2 hours in the refrigerator is essential, but overnight chilling yields the best results, allowing all layers to firm up completely.
- Warm, Sharp Knife: Use a long, sharp knife. For the cleanest cuts, run the knife under hot water for a few seconds and wipe it dry before each slice. This warms the blade slightly, allowing it to glide through the layers without dragging.
- Clean Between Cuts: Always wipe your knife clean between each slice. This prevents the layers from mixing and ensures every bar has distinct, beautiful edges.
- The Right Tool for Removal: A small dessert spatula or an offset spatula is ideal for lifting individual bars cleanly from the pan, especially if you’ve lined it with parchment paper.
